1/2 head green cabbage, shredded thin
2 cloves garlic, chopped
2 tablespoons butter
salt and pepper

Steps:

  • In a saute or frying pan on medium-high heat, melt butter. Add chopped garlic and stir until fragrant, about 1 minute. Do not burn garlic. Add shredded cabbage to garlic and butter, tossing to coat.
  • Season with salt and pepper and continue to cook cabbage, tossing occassionally until it just begins to turn golden, about 10-15 minutes.
  • Note: Caraway is a great addition. Add 1/2 teaspoon with the garlic and stir until fragrant.

Steps:

  • Heat a large pan on medium heat and add the sliced bacon. Cook until crispy, then removed to a paper towel lined plate.
  • Add the onion and saute for 2-3 minutes, or until it's translucent.
  • Add the garlic, mustard, smoked paprika, salt and pepper and give it a stir to combine. Then place the sliced cabbage on top and use a large spoon or tongs to stir and saute together for another 12-15 minutes.

4 slice bacon
1 tbsp. olive oil
1 medium onion
1/2 small green cabbage
kosher salt

1 tbsp. whole-grain mustard
1 tbsp. prepared horseradish
1/4 c. chopped fresh flat-leaf parsley

Steps:

  • Cook the pierogies according to package directions.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes. Transfer to a paper towel-lined plate; break into pieces when cool.
  • Wipe out the skillet and heat the oil over medium heat. Add the onion and cook, covered, stirring occasionally, for 4 minutes. Add the cabbage, season with 1/4 teaspoon each salt and pepper, and cook, covered, stirring occasionally, until the vegetables are just tender, 2 to 3 minutes.

Steps:

  • Cut bacon into thick chunks, pan fry until crunchy. Remove from pan and set aside.
  • Drain off most of the bacon fat - leave a little if desired for taste, but too much will give an oily texture.
  • Heat butter in large pan on medium-high heat until melted and foamy.
  • Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
  • Add garlic and cabbage to the pan, tossing evenly to coat in butter.
  • Generously season with salt and pepper.
  • Let cabbage reduce by half, about 8 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly. Add bacon back to pan.
  • When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits, it is ready to serve.

1 small head green cabbage (about 2 1/2 pounds)
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
½ tablespoon apple cider vinegar (plus additional to taste)
1 tablespoon chopped fresh thyme (optional)

Steps:

  • Cut the cabbage in half from its top down through its core. Place the cut-side down on your cutting board, then slice it as thinly as possible around the core so that you have fine ribbons. Discard the core.
  • Heat a large saute pan or similar heavy-bottomed pot over medium-high heat. Add olive oil and butter. Once the butter is melted, add the cabbage, salt, and pepper. Saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Don't feel like you need to constantly stir it. Leaving cabbage undisturbed for a minute or two as you go is what will allow it to develop brown caramelized bits (aka FLAVOR).

3 lbs cabbage, quartered, core removed, and cut into a large 1-inch dice
1/2 lb sliced bacon
1/2 of medium onion, sliced thinly
1/2 cup water
1 tablespoon sugar
1 tablespoon salt

Steps:

  • Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
  • Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
  • Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
  • Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
  • Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
  • Crumble the cooked bacon into the cabbage and serve hot.

  • Add bacon to a large (high-sided) skillet (or large stockpot) and cook over medium-high heat until crispy. About 6 minutes. Once bacon is crispy remove with a slotted spoon and set aside.

Steps:

  • Cut the cabbage in half and place cut-side down. Slice into 1/2-inch thick slices, discard hard core pieces.
  • Slice off the stem end and the dark green end of the leek and discard (or save for another use). Slice down the entire length of the leek cylinder to cut it in half and expose the center. Cut each half crosswise into 1/2-inch slices. Place the sliced leek in a salad spinner, rinse well with cold water, and spin. Repeat this process, if needed. Alternately, transfer the sliced leek to a bowl of cold water and use your hands to move it around and dislodge and dirt. Drain well in a colander.

2 medium heads Savoy cabbage, coarse outer leaves, core, and ribs removed, cut into 1-inch dice (10 cups)
4 ounces bacon, sliced crosswise into 1-inch pieces (3/4 cup)
3 cups thinly sliced white onions
2 tablespoons chopped fresh sage
1 tablespoon all-purpose flour
2 cups chicken stock, homemade or store-bought
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Bring 2 quarts of water to a boil and add 1 tablespoon salt. Add the cabbage and blanch for 1 minute. Drain the cabbage in a colander, refresh under cold running water until cool, and reserve.
  • Put the bacon in a large skillet and cook over medium heat until the fat is rendered, 4 to 5 minutes. Pour off all but 1 tablespoon of the fat. Add the onion and sage and cook, stirring, until the onion is wilted but not browned, about 10 minutes. Add the blanched cabbage and cook for 2 more minutes. Stir in the flour and cook, stirring, 3 minutes. Pour in the stock, bring to a boil, reduce the heat, and cook until thickened, 2 to 3 more minutes.   • I find that when I buy a good-sized green cabbage and use a small amount in a recipe, the remainder often languishes in the fridge. This is an ideal way to use up green cabbage while it still has some flavor. For this preparation, you can use half or even most of a cabbage. In a large skillet or stir-fry pan, sauté a quartered and thinly sliced onion in some olive oil. When it starts to turn golden, stir in thinly sliced cabbage. Cook, covered, until the cabbage wilts. If the pan dries out, add just enough water to moisten. Once the cabbage is wilted, uncover and cook until both the cabbage and onion begin to brown, stirring frequently. Add a sprinkling of poppy seeds, if you like.
