1 bunch broccolini
Kosher salt
2 tablespoons unsalted butter
1/2 lemon, zested
1 teaspoon minced garlic
1 tablespoon lemon juice
1/4 teaspoon freshly ground black pepper

Steps:

  • Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water.
  • Melt the butter in a large saute pan. Add the lemon zest and garlic and stir. Drain the broccolini and add it to the garlic mixture and heat for 2 minutes. Add the lemon juice, 1/2 teaspoon salt and the pepper, and toss well before serving.

1/4 cup olive oil
2 garlic cloves, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cook Broccolini in a 6- to 8-quart pot of boiling salted water until stems are crisp-tender, about 5 minutes, then drain in a colander.
  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté half of garlic, stirring, until pale golden, about 30 seconds. Add half of Broccolini, 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook, stirring, until heated through, about 2 minutes. Transfer to a serving dish and repeat with remaining ingredients.

1/4 cup low-fat chicken stock or low-sodium fat-free chicken broth

Steps:

  • Cook Broccolini in a 6- to 8-quart pot of boiling salted water until stems are crisp-tender, about 5 minutes. Drain in a colander, then plunge into a large bowl of ice and cold water to stop cooking. Drain again and pat dry with paper towels.
  • Heat 1 1/2 teaspoons oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking. Add half of garlic and 1/4 teaspoon red pepper flakes and sauté, stirring, until garlic is golden, about 1 minute. Add half of Broccolini and 2 tablespoons stock and cook, stirring, 2 minutes. 2 tablespoons olive oil (light is best)
1 teaspoon dried red pepper flakes
4 garlic cloves, minced
1/2 cup chicken broth
2 lbs broccoli

Steps:

  • Cut broccoli into bite sized pieces.
  • Boil in salted water for about 5 to 7 minutes (broccoli should just start to soften).
  • Rinse under COLD water (to stop the cooking).
  • Dry to remove any excess water.
  • In a large skillet, heat the oil until hot.
  • Add the garlic and pepper flakes.
  • Sauté for 1 minute.
  • Add the broccoli and "some" of the broth. (I say "some" as you don't want it soaking in it, you just want it to help steam and add flavor)
  • Cook for 2 to 4 minutes (depending on the way you like your broccoli, tender or crisp) stirring the entire time. Season lightly with table salt.
  • As everyone has their own tastes, increase or decrease the garlic and or pepper flakes as desired.

1 lb. broccolini, trimmed
1/4 cup water

Steps:

  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add dressing and garlic to reserved drippings in skillet; mix well. Stir in broccolini; cook on medium-high heat 3 min., stirring occasionally.
  • Stir in water; cover. Simmer on medium heat 2 min. or until broccolini is crisp-tender. Add bacon; mix lightly.
