4 (8 ounce) bone-in pork center-cut chops, cut 3/4 inch thick
2 teaspoons canola oil plus 1 tablespoon, divided
¼ cup dry white wine
2 cups thinly sliced Granny Smith apples

Bring broth mixture in skillet to boiling. Boil about 5 minutes or until liquid is reduced by half. Return chops and apples to skillet; heat through. If desired, sprinkle with snipped thyme. THE BEST JUICY SKILLET PORK CHOPS

The Best Juicy Skillet Pork Chops image

Pork chops are a quick, healthy and simple dinner. Our method ensures juicy, tender, and flavorful pork chops with little fuss. Check the notes section for our tips on which pork chops are best.

Provided by Adam and Joanne Gallagher

Categories     Dinner

Time 45m

Yield Makes 4 servings

Number Of Ingredients 14

4 pork chops, about 1-inch thick and 6 to 7 ounces each, see notes
Salt, to taste
1 tablespoon all-purpose flour
1 teaspoon chili powder, see our homemade chili powder recipe
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1 tablespoon neutral oil like avocado oil or vegetable oil
1 cup low-sodium chicken stock, see our homemade chicken stock recipe
1 tablespoon apple cider vinegar
2 teaspoons honey or brown sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley, optional

Steps:

  • Take the pork chops out of the refrigerator and season on both sides with salt - we use just less than 1/4 teaspoon of fine salt per pork chop. Set the chops aside to rest for 30 minutes.
  • Meanwhile, make the spice rub. In a small bowl, mix the flour, chili powder, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of black pepper.
  • After 30 minutes, use a paper towel to pat the pork chops dry, then rub both sides of the chops with the spice rub.
  • Heat the oil in a skillet (with a lid) over medium-high heat. When the oil is hot and looks shimmery, add the pork. Cook until golden, 2 to 3 minutes.
  • Flip the pork so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly; about 30 seconds.
  • Reduce the heat to low, then cover the skillet with a lid. Cook 6 to 12 minutes or until an instant-read thermometer reads 145° F when inserted into the thickest part of the chop. Cook time depends on the thickness of the chops, so check for doneness at 5 minutes, then go from there, checking every 2 minutes after that. If you do not have a thermometer, you will know they are done, if, when cutting into the chops, the juices run clear.
  • Transfer pork chops to a plate, then cover loosely with aluminum foil. Let the pork rest for 5 minutes.
  • While the pork rests, make the pan sauce. Increase the heat to medium-high, then add the chicken stock, vinegar, and honey. Use a wooden spoon to scrape the bottom of the pan so that any stuck bits of pork come up.
  • Bring the sauce to a simmer and cook until reduced by half. Taste, then adjust the seasoning with additional salt, vinegar, or honey.
  • Slide the skillet off of the heat and when the sauce is no longer simmering, swirl in the butter.
  • Slide the pork chops back into the pan and spoon some of the sauce on top. Alternatively, slice the chops, then place them back into the pan. Scatter fresh parsley over the pork, and then serve.

SAUTéED PORK CHOPS WITH BALSAMIC ONIONS

Sautéed Pork Chops with Balsamic Onions image

Cooking onions in balsamic vinegar is a shortcut of sorts, helping them develop a deep, caramelized flavor that usually takes lots of time. It also offers a tangy counterpoint to the sweetness. Like this recipe? Check out more easy 5-ingredient dinners.

Provided by Chris Schlesinger

Categories     Main Course

Yield four.

Number Of Ingredients 7

3 Tbs. olive oil; more if needed
1 large red onion (about 13 oz.), cut in half and thinly sliced crosswise
4 bone-in center-cut pork chops (1 to 1-1/2 inches thick)
1 Tbs. kosher salt; more to taste
2 heaping tsp. coarsely ground black pepper; more to taste
1/3 cup balsamic vinegar
1 Tbs. fresh thyme leaves

Steps:

  • Heat 1 Tbs. of the oil in a very large sauté pan over medium heat. Add the onions and cook, stirring frequently, until soft and caramelized, about 20 minutes (if the onions start to burn, reduce the heat to medium low). Transfer the onions to a bowl and set aside.
  • Pat the pork chops dry with paper towels and rub both sides with the salt and pepper. Return the pan to the burner, add the remaining 2 Tbs. olive oil, and increase the heat to medium high until the oil is hot but not smoking. (If you don't have a sauté pan large enough to fit the chops without crowding, use two smaller sauté pans, heat 1-1/2 Tbs. olive oil in each, and cook two chops in each.) Cook the chops until well browned on one side, 3 to 5 minutes. Turn and cook the other side until the meat is done, 2 to 4 minutes. (If they start to burn, turn down the heat slightly.) To check for doneness, make a small cut near the bone and look inside-the pork should have a hint of pinkness. If it's still red, cook for another minute and check again. Transfer the chops to a plate, tent with foil, and let rest for 3 to 5 minutes before serving.
  • Meanwhile, put the pan back over medium heat and add the balsamic vinegar and caramelized onions (if you used two pans for the chops, use just one for the onions). Simmer, scraping the pan with a wooden spoon, until the vinegar is reduced enough to just coat the onions, 2 to 3 minutes. Stir in the thyme and season with salt and pepper to taste. Serve immediately with the pork chops.

Measure fat and, if less than 2 tablespoons, add enough vegetable oil to bring total to 2 tablespoons. Heat fat over moderately high heat until hot but not smoking, then cook onion, stirring occasionally, until it begins to turn golden, about 2 minutes. Add cabbage and turn with tongs until coated with fat. • Let chops stand in pan, loosely covered with foil, 5 minutes. Serve chops over cabbage, with any pan juices spooned over and sprinkled with bacon.

  • In a large glass dish, such as a lasagna pan, combine olive oil, vinegar, maple syrup, salt, pepper, and chopped rosemary. Stir to combine. Add the pork chops to the marinade, turn several times so both sides are seasoned. Place in refrigerator for 30+ minutes to marinate.
  • Remove the pork chops from the marinade and pat them dry. (Discard the marinade.) Let the pork chops come to room temperature for 15 minutes. Season with salt and pepper on both sides.
  • Heat 2 tablespoons ghee or lard in a large cast iron skillet over medium-high heat. Add the pork. You should hear them immediately begin to sizzle. Pan fry until browned on the outside and cooked through, 2 to 4 minutes per side. When done, the pork should be firm but not hard. (You can always cut into one to see if it’s done to your liking - and remember that carry-over cooking will happen as you prepare the apples and kale.) Remove chops from pan and set aside (cover to keep warm) while you saute the kale and apples.
  • Turn this into a full meal by serving with sauteed kale and apples. I like to use one skillet to make the whole meal. Once you remove the pork chops from the pan, add a little more ghee followed by the sliced apples (from 2 apples). Turn once, so they brown evenly on both sides. Remove apples from pan, then cook your greens (I used baby kale).
