1 cup all-purpose flour
1 cup stone-ground yellow cornmeal
1 cup heavy cream
2 eggs
1/2 stick butter, melted
2 tablespoons brown sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 cup dark brown sugar, firmly packed
1/2 stick butter
1 (15.5 ounce) can fruit cocktail, drained
1 (12-ounce) can maraschino cherries, drained
1/2 cup chopped walnuts
1/4 cup brandy
Whipped cream, for serving

Steps:

  • Preheat oven to 400 degrees F.
  • In a large bowl, mix together flour, cornmeal, heavy cream, eggs, butter, brown sugar, baking powder and salt.
  • In the cast iron skillet over medium-high heat, add sugar and butter and let melt. When melted, remove from heat and add remaining ingredients. Be sure to place maraschino cherries evenly throughout. Pour in batter and smooth top with a spatula. Bake 25 minutes, until cornbread is golden and a toothpick comes out clean.
  • To serve: place a platter over skillet and invert cake. It should slide out easily. Slice into wedges and serve warm with whipped cream.

Steps:

  • Heat oven to 400°F.
  • In 10-inch skillet, cook sausage, onion, bell pepper and garlic over medium heat 8 to 10 minutes, stirring frequently, until sausage is no longer pink; drain. Stir in tomato sauce, corn and mushrooms. Heat to boiling; remove from heat.
  • In medium bowl, stir all topping ingredients except cheese. Beat vigorously with spoon 30 seconds. Stir in cheese.
  • Spoon sausage mixture into ungreased 2-quart casserole. Pour topping over hot sausage mixture, spreading evenly.
  • Bake uncovered 20 to 25 minutes or until topping is golden brown.

1 (16 ounce) package dry corn bread mix
1 (15 ounce) can cream style corn
5 fluid ounces water
1 medium onion, diced
4 fresh jalapeno peppers, diced
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
  • In a medium bowl, mix corn bread mix, cream style corn and water.
  • Cover the bottom of the prepared baking dish with about 1/2 inch of the corn bread mixture. Layer mixture with sausage, followed by onion and jalapeno. Cover with cheese. Top with remaining corn bread mixture, using only as much as will fit in the baking dish.
  • Cook 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Allow to cool slightly before serving.

1 tsp chili powder

Steps:

  • 1. Preheat oven to 400. Cook sausage, onion, and pepper in a skllet until sausage is brown and crumbly. Stir in flour. Mix in next 4 ingredients. Remove from heat and stir in cheese and olives. 1/2 lb pork sausage link
4 tablespoons butter
1/2 cup brown sugar, packed
4 small apples, peeled cored, and sliced into eighths
1 cup flour
3/4 cup yellow cornmeal
3 tablespoons brown sugar, packed
1 tablespoon baking powder
1 teaspoon salt
1 egg, lightly beaten
4 tablespoons butter, melted
1 cup milk

Steps:

  • Grease bottom and sides of a 8" or 9" square baking pan.
  • Brown the sausages in a medium skillet over moderately high heat, rotating them until browned and cooked through.
  • Remove the sausage and discard all but 2 tablespoons of the drippings.
  • Add butter and brown sugar to the pan.
  • Heat, stirring until sugar is melted.
  • Add apples and saute them over moderate heat, turning occasionally, until soft (about 10 min).
  • Arrange sausages in rows across the prepared pan.
  • Insert the apple slices, round side down, between the sausages, wedging them in tightly.
  • Pour over juices from the skillet (the pan can be covered and refrigerated overnight at this point, if desired).
  • Bring to room temperature before proceeding.
  • Preheat oven to 400°F
  • To make cornbread, stir together the flour, cornmeal, brown sugar, baking powder, and salt in a medium bowl.
  • Add the egg, melted butter and milk.
  • Stir with a wooden spoon until well combined.
  • Pour the batter over the sausage and apples, smoothing the top to cover well.
  • Bake for 25 minutes or until cake tester inserted in middle comes out clean.
  • Remove from oven.
  • Immediately invert onto a serving dish.
  • Cut into squares and serve.

3 tbsp olive oil, plus an extra drizzle (optional)
8 large pork sausages
1 onion, finely sliced
sprinkle of golden caster sugar
1 tbsp red wine vinegar
1 tbsp tomato purée
½ tsp smoked paprika
400g can chopped tomatoes
100ml red wine
2 bay leaves
400g can butter beans, drained but not rinsed
50g fresh breadcrumbs
2 garlic cloves, finely grated
handful of parsley leaves, roughly chopped

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp of the oil in a shallow ovenproof casserole over a medium heat and gently fry the sausages for 5-8 mins, or until brown on all sides. Transfer to a plate using tongs. Tip the onions into the pan and fry for 5-8 mins until beginning to turn golden. Drizzle in a little more oil if the onions start to stick. Sprinkle in the sugar and cook for a minute before stirring in the vinegar, tomato purée and paprika to form a paste. Tip in the tomatoes, then pour the wine into the tomato can, swish it round, and add to the pan. Stir in the bay leaves and beans, then arrange the sausages on top so they're half-submerged in the sauce but still a little exposed.
  • Bring the mixture to a simmer, then bake in the oven for 20 mins. Meanwhile, make the topping. Mix the breadcrumbs with the garlic and parsley, then season and stir in 1 tbsp oil. Scatter the topping over the casserole, then drizzle with the remaining 1 tbsp oil and bake for 10 mins more until the breadcrumbs are golden and crisp. Leave to stand for a few minutes, then take to the table and serve from the dish.

Make the corn bread mix according to package instructions. Add cheese, crumbled sausage and onions, and shredded zucchini to cornbread batter. Spread mixture evenly over the zucchini slices. Bake for 45 minutes, till top is golden. Using a spatula, loosen sides of corn bread from dish; invert onto a serving platter. Makes 6 wedges. Serve warm.
