16 ounces sugar snap peas, cooked (we use Green Giant fresh, steam-in-pack sugar snap peas that are quickly cooked in the microwave - see note)
1 tablespoon reduced-sodium soy sauce, such as Kikkoman Light (or a gluten-free soy sauce or tamari to make this recipe gluten-free)
1 teaspoon toasted sesame oil
2 teaspoons Sweet and Spicy Pepper Relish (more or less to taste) (or substitute 1 1/2 teaspoons seedless red raspberry jelly and 1/2 teaspoon chili garlic paste, as directed in the notes section below)
pinch kosher salt, only if needed
black sesame seeds (optional, for garnish)

Steps:

  • Toss hot, cooked sugar snap peas with soy sauce and sesame oil. (If using steam-in-bag peas, be sure to drain off any water that may be in the cooking bag, so it doesn't dilute your sauce mixture).
  • Add Pepper Relish (or jelly / chili garlic paste substitution) to taste. We find that 2 teaspoons is a good starting amount but we often add more - you may want more or less depending on how spicy your batch of Pepper Relish turned out, and on how spicy you like your food.
  • Once you're done adding Pepper Relish (tasting and possibly adding a bit more), and adjusting the other flavors, add a pinch of salt, only if needed.
  • Garnish with black sesame seeds, if desired. They don't add much flavor, but they look really pretty.
  • When serving, be sure to scoop all the way to the bottom of the serving bowl to get some of the flavorful sauce along with each serving of peas.

1 tablespoon good olive oil
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper

Steps:

  • Remove and discard the stem end and string from each sugar snap pod.
  • Heat the olive oil in a large saute pan over medium-high heat. Add the sugar snap peas, salt and pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.
  • Place the sugar snap peas in a serving bowl, sprinkle with sea salt and serve.

3/4 teaspoon sea salt, divided
3 tablespoons sugar
1 1/2 tablespoons fresh lime juice
1 tablespoon fish sauce
1 1/2 teaspoons chili-garlic sauce
1/2 teaspoon cornstarch
12 ounces sugar snap peas, strings removed
1 tablespoon olive oil
4 (6-ounce) skin-on salmon fillets

Steps:

  • Preheat the oven to 425 degrees F. Coat a sheet pan with cooking spray.
  • Combine the rice, 2 1/2 cups water and 1/4 teaspoon of the salt on the sheet pan. Bake for 20 minutes.
  • Meanwhile, whisk the sugar, lime juice, fish sauce, chili-garlic sauce and cornstarch in a small bowl to make the glaze. Combine the sugar snaps with the oil and 1/4 teaspoon of the salt in a separate bowl.
  • Season the salmon with the remaining 1/4 teaspoon salt. After the rice has cooked for 20 minutes, place the salmon, skin side down, on the sheet pan (directly on top of the rice) and brush it with about one-third of the chili glaze. Roast for 5 minutes, again brush the salmon with about one-third of the glaze and add the sugar snaps to the pan. Roast another 5 minutes and brush with the remaining glaze. Roast until the salmon is just translucent in the center and the sugar snaps are crisp-tender, about 5 minutes more.

2 teaspoons canola oil
3 scallions, white and green, sliced
1 tablespoon minced fresh ginger
1/4 cup orange juice
1/2 cup low-sodium chicken broth
1 tablespoon rice vinegar
2 tablespoons low-sodium white miso paste
1 teaspoon toasted sesame oil

Steps:

  • Place the snap peas or snow peas into a microwave-safe bowl with 1 tablespoon of water. Cover tightly and microwave for 3 minutes. Carefully remove the cover, drain and set aside.
  • Heat the oil in a saucepan over a medium-high heat. Add the scallions and ginger and saute for 2 minutes. Add the orange juice, chicken broth and vinegar and cook for 5 minutes, uncovered. Turn heat to low and stir in the miso paste and sesame oil. Stir until miso paste is dissolved, about 1 minute.

  • Cook the rice as the label directs. Set aside off the heat, 5 minutes, then fluff with a fork.

3/4 lb sugar snap pea, trimmed of stem ends and strings
1/3 cup flour
1 lb boneless skinless chicken breast, trimmed of fat

14 1/2 ounces low sodium chicken broth
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 lemon, juice of

Steps:

  • In a nonstick skillet, heat 1/3 of oil over high heat.
  • Add peas and stir fry until bright green, 2-3 minutes.
  • Remove from pan and set aside in bowl.
  • Place flour in shallow pan.
  • Cut chicken into 1x2 inch strips or bite size pieces (strictly preference here), season with salt and pepper and dredge in flour, shaking off excess.
  • Discard leftover flour.
  • In same skillet, heat remaining oil over high heat.
  • Add chicken and cook, stirring, until lightly browned, about 4 minutes.

Steps:

  • Heat a wok or large skillet over med-high heat.
  • Add 1 tablespoon of the oil and tilt to coat the inside of the wok.
  • Add the shrimp and stir-fry until they turn opaque, about 1 1/2 minutes; transfer to a plate.
  • Add 1 teaspoon oil to the wok and heat.
  • Beat the eggs with 1/4 teaspoon salt and a few grinds of pepper.
  • Pour into the wok and cook, stirring almost constantly with a wooden spatula, until the eggs are scrambled into very soft curds, about 30 seconds; transfer to the plate.
  • Add the remaining 1 tablespoon oil to the wok and tilt to coat the inside.

  • In a small bowl of glass measuring cup mix together the coconut aminos, rice vinegar, and your favorite hot sauce (if using) and set aside. Once the sauce is ready prep your aromatics and veggies. Chop the shallots and garlic and set aside. To make the sugar snap peas easier to bite into and chew, I recommend using a knife or your fingers to remove the strings – like in this video.
  • Heat sesame oil in a large skillet over medium high heat until shimmering. Add ground pork, shallots and garlic. Cook, breaking up with a spatula and pressing down firmly to help it brown, until cooked through and well browned with plenty of crispy bits – about 6-8 minutes.
  • When pork is cooked through and crispy, add prepared stir fry sauce to the skillet and cook, stirring, as the sauce simmers and reduces around the pork mixture. When sauce is thick and coats the pork well add the sugar snap peas and fresh or frozen baby peas and toss together, cooking and stirring for another 2-3 minutes, until peas are bright green and tender. Season to taste with salt and pepper.
  • Top stir fry with thinly sliced green onion and serve with rice, cauliflower rice, rice noodles, or over a roasted sweet potato.
