1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°)
2 tablespoons olive oil
1-1/2 teaspoons salt
1 teaspoon sugar
3-1/2 to 4 cups all-purpose flour
FILLING:
2-1/2 cups shredded part-skim mozzarella cheese, divided
2-1/2 cups shredded white cheddar cheese, divided
2 tablespoons all-purpose flour
2 teaspoons dried oregano
2 teaspoons dried basil
1/2 teaspoon crushed red pepper flakes
1 pound bulk Italian sausage, cooked and crumbled
1/2 pound sliced fresh mushrooms
1 package (3-1/2 ounces) sliced pepperoni
1 can (15 ounces) pizza sauce
Grated Parmesan cheese, optional

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine oil, salt, sugar, yeast mixture and 1 cup flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour., Preheat oven to 425°. Grease a 13x9-in. baking pan. Punch down dough; divide into three portions. On a lightly floured surface, combine two portions of dough and roll into a 15x11-in. rectangle. Transfer to prepared pan, pressing onto bottom and up sides of pan. Top with 2 cups mozzarella cheese and 2 cups cheddar cheese. Sprinkle with flour, seasonings, cooked sausage, mushrooms and pepperoni., Roll out remaining dough into a 13x9-in. rectangle. Place dough over filling, crimping edges to seal; prick top with a fork. Sprinkle with remaining cheeses. Bake on a lower oven rack 10 minutes., Reduce oven setting to 375°. Spread pizza sauce over cheese. Bake 30-35 minutes longer or until edges are lightly browned. Let stand 10 minutes before cutting. If desired, sprinkle with Parmesan cheese., Freeze option: Freeze cooled baked pizza pieces in a resealable freezer container. To use, reheat on a baking sheet in a preheated 375° oven until heated through.

24 large mushrooms, stems removed, or more as needed
1 pound bulk hot Italian sausage
1 onion, diced
4 ounces grated Parmesan cheese, divided
¼ cup Italian bread crumbs
1 teaspoon minced garlic
1 teaspoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Hollow out each mushroom cap, reserving scrapings.
  • Heat a skillet over medium-high heat. Cook and stir sausage, onion, and reserved mushroom scrapings in hot skillet until sausage is browned and cooked through, 4 to 6 minutes. Drain and discard grease; return sausage mixture to skillet.
  • Stir 3 ounces Parmesan cheese, bread crumbs, garlic, and parsley into sausage mixture. Cook and stir until heated through, 3 to 5 minutes.
  • Stuff each mushroom cap with sausage mixture and place on a baking sheet.
  • Bake stuffed mushrooms in the preheated oven for 12 minutes. Sprinkle remaining 1 ounce Parmesan cheese over mushrooms and bake until mushrooms are cooked through and cheese is melted and bubbling, about 3 minutes.

1 pound white mushrooms, roughly chopped
2 cloves garlic, smashed
Kosher salt
Flour, for rolling dough
1/2 recipe Basic Pizza Dough, recipe follows
1/2 cup Basic Tomato Sauce, recipe follows
3 ounces sopressata, cut into 1/3-inch thick slices
1 pound fresh mozzarella, grated
1/4 teaspoon red pepper flakes
1 package active dry yeast
3/4 cup warm water, about 110 degrees F
1 teaspoon sugar
1 tablespoon extra-virgin olive oil
1 3/4 cups all-purpose flour, plus extra for kneading
1 teaspoon salt
1 (28-ounce) can chopped tomatoes
2 cloves garlic, pressed
1/4 cup extra-virgin olive oil
1 teaspoon sugar
1/4 teaspoon salt
2 teaspoons dried oregano
In a medium bowl, combine all ingredients and let sit for about 20 minutes to allow flavors to meld.

Steps:

  • Preheat oven to 500 degrees F.
  • In a medium saute pan over medium-high heat, heat olive oil and add mushrooms and garlic. Season mushrooms with kosher salt and cook until mushrooms release their juices and begin to brown, about 6 to 8 minutes.
  • Lightly dust work surface with flour and roll dough into a circle, about 10 inches in diameter and about 1/2-inch thick.
  • Place dough on an oven-proof splatter screen and gently spread with a thin layer of tomato sauce, leaving a 1/2-inch border along the edge. Top the dough with mozzarella, mushroom mixture, and sopressata. Sprinkle the pizza with red pepper flakes. Bake until cheese has melted and the bottom of the crust is brown and crispy, about 12 to 15 minutes. Serve immediately.
  • In a small mixing bowl, whisk together yeast, warm water, sugar and olive oil. Let sit for about 3 minutes to fully dissolve and activate the yeast.
  • In a large mixing bowl, whisk together flour and salt.
  • With a rubber spatula, gradually mix the yeast mixture into the flour until just combined and dough barely holds together. Turn the dough out onto a clean counter surface dusted with flour.
  • Knead the dough with flour-dusted hands until the dough has become smooth and elastic, about 10 minutes. The surface should be tight and silky and bounce back slightly when pressed. Lightly grease a large mixing bowl with olive oil and place the dough in it.
  • Cover the bowl tightly with plastic wrap and set in a warm place to rise until doubled in size, 1 to 2 hours.
  • Once doubled, punch the dough down and divide it into 2 equal pieces. Knead each 1 slightly to form a uniform ball. Set aside and cover them with a kitchen towel or plastic wrap to rest for 30 minutes.

1/2 c chopped onion
2 clove garlic crushed
1 pkg 14 0z of mushrooms
1/4 c bread crumbs
2 Tbsp fresh parsley chopped

1/4 c pizza sauce

Steps:

  • 1. Preheat oven to 400F. In a skillet saute sausage until brown and well cooked. Drain and put into a large bowl.
  • 2. saute onion, garlic and mushroom stems in teh pan drippings untill tender. add tothe bowl with sausage and stir in remaining ingredients.
  • 3. Fill each mushroom cap an d place into a 9x13 baking pan. bake 20 min. Makes approximately 20 mushroom caps.

mayonnaise, to moisten

6 Large Portobello Mushrooms (Stem and ribs removed, brushed clean)
2 Tbsp extra virgin olive oil ((or Olive oil spray))
1 Tbsp Balsamic vinegar (Drizzled)
1 Lb Italian Sausage Links (Removed from casings, crumbled, and cooked)
1/2 yellow onion (Diced small)
3/4 Cup Gorgonzola cheese (Crumbled, divided)
2 Tbsp Parmesan cheese (Grated)
1/2 Cup Panko Bread Crumbs
1/2 Cup fresh parsley (Minced)
Salt and fresh cracked pepper

Steps:

  • Fully heat your oven until the dome is white/clear. Allow the wood to burn down to embers. You can push the coals to the side or back of the oven. When it is time, you will cook the mushrooms on a cast iron pan or "sizzle plate" on the oven floor, away from the direct heat of the coals.
  • Remove the casing from the sausage and crumble the meat onto a pan (either a cast iron frying pan or a sizzle pan.) Place in a cooler section of the oven and let it slowly cook. (You don't want it to be too crispy.) When it is done, move it to the side and let it cool a bit while you are preparing the mushrooms.
  • Remove the stem and ribs (gills) from the mushroom caps with a spoon. Brush off any dirt, or wash the caps briefly in cool water (do not soak!)
  • Place the mushroom caps on a sizzle pan or baking pan. Drizzle the center of the caps with the balsamic vinegar, sprinkle with salt and pepper, and drizzle with olive oil (or spray with cooking oil.)
  • Put them in the oven away from the heat (near the mouth) to par cook to about 50% (apx. 5 min) and then remove from the oven and set them aside.
  • Remove the cooked sausage from the skillet and place it in a bowl. Break up the meat and remove some of the oil.
  • Add the other ingredients: diced onions, crumbled Gorgonzola, some Parmesan, and most of the breadcrumbs. Combine with a fork. Spoon about a teaspoon of the mixture into each mushroom cap.
  • Sprinkle the stuffed mushrooms with the remaining tablespoon of panko crumbs and some of the parsley.
  • Roast the mushrooms for 10-12 minutes away from the direct heat, or until the cheese has started to melt and they are golden on top. Note: Because you have pre-cooked the mushrooms, you can reduce the cooking time to about half, depending on the temperature of your oven. (You are basically just warming them up.)
  • Finish with additional fresh parsley and serve.

5 ounces mascarpone cheese, preferably from Italy

Steps:

  • Preheat the oven to 325 degrees F.
  • Remove the stems from the mushrooms and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and toss with 3 tablespoons of the olive oil and Marsala. Set aside.
  • Heat the remaining 2 tablespoons olive oil in a medium skillet over medium heat. Add the sausage, crumbling it with the back of a wooden spoon. Cook the sausage for 8 to 10 minutes, stirring frequently, until it's completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the scallions and garlic and cook for another 2 to 3 minutes, stirring occasionally. Add the panko crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the sausage mixture creamy. Off the heat, stir in the Parmesan, parsley, and season with salt and pepper, to taste, Cool slightly.
  • Fill each mushroom generously with the sausage mixture. Arrange the mushrooms in a baking dish large enough to hold all the mushrooms in a snug single layer. Bake until the stuffing for 50 minutes, until the stuffing is browned and crusty.
