FILIPINO-STYLE BARBECUE CHICKEN
I'm showing you how I make what is probably the best barbecue chicken you've never had, which I should've already done, but I've hesitated since one of the main ingredients is banana ketchup. But then I remembered that I teach people to cook things, so this includes a recipe for this special ingredient.

Steps:
- Mash ripe banana, tomato paste, vinegar, brown sugar, oil, ginger, onion powder, garlic powder, cayenne, salt, allspice, and turmeric together in a saucepan. Add water and stir to combine.
- Place over medium-high heat and bring to a simmer. Stir to combine. Reduce heat to medium and simmer until reduced and thickened, 7 to 10 minutes. Remove from heat; reserve 3 tablespoons for the basting sauce, leaving about 1/2 cup for the marinade.
- Transfer ½ cup banana ketchup to a bowl and add lemon-lime soda, soy sauce, garlic, brown sugar, black pepper, and lemon juice for the marinade. Whisk until combined. Add halved chicken thighs and toss to coat.
- Cover with plastic wrap and marinate in the refrigerator for 4 to 18 hours.
- When you are ready to cook the chicken, combine reserved 3 tablespoons banana ketchup, soy sauce, brown sugar, oil, and fish sauce in a small bowl for basting sauce.
- Preheat a charcoal grill until coals are very hot.
- Remove chicken from the refrigerator and place on metal skewers, folding in half with the smooth side on the outside, the rougher side folded in.
- Grill chicken over hot coals until no longer pink in the centers, 15 to 20 minutes, turning and basting every 2 to 3 minutes. Serve with accumulated juices or extra basting sauce.

STEAKS IN GARLIC LIME MARINADE (PALOMILLA)
Adapted from Steve Raichlen's The Barbecue! Bible. This is a quick, easy marinade that makes an amazing grilled steak. The key to making this REALLY fast is to use a thin cut steak and only cook it for a couple of minutes on each side. I serve with grilled vegetables and rice for a complete meal. Prep time includes 30 minutes of marinating in the fridge.

Steps:
- Combine all ingredients except for the steaks in a food processor or blender. Process until the mixture is a smooth liquid paste.
- On a plate or in a zip top bag, combine 1/2 of the marinade with the steaks, making sure the meat is well coated. Let sit in the refrigerator for 1/2 hour. Reserve the remaining marinade.
- Grill the steaks over high heat, 2-3 minutes per side, basting if desired with the remaining marinade.
- Remove to a serving dish, brush with any remaining marinade, and serve.

- Make sure your bananas are ripe for this marinade.
- Green bananas won't work well at all.
- Peel bananas and put into the food processor, puree until smooth.
- Add the mayonnaise, yogurt, mustard, lime juice, tabasco, garlic, and green onion, and continue blending until thoroughly mixed.
- Transfer to a small bowl add honey, salt and pepper to taste and refrigerate until ready to use as marinade.
- You can make this up to eight hours in advance.
- Keep it tightly covered in the refrigerator.
- Good as a marinade for grilled shrimp, fish, and chicken!

- Place butter, honey, brown sugar, and lime juice in small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer over medium heat, whisking until smooth. DO AHEAD Can be made 2 days ahead. Cover and refrigerate. Remove vanilla bean and rewarm sauce before using.
- Prepare barbecue (medium-high heat). Brush both sides of pineapple with some sauce. Grill 1 minute per side. Transfer to plate; cut into 1/2-inch cubes and place in large bowl, leaving juices behind. Mix remaining sauce into pineapple. Cut bananas into 1/2-inch chunks; fold into pineapple mixture.

- In a blender or mini food processor, combine the palm sugar, lemongrass, shallots, garlic, ginger, chile and lime juice; pulse to make a slightly coarse puree. Transfer to a bowl and stir in the fish sauce and cilantro.
- Light a grill. Score the skin side of each mackerel fillet 3 or 4 times, rub with oil and season with salt and pepper. Place a fillet skin side up in the center of each banana leaf. Fold up each leaf like an envelope to enclose the fish.
- Grill the packets over moderately high heat until the fish is barely opaque in the center, about 3 minutes per side. Place a banana leaf packet on each plate and pass the sauce at the table.
