- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.

- Heat a large skillet over medium heat. Add the butter, and allow it to melt. Once the butter melts, add the potatoes in an even layer. Allow them to brown on one side, the flip so the opposite side is able to brown. Continue to cook the potatoes until brown, crispy, and fork tender, about 12 to 15 minutes.
- Push the potatoes to one side of the pan, and add the oil and sausage. Cook the sausage until lightly browned, about 5 to 7 minutes.

- Heat a skillet (we prefer cast iron) on medium high heat. Add butter and olive oil. Heat until bubbly.
- Add sausage and potatoes. Continue to cook, stirring often, until sausage and potatoes develop brown crust. Add salt and pepper to your liking.

- In a large skillet with a tight fitting lid, fill half full of water.
- Peel potatoes (if using small new red potatoes, no need to peel) and cut into wedges about the same size as a steak fry. Place in water as you cut. Place pan on stove, and bring to a boil, then cover and lower to a medium boil and boil for five minutes. Potato wedges should still have a good bite. They will be cooked again later. With a strainer, remove to a plate. Discard water.
- Wipe out the pan and add the olive oil. Heat over medium high and add the sausage pieces. Brown on both sides, then reduce heat and continue to cook and turn until they are cooked through. Remove to a medium bowl.
- Add onions and peppers and sauté for about 8-10 minutes or until the peppers just start to lose their crunch. Add the stock and stir to loosen up any brown bits from the pan. Pour this mixture in the bowl with the sausages.
- Add butter to pan and add seasoned salt, garlic powder, oregano and paprika. Place drained partially cooked potatoes in butter mixture and toss lightly to coat both sides then cook until potatoes are browned and cooked through, turning occasionally to brown both sides.
- Add the sausage, peppers and onions back with the potatoes and stir lightly without breaking up the potatoes and serve.

CAJUN SHRIMP SAUSAGE AND POTATO SKILLET
Steps:
- Season shrimp with a small drizzle of oil, smoked paprika, and Old Bay seasoning.
- Season potatoes with smoked paprika, adobo, cayenne pepper, cajun spice seasoning, onion powder, garlic powder salt, black pepper, roasted herb and garlic seasoning.
- Add oil to a hot skillet along with potatoes. Allow the potatoes to cook for 8-10 minutes on medium heat. Toss the potatoes from side to side every 2-3 minutes to allow even cooking.

- Add 1 tablespoon of olive oil to a large skillet over medium heat. Add the sausages and brown on both sides, cooking through most of the way but not completely. Remove the sausages from the skillet to a plate and cover with foil.
- Add the other tablespoon of olive oil to the skillet. Add the peppers, onions and diced potatoes and season with the salt, pepper, garlic powder, oregano and paprika. Cook for 10 minutes, stirring often.
- Stir in the tomato paste and then pour in the marsala wine. Stir and then cover the skillet and cook for another 10 minutes until the potatoes have softened.
- Slice the Italian sausage into thick rounds and then add them to the skillet along with any juices from the plate.
- Remove the cover and add the sausages back to the skillet along with the beef broth. Cook, uncovered for another 7-8 minutes until the sausage and potatoes are cooked through.
- Serve on sub rolls, with or without cheese or on top of your favorite pasta.

- Preheat oven to 400°.
- In a 10-inch cast iron skillet brown sausage until crumbly and medium brown in color.
- Stir as required.
- While sausage is browning peel potatoes and cut in to 1/2-inch cubes, chop onion and mince garlic.
- After browning, remove sausage from pan with a slotted spoon, add potatoes to pan and carefully brown them in the sausage fat.
- Remove potatoes from pan and add to reserved sausage.
- Add butter to pan (if required), once butter is melted add onion and cook until slightly brown and soft, add garlic and cook till aromatic.
- While onions are browning, light whisk eggs, half-and-half and sugar till slightly foamy.
- Return potatoes and sausage to pan, mix well with onion and garlic.
- Season with salt and pepper.
- Pour egg mixture over sausage/potato/onion, sprinkle on 1/2 the cheese and mix, sprinkle remaining cheese on top.
- Place pan in preheated oven; cook for 10 minutes and then lower heat to 350° and cook for an additional 10-20 minutes (depending on how you like your eggs). Keep an eye on the pan--if the cheese gets too brown, then cover with buttered aluminum foil.
- Serve with hot sauce and toast.
- •Variations:.
- Add mushrooms, green pepper, red pepper and sauté with the onions.
- Season the egg mix with hot sauce, replace half-and-half with yogurt.
- Cheese selections, I prefer a small amount of provolone and Parmesan mixed in the eggs with none on top--the wife likes cheddar on top and mixed inches.

I jokingly call this my Breakfast for People Who Are Worried About their Saturated Fat Intake. There is more and more evidence that saturated fats are an important and healthy part of a balanced diet. Your brain, hormones and the cell membranes in every part of your body are made out of them. Buy some good sausage, some good cheese and make this as a treat for yourself. They don't say someone is "fat and happy" for no reason :)

- In a 10 inch cast iron skillet crumble and brown the breakfast sausage over medium heat. The crumbles should be about marble sized and cooked through. Remove the sausage from the pan and drain on paper towels. Reserve for later and try not to eat it all.
- If you must, pour off or blot a little of the sausage grease out of the pan, but really you don't have to. Add the cubed potatoes to the pan and stir to coat with the grease and to keep them from sticking. Liberally salt and pepper the potatoes and sprinkle with garlic powder. Stir and turn again, turn the heat down a little and put a lid on the pan. Check the potatoes every 5 to 10 minutes, stirring and turning so they brown evenly.
- When the potatoes are almost done add the onion to the pan. Turn and cook another 10 minutes or so or until the onion is cooked and the potatoes are browned and cooked through.
- Add the sausage back to the pan and cover everything with the cheese. Put the lid back on the pan and let the cheese melt, another 2-4 minutes.
- Serve with slices of tomatoes, a sprinkling of parsley or other fresh herbs or just ketchup.
