ITALIAN FLATBREAD SANDWICH (PIADINA) WITH SAUSAGE AND BROCCOLI RABE
Steps:
- For the dough: Combine the 1 3/4 cups flour with the baking soda and salt in a large bowl. Whisk to eliminate any lumps. Pour in the milk and 1/4 cup of the olive oil and mix until a dough forms. Grease another large bowl with the remaining 1 tablespoon oil. Add the dough, cover with a kitchen towel or plastic wrap, and set aside for 10 minutes.
- Meanwhile, make the filling: Heat a large skillet over medium-high heat. Add 2 tablespoons of the oil. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Move the sausage to one side of the skillet, add the onions and season them with salt and pepper. Cook, stirring occasionally, until softened, about 3 minutes. Remove from the heat and set aside.
- In another large skillet, heat the remaining 2 tablespoons olive oil over high heat. Add the garlic, broccoli rabe and red pepper flakes. Season with salt and pepper. Cook, stirring occasionally, until the rabe turns bright green, 3 to 4 minutes. Remove from the heat and sprinkle with the lemon juice. Set aside.
- Heat a griddle over medium-high heat. Portion the dough into 6 balls. On a lightly floured surface, roll the balls until about 1/4 inch thick. Place 2 rounds onto the hot griddle. Cook until browned on one side and bubbles begin to form, about 1 minute. Flip and cook the other side for 30 seconds. Transfer the flatbread to a baking sheet. Keep the griddle over the heat.
- Place some of the sausage filling and broccoli rabe on one half of each flatbread. Top each with the grated cheese (or 2 slices of cheese) and fold into a half moon. Place the sandwiches back on the griddle and weigh them down with a foil-covered brick or small cast-iron skillet. Cook until the cheese melts, about 1 minute. Repeat with the remaining dough and sandwiches. Remove from the heat, slice in half and serve.
FLATBREAD WITH SAUSAGE, BELL PEPPERS, AND ASIAGO
Steps:
- 1. Set a pizza stone on the center rack. Preheat oven to 450°F, or higher if possible.
- 2. Sprinkle some flour on the work surface.
- 3. Divide the dough into halves or thirds, depending on how thin or thick you like your flatbread. Work the dough, rolling it into a ball, then flattening it into a circle with the palm of your hand. Press with your fingertips from the center outward, widening the circle. Start pushing this small circle into an oblong or rectangular shape, always leveling the thickness of the dough, so that the dough is about 14 by 6 inches.
- 4. Sprinkle some cornmeal on a pizza peel or the underside of a cookie sheet. Pick up the dough and, in one deft movement, transfer it to the peel.
- 5. Drizzle 1 tablespoon of the olive oil over the surface of the flatbread. Sprinkle half (or one third if making three flatbreads) of the Asiago evenly over the dough and then scatter one half or one third (if making three flatbreads) of the sausage and pepper over the surface.
- 6. Pick up the peel and open the oven door. Gently slide the flatbread onto the stone; a few shakes of the peel and the dough should slide right off, thanks to the cornmeal.
- 7. Bake the flatbread until the surface is bubbling and the bottom of the crust is turning a dark, golden color and crisping nicely, 15 minutes or less. Use the peel to remove the flatbread from the oven, cut into slices, and serve. While the first flatbread is baking, ready the next one. Bake it as you enjoy the first one. Repeat until you've used all the dough and other ingredients.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine ricotta cheese, 1/2 of the mozzarella cheese, Parmesan cheese, egg, and Italian seasoning in a bowl.
- Cook sausage in a skillet over medium heat until no longer pink, 5 to 10 minutes; drain. Stir in marinara sauce.
- Spread 1/6 of the cheese mixture evenly on each flatbread; cover with sausage mixture. Top with remaining mozzarella cheese.
- Bake in the preheated oven until cheese is melted and bubbly, 10 to 15 minutes.

SCACCE RAGUSANE (SICILIAN STUFFED FLATBREAD)
This is my first attempt ever at this incredibly unique and delicious Sicilian stuffed flatbread. What we have here is a very familiar pizza-like flavor profile, but the delivery system is unlike anything you've ever experienced. The outside edges are crispy and crunchy while that saucy and cheesy center is much like a pasta in texture. So, while this is vaguely similar to a lot of things, it's really unlike anything else.

- Pour 1/3 cup warm water into a mixing bowl and sprinkle yeast over the top. Let stand for 10 to 15 minutes to make sure yeast is active.
- Add olive oil, semolina flour, and salt to the yeast mixture. Mix with your hand to form a relatively stiff ball of dough, adding more water if needed to bring the dough together.
- Transfer dough to a work surface and knead until smooth, about 5 minutes. Cover with the mixing bowl and let rest for 30 minutes.
- Uncover and knead the dough for another 3 or 4 minutes; divide dough into 2 portions, and shape each into smooth balls. Use damp hands to help smooth the dough out, if needed.
- Generously dust half of a kitchen towel with semolina flour and place the 2 balls of dough on top. Sprinkle more flour on top of the balls and cover with the other half of the towel. Leave to rise until the dough has almost doubled in size, about 2 hours.
- Preheat the oven to 500 degrees F (260 degrees C). Line a baking sheet with foil and sprinkle with cornmeal.
- Roll each ball of dough out into a very thin circle or oval shape on a lightly floured surface.
- Combine pizza sauce and basil in a bowl. Spread with a thin layer of sauce and scatter pieces of provolone cheese every few inches, leaving a 1 inch border. Fold over the opposite edges toward the middle to form a rectangle. Press lightly to flatten slightly. Repeat sauce and cheese step.
- Fold each end toward the center to make a square shape. Spread with a thin layer of sauce and scatter pieces of cheese on just one half. Fold in half, overlapping the edge by about 1 inch. Transfer to the prepared baking sheet. Repeat filling and folding the second piece of dough.
- Bake in the preheated oven until very well browned, 16 to 18 minutes. Some spots may get charred, but this is fine and desirable, since scacce are traditionally cooked in very hot wood-fired ovens. Let rest for 15 minutes before slicing and serving.

- Heat vegetable oil in heavy large pot over medium-high heat. Add onions and sauté until soft and deep golden brown, stirring often, about 10 minutes. Stir in wine, vinegar, and sugar. - Invert flatbreads, sprayed side down, onto grill. Cook until grill marks appear and sides of bread are dry, 3 to 5 minutes. Return to same baking sheets, grilled side down. Spray uncooked side with nonstick spray. Turn flatbreads over on baking sheets, grilled side up. Sprinkle 3/4 cup cheese over each flatbread. Sprinkle onions, then sausage, over flatbreads, dividing equally. Sprinkle remaining 1/2 cup cheese over, dividing equally. DO AHEAD Can be made 2 hours ahead. Let stand at room temperature.
