"This hearty three-bean soup is very easy to fix," remarks Sharon Thompson of Hunter, Kansas. "You can add a can of green chilies if you like it hotter. I increase the amount of tomatoes and beans for large church get-togethers."

1 pound bulk pork sausage
1 pound ground beef
1 envelope taco seasoning
4 cups water
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cans (15 ounces each) garbanzo beans or chickpeas, rinsed and drained
2 cans (14-1/2 ounces each) stewed tomatoes
2 cans (14-1/2 ounces each) Mexican diced tomatoes, undrained
1 jar (16 ounces) chunky salsa
Sour cream, shredded cheddar cheese and sliced ripe olives, optional

Steps:

  • In a stockpot, cook sausage and beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in the water, beans, tomatoes and salsa. Bring to a boil. reduce heat; simmer, uncovered, for 30 minutes or until heated through, stirring occasionally. Garnish with sour cream, cheese and olives if desired.

1 pound ground beef
1 onion, chopped
1 (1.25 ounce) package taco seasoning mix
1 (15 ounce) can white beans, undrained
1 (15 ounce) can red kidney beans, undrained
1 (15 ounce) can white kidney beans, undrained
1 (15 ounce) can ranch-style beans, undrained
1 (15 ounce) can pinto beans, undrained
1 (15 ounce) can black beans, undrained
1 (15 ounce) can white hominy, drained
1 (10 ounce) can diced tomatoes with green chile peppers

Steps:

  • Cook and stir ground beef in a skillet over medium high heat until browned and crumbly, 5 to 10 minutes; drain fat. Transfer beef to a slow cooker and sprinkle with onion and taco seasoning mix.
  • Stir white beans, red kidney beans, white kidney beans, ranch-style beans, pinto beans, black beans, hominy, and tomatoes with green chile peppers into beef mixture.
  • Cook in the slow cooker set to Low until cooked through and flavors blend, 4 to 5 hours.

I made this today using some left over pork roast. You can adjust according to your own tastes. This soup will freeze well. Cooking time includes dry bean cooking. If using canned it should only take 20 minutes.

Number Of Ingredients 13

1 cup dried black beans (or 2 cans black beans)
6 cups water
2 cups cooked pork (left over CHOPPED pork,chicken, or beef)
1 cup frozen sweet corn
1 cup salsa
1 small onion
4 tablespoons tomato paste
1 tablespoon mild chili powder
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt (or to taste)
garnish with shredded cheese and sour cream

Steps:

  • For dry black beans, rinse and sort. Soak them in 6 cups of water. Simmer on medium for about 1 hour until tender. If using canned beans, place them in the pot with 4-5 cups of water.
  • Chop onion. Add all remaining ingredients EXCEPT SALT.
  • Simmer for about 20 minutes and salt to Taste.
  • Garnish bowl with shredded cheese and sour cream.

2 tablespoons brown sugar
1/8 teaspoon red cayenne pepper
15 ounces kidney beans, drained 1 can

15 ounces pork and beans, 1 can
46 ounces tomato juice, 1can
taco chips, crushed
shredded cheese
sour cream

Steps:

  • Brown beef and onion in skillet. Drain. Place in slow cooker.
  • Stir in taco seasoning, brown sugar, and pepper. Add beans, corn, pork and beans, and tomato juice. Mix well.
  • Cover. Cook on Low 4-6 hours.
  • Garnish individual servings with taco chips, cheese and dollop of sour cream.

This is my fall - back recipe when I need something qick and easy - yet good enough for company. Dress the finished soup however you like - sour cream, cheddar cheese, or crushed tortilla chips go great with it - but on its own this soup is filling and nutritios and very low fat.

1 teaspoon vegetable oil or 1 teaspoon olive oil

2 (14 1/2 ounce) cans diced tomatoes and green chilies
2 (14 1/2 ounce) cans diced tomatoes
1 (16 ounce) bottle Pace Picante Sauce, I use medium
1 (1 ounce) packet taco seasoning
1 (1 ounce) packet ranch dressing mix
1 (12 ounce) bottle beer

Steps:

  • Saute onion and garlic in oil until soft.
  • Add next seven ingredients and simmer for 30 minutes.
  • Serve with your favorite toppings or by itself with crusty bread and a salad for an easy filling vegetarian meal!
  • This can also be thrown into a crockpot in the morning and cooked for 7 to 10 hours.
  • Leftovers freeze well and are great for lunches.

1 (16 ounce) can whole kernel corn, drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (8 ounce) can tomato sauce
2 cups water
1 (1 ounce) package taco seasoning
1 (1 ounce) package dry ranch dressing mix (such as Hidden Valley Ranch®)

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer beef and onion to the bottom of a slow cooker; stir in diced tomatoes, corn, pinto beans, black beans, diced tomatoes with chiles, tomato sauce, water, taco seasoning, and ranch dressing mix.

This is my version of the weight watchers Taco Bean Soup- I have increased the amount of beans and played with the spices to my liking. This makes 8-10, one cup servings at 5 points apiece (it lessens to 4 if you use ground chicken instead)

2 cups ground beef, browned (you may use ground chicken as well)
14 ounces diced tomatoes
2 (10 ounce) cans Rotel Tomatoes (spicy to your liking)
15 ounces black beans
15 ounces mild chili beans
15 ounces butter beans
15 ounces red kidney beans
4 1/2 ounces green chilies
4 tablespoons buttermilk, seasoning powder
2 tablespoons taco seasoning (I use Penzey's Bold Taco)
1 onion, diced
1 cup corn

Steps:

  • Add all of the ingredients besides the corn into a 6 Quart Crockpot set on low. Mix ingredients together and then cover for 4-6 hours.
  • Add the corn towards the end of cooking, cover and cook for one more hour.
