SPICY EGG SANDWICH WITH SAUSAGE AND PICKLED PEPPERS

Spicy Egg Sandwich with Sausage and Pickled Peppers image

A sausage patty topped with feta, cilantro, sweet, piquant pickled peppers, and a sunny-side-up egg make for a hearty sandwich that's perfect for brunch, lunch, or dinner. You can find Peppadew peppers at olive bars at most large supermarkets, or check the condiment aisle, where they're sold jarred.

Time 30m

Yield 4 servings

Number Of Ingredients 15

3/4 pound sweet Italian sausage
3/4 pound hot Italian sausage
2 tablespoons extra virgin olive oil, 2 turns of the pan
2 large cloves garlic, crushed
1 large onion, thinly sliced
2 cubanelle peppers (light green mild Italian peppers), seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
Salt and pepper
2 or 3 jarred hot cherry peppers, banana peppers or pepperoncini, finely chopped
3 tablespoons hot pepper juice, from the jar
4 crusty, semolina submarine sandwich rolls, 8 inches, sesame seeded or plain

3 tablespoons butter
1 large clove garlic
1 1/2 teaspoons dried Italian seasoning, 1/2 a handful or 1/2 teaspoons each oregano, thyme, parsley

Steps:

  • Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
  • Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.

  • Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
  • Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

HOMEMADE BREAKFAST SANDWICHES WITH HOMEMADE MAPLE SAUSAGE, EGG AND CHEESE

Homemade Breakfast Sandwiches with Homemade Maple Sausage, Egg and Cheese image

Provided by Kelsey Nixon

Time 20m

Yield 4 servings

Number Of Ingredients 17

4 Portuguese or kaiser rolls, sliced in half
3 tablespoons unsalted butter, melted, plus 1 tablespoon not melted
1 tablespoon olive oil
Homemade Maple Sausage, formed into 4 (4-ounce) patties, recipe follows
4 large eggs
Kosher salt and freshly cracked black pepper
4 slices American cheese
Hot sauce, optional, for serving
Ketchup, optional, for serving
1 pound ground pork
2 tablespoons maple syrup
2 teaspoons chopped fresh sage
2 teaspoons salt
1 teaspoon fennel seeds
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon crushed red pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Brush the inside of each roll with the melted butter and toast in the oven until slightly crispy and golden brown, 5 to 6 minutes. Remove from the oven and set aside until you are ready to build your sandwich.
  • Heat the olive oil in a cast-iron or nonstick skillet over medium heat. Brown the sausage patties for 3 to 4 minutes per side. Once they are browned and cooked through, remove the patties to a paper towel-lined plate. In the sausage drippings, add the remaining tablespoon of butter and crack 4 eggs into the skillet. Sprinkle the eggs with salt and pepper and cook them to your desired doneness. For this I prefer a fried egg, cooking 2 minutes per side, but you can do whatever you like best. Once the egg is cooked to your liking, top each egg with a slice of American cheese. Place a lid over the skillet to melt the cheese.
  • To assemble a sandwich, place a sausage patty on the bottom half of the toasted roll and top with the egg and cheese. Have it plain or dressed with the condiments you prefer. I like to eat mine with ketchup and a little hot sauce!
  • In a large bowl mix the pork, maple syrup, sage, salt, fennel seeds, garlic, onion and red pepper. Cook the sausage however you like - make patties and sear or crumble and cook in a skillet like hash.
  • Cook's Notes: You can use all different types of meats and spices to make the sausage your own!
  • Make sure you form the sausage patties in the same size and shape of the bread you are using, that way every bite you take of the sandwich has every component it.

SUPER-EASY SAUSAGE AND PEPPERS

Super-Easy Sausage and Peppers image

A simple and delicious way to serve sausage and peppers with a tomato-based sauce. This is one of my husband's and kids' favorite meals. They like it served over rice because it makes a lot of 'gravy' that soaks into the rice. It 's one of my favorites because it's quick, easy, and has only a few ingredients that I usually have on hand.

SAUSAGE, EGG, AND PEPPERS BREAKFAST SUB

Sausage, Egg, and Peppers Breakfast Sub image

Everybody can relate to a sausage-and-pepper submarine sandwich being Italian American, since it is served at every street fair in the Northeast. The use of peppers with sausages is not as prevalent in Italy as it is in the Italian American community here, but this is a delicious dish. Imagine turning it into breakfast, especially on a morning when you have a few extra mouths to feed. The recipe is easy to prepare, because the sausage is taken out of its casings and crumbled into the pan, and everything else is added to it. You just scramble it all together; do not worry about making a perfectly round frittata here.

Yield makes two 6-inch subs, or 4 sandwiches on rolls

Number Of Ingredients 7

2 tablespoons extra-virgin olive oil
2 links sweet Italian sausage, removed from casing (about 8 ounces)
1 medium onion, thinly sliced
1 large red bell pepper, sliced 1/2 inch thick
3/4 teaspoon kosher salt
4 large eggs
Two 6-inch lengths Italian bread, split and toasted, or 4 crusty rolls, split and toasted

Steps:

  • Heat the oil in a large nonstick skillet over medium heat. When the oil is hot, cook the sausage, crumbling with a wooden spoon, until it is no longer pink, about 3 minutes. Add the onion and bell pepper, season with 1/2 teaspoon salt, cover, and cook until the vegetables are wilted and lightly caramelized, about 10 minutes.
  • Beat the eggs with the remaining salt in a small bowl. When the pepper and onion are wilted, pour the eggs into skillet and cook, stirring occasionally with a spatula, until just set but still a little wet, about 1 to 2 minutes. Remove from heat. (The eggs will finish cooking in the turned-off pan.)
  • Mound the frittata on the bread or rolls, and serve immediately.
