Feed a crowd with this all-in-one brunch dish with homemade baked beans, chipolatas, bacon and fried eggs

12 chipolatas
200g pack smoked dry-cured bacon lardons
4 tbsp sunflower oil
680g bottle passata
1 tbsp sweet smoked paprika
3 tbsp tomato purée
1 tbsp brown sugar
100g brown sauce
3 x 400g cans cannellini beans , drained and rinsed
6 eggs
piles of hot buttered toast , to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Toss the chipolatas, bacon lardons and 1 tbsp of the oil together in a large roasting tin. Roast for 20-30 mins until everything is turning brown and crisp - you may want to tip off any liquid and stir it halfway. Use a fish slice to scrape up any stuck bits.
  • Whisk together the passata, paprika, tomato purée, sugar, brown sauce, 250ml water, a little salt and lots of pepper. Stir into the tin with the beans. Can be made 1 day ahead - cool first, tip into a plastic container, then chill.
  • Put the tin back in the oven and bake for another 20 mins until thickened and bubbling (add another 10 mins if cooking from chilled).
  • Turn off the oven but leave the tin in to keep warm while you fry the eggs. Heat the remaining oil in a large frying pan, crack in the eggs and fry them to your liking. Serve the fried eggs with the sausage bake and plenty of hot buttered toast.

This grew out of my addiction to Campbell's Bean with Bacon soup. Of course, I now have my own recipe for the soup and don't have to use canned unless I want the convenience. My husband loves smoked or polish sausage, so this is a marriage of two favorite foods.

1 lb polish keilbasa or smoked sausage (beef, pork or turkey, your choice)
1 c diced green or yellow pepper
1 c diced onion
1 can(s) navy or great northern beans, drain and reserve liquid
a little olive oil if your sausage is lower fat
1 can(s) campbell's bean with bacon soup
1 can(s) ro-tel diced tomatoes and green chilis (optional)

Steps:

  • 1. Slice the Keilbasa into 1/4-inch diagonal pieces. In a large skillet, brown the sausage with the peppers and onions until onions are translucent but not browned. Place sausage and vegetables into a 2-1/2 quart casserole dish. Add the drained navy beans and mix well.
  • 2. Stir the bean liquid into the bean with bacon soup, and mix well - you should do this in a mixing bowl, not in the can. Add the soup mixture to the casserole and blend well.
  • 3. Cover and bake at 350°F for 30 minutes. (Then, if desired, top with the can of Ro-Tel.) Uncover and continue baking another 30 minutes or so, until done to your liking.
  • 4. Another option: you can also mix the Ro-Tel with some cooked rice (about 1 1/2 cups) and spread on top. Or you can stir the cooked rice into the casserole before baking.

Baked Beans with smoked sausage are super meaty and thick. Lots of sweetness from brown sugar, molasses, and ketchup.

2 slices bacon, (chopped into 1/2-inch pieces)
1 sweet onion, (chopped)
2 cloves garlic, (finely chopped)
1/2 pound smoked sausage, (sliced, I use kielbasa)
3 (16-ounces) cans pork and beans
1/2 cup ketchup
1/3 cup packed light brown sugar
1/4 cup molasses
2 tablespoons apple cider vinegar
2 tablespoons yellow mustard
1/4 to 1/2 teaspoon hot sauce, (I use TABASCO)

Steps:

  • Preheat oven to 350 degrees.
  • In a Dutch oven, cook bacon until crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
  • Add onion to bacon drippings and cook until soft.
  • Add garlic and smoked sausage and cook until sausage is browned.
  • Stir in remaining ingredients. Bring to a simmer. Place Dutch oven, uncovered, in oven and cook for 45 to 55 minutes, until thick.

5-6 slices bacon
1/2 pound ground beef
1/2 pound sausage (I like the HOT variety)
1/2 cup onion (finely-chopped )
1/2 cup bell pepper (cored, seeded, and finely chopped (I like the red ones best))
2 16-ounce cans pork and beans
1/2 cup barbecue sauce
1/2 cup ketchup
2 tablespoons spicy brown mustard
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
4 tablespoons brown sugar

Steps:

  • Preheat the oven to 350˚F. Fry bacon in a large skillet until crispy. Remove from pan and discard grease.
  • In the same skillet, brown ground meat, then drain off the excess grease. Add onions and bell peppers. Cook until vegetables soften. Add pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce, and brown sugar to the meat and simmer for 5 minutes.
  • Transfer beans to a greased 2-quart dish. Crumble bacon over the top. Cover with aluminum foil and bake for 45 minutes. Remove foil and continue to bake for an additional 10 minutes. Allow the beans to stand an additional 10 minutes before serving.

ENGLISH SAUSAGE AND BEAN CASSEROLE



English Sausage and Bean Casserole image

This is a recipe that my mum gave me and it makes a very comforting meal on a cold day. I am not certain if you can buy Cumberland sausages in other countries (doubtful!) but if not then go for a thick, heavily seasoned / peppery sausage. What I call Butter Beans I think are called White Lima Beans in the US. I think Worcestershire sauce is widely available but if not use a brown spicy sauce. Lastly, I think cider is referred to as "hard cider" in the US so just to clarify it's the version with alcohol for this recipe! I normally serve with baked potatoes.

6 cumberland sausages
2 onions, chopped
16 ounces butter beans (I used tinned)
16 ounces baked beans (tinned)
1/2 of chopped garlic clove (my mum said half but I like to use a whole clove)
1 tablespoon Worcestershire sauce
0.5 (440 ml) can cider
12 slices bacon
2 pints chicken stock
16 ounces of tinned chopped tomatoes

Steps:

  • Grill the sausages until brown.
  • Fry the chopped onions with the garlic and bacon.
  • In a large saucepan add all the ingredients except only add half the stock. Bring to the boil and then simmer slowly.
  • The recipe doesn't tell you how long to simmer for but sometimes I serve after 20-30 mins or so. If I keep it on for longer I haven't managed to overcook it yet. I just add in the rest of the stock as and when required if I'm waiting for guests to arrive.

2 tablespoons butter
1 onion, chopped
3 cloves garlic, minced
1 jalapeno pepper , minced, if desired
1 red bell pepper, chopped or sliced
1 pound Polish sausage, kielbasa, or fully cooked bratwurst, cut into slices
2 (16-ounce) cans baked beans , undrained
1 (14-ounce) can diced tomatoes, undrained
1/3 cup ketchup
1/4 cup mustard

Steps:

  • Gather the ingredients.
  • In a large skillet, melt the butter over medium heat. Add onion and garlic; sauté and stir until tender, about 5 minutes. Add jalapeño pepper, if using, and green bell pepper; cook another 3 to 4 minutes.
  • Add the sausages to the skillet and cook until slightly browned, turning the sausages occasionally so they cook evenly.
  • Add the baked beans, tomatoes, ketchup, and mustard to the skillet and bring to a boil. Reduce the heat to low so the food is just simmering and cook, uncovered, stirring frequently, until slightly thickened, about 15 to 20 minutes. Serve immediately.
  • Enjoy!

  • Add a splash of olive oil to a large pot or dutch oven over medium-high heat. Add 12 pork sausages, fry until they begin to brown, then add in 8 mini chorizo. Keep frying until fully browned, then remove. They don't need to be fully cooked through at this point, just nicely browned.

This is important for the flavours to develop.
  • After 90mins, take the lid off and stir in 2 cans of beans. Allow to simmer with the lid off for another 10mins or until it's nicely thickened, stirring occasionally. Pluck out the bay leaves/rosemary stalk and serve with mash or chunky buttered bread!
