Steps:
- Mix cooked sausage with velveeta and salsa in large microwave safe bowl.
- Microwave on high for 2-3 minutes, stirring every minute until cheese is melted and dip is smooth and creamy. Consistency will be thicker than most cheese dips due to the sausage.
- May also be heated on stove top in medium saucepan over medium heat until cheese is melted.Also may be held in small crock pot on low setting for 2 hours.
- Serve in a bowl with tortilla chips. May also be spooned onto melba rounds or crackers and served as an appetizer or horderves.

Steps:
- Heat a 10-inch cast-iron skillet over medium heat until very hot. Add the sausage and break up into small pieces with a wooden spoon. Cook until no pink pieces remain, about 6 minutes.
- Reduce the heat to medium-low. Add the cream cheese and break up into smaller pieces. Add the salsa and stir well to combine. Continue to stir until all of the cream cheese is melted, about 3 minutes.
- Top with scallions and cilantro and serve right out of the skillet, with tortilla chips on the side.

- Fry sausage until brown and drain.
- Drain Ro-Tel and reserve 1/4 cup juice.
- Mix together cooked sausage, cream cheese, Ro-Tel and 1/4 cup juice.
- Place in a slightly greased 1 quart baking dish. Sprinkle cheese on top.
- Bake at 350 degrees for 20 to 25 minutes.
- Serve with corn chips or pita chips.

- In a large skillet heat the olive oil over medium heat. Add in the chopped onions and cook until they are soft, 5-7 minutes. Add in the sausage and cook until no longer pink. Add in the garlic and Italian seasoning and cook for an additional 2 minutes. Drain excess fat, if necessary.
- Add the tomatoes and wine to the sausage mixture and cook until almost all of the liquid is evaporated. Mix in the spinach and cook for about 2 minutes, until it’s wilted.
- Turn heat down to low and add in the cream cheese. Stir until melted. Sprinkle in the Parmesan and mix until incorporated. Remove the skillet from the heat.
