One 18.3-ounce box fudge brownie mix
1 stick (8 tablespoons) unsalted butter, melted
1 large egg
1 cup semisweet chocolate chunks

Steps:

  • Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Stir together the brownie mix, butter and egg in a large bowl until smooth and combined, then fold in the chocolate chunks.
  • Scoop 24 balls of dough (about 2 tablespoons each) onto the prepared baking sheets. Use the palm of your hand to gently press each ball into a thick disk. Bake until the cookies spread and the edges are just set, rotating the trays halfway through, 10 to 12 minutes. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

1/2 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
8 ounces bittersweet chocolate, chopped
4 tablespoons unsalted butter
2 large eggs, at room temperature
3/4 cup sugar
1 tablespoon instant espresso powder
1 teaspoon pure vanilla extract

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl; set aside.
  • Combine 6 ounces chopped chocolate and the butter in a medium microwave-safe bowl. Microwave in 45-second intervals, stirring after each, until melted, about 2 minutes. Let cool slightly.
  • Meanwhile, combine the eggs and sugar in a large bowl and beat with a mixer on medium-high speed until very thick and pale, about 5 minutes. Stir the espresso powder and vanilla in a small bowl, then beat into the egg mixture.
  • Beat the warm chocolate mixture into the egg mixture. Reduce the mixer speed to low and beat in the flour mixture until combined. Beat in the remaining 2 ounces chopped chocolate; finish mixing with a rubber spatula (the dough will be soft).
  • Drop mounds of dough (1 1/2 tablespoons each) about 2 inches apart on the prepared pans. Bake, switching the pans halfway through, until the cookies are just set around the edges and the tops are puffed and cracked, 10 to 14 minutes. Let cool completely on the pans.

4 ounces baking chocolate (unsweetened or bittersweet)
2 cups granulated sugar
2 sticks salted butter, softened
3 large eggs
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
1/4 cup plus 1 tablespoon cocoa powder
1 teaspoon baking powder
1/2 teaspoon kosher salt
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
  • Put the chocolate in a microwave-safe bowl and melt it in the microwave. Stir and let cool.
  • Using an electric mixer, mix together the sugar and butter in a large bowl until totally combined. With the mixer on low, slowly drizzle in the cooled chocolate. Scrape the bowl and mix again. Mix in the eggs one at a time, then the vanilla. Scrape the bowl once more and mix.
  • Combine the flour, cocoa powder, baking powder and salt in a bowl and stir it together. Add it in scoops to the mixing bowl with the mixer on low. Scrape the bowl once and mix one final time until all combined.
  • Scoop generous tablespoons of the dough onto the prepared baking sheet, then bake until the cookies are poufy and set, 11 to 12 minutes. Let them sit on the baking sheet for 1 to 2 minutes, then remove them to a wire rack to cool completely. Repeat with the remaining dough.
  • Once cool, sprinkle generously with powdered sugar.

BROWNIE ROLL-OUT COOKIES

I got this recipe from smittenkitchen.com and am putting it here so I will always be able to find it. It makes the most wonderful, chewy, fudgey cookies. A definite keeper. *The recipe says to use parchment paper on the cookie sheets, but I didn't. I allowed them to sit on the cookie sheet for about 1 minute before transferring them to the cooling rack and it worked just fine.

1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup salted butter, softened
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup unsweetened cocoa

Steps:

  • Preheat oven at 350 degrees. Whisk dry flour, salt and baking powder in bowl and set aside. Mix butter, sugar, eggs, vanilla and cocoa in mixer. Gradually add flour mixture, and mix until smooth. Wrap in plastic and chill for at least one hour.
  • Roll out cookie dough on floured counter. Cut into desired shapes, brushing extra deposits of flour off the top. (It does disappear once baked, though, so don't overly fret if they go into the oven looking white.) Bake on a parchment-lined baking sheet for 8 to 11 minutes (the former for 1/8-inch thick cookies, the latter for 1/4-inch cookies) until the edges are firm and the centers are slightly soft and puffed.
  • Transfer to a wire rack to cool.

This came from a Crisco package and is super yummy! These cookies taste just like a brownie with chips in them. I love them with white chocolate chips or a mix of white and milk chocolate. I have even just made these with no chips and frosted them.

1 1/2 cups firmly packed light brown sugar
2/3 cup crisco butter flavor shortening
1 tablespoon water
1 teaspoon vanilla extract
2 large eggs, lightly beaten
1 1/2 cups flour
1/3 cup cocoa powder
1/4 teaspoon baking soda
1/2 teaspoon salt
semi-sweet chocolate chips

Steps:

  • Heat oven to 375ºF.
  • Combine brown sugar, all-vegetable shortening, water and vanilla extract; beat at medium speed until well blended. Beat eggs into mixture.
  • Combine flour, cocoa, salt and baking soda; mix into all-vegetable shortening mixture at low speed just until blended.
  • Stir in chocolate chips. Drop by rounded measuring tablespoonsful 2-inches apart onto ungreased baking sheets.
  • Bake 7 minutes, or until cookies are set.
  • Cool 2 minutes on baking sheet; transfer to cooling rack to cool completely.
  • COOKIE VARIATION You can use any combination of chips for this recipe. For instance, 1 cup milk chocolate chips and 1 cup white chocolate chips, or 1 cup peanut butter chips and 1 cup of chocolate chips, or 1 cup chopped nuts and 1 cup of chips, etc.

Confectioners' sugar

Steps:

  • In a large bowl, beat the sugar, egg, oil, chocolate and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Chill for at least 2 hours. , Shape dough into 1-in. balls; roll in confectioners' sugar. Place 2 in. apart on lightly greased baking sheets. Bake at 350° for 10-12 minutes or until set. Steps:

  • In a small mixing bowl combine flour and baking powder.
  • Beat oil, sugar, and cocoa together in a large mixing bowl. Add eggs to oil and cocoa mixture one egg at a time, beating well after each addition. Stir in vanilla. Mix in flour mixture. Fold in nuts if desired. Chill the dough overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheet.
  • Roll dough into walnut-size balls and roll each ball in confectioners' sugar.
  • Bake cookies for 12 to 15 minutes.
