ITALIAN SAUSAGE BALLS
This version of sausage balls, a traditional southern appetizer, gets an Italian twist. Pickled cherry peppers add a touch of acid and spice that complements the richness of the sausage and the mozzarella.

Steps:
- Position a rack in the top of the oven, and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
- Beat the sausage, mozzarella, flour and oil in the bowl of an electric stand mixer fitted with a paddle attachment until the mixture just comes together. Shape the mixture into balls, using a level tablespoon for each, and set them on the prepared baking sheet at least 1 inch apart (you should have about 24).
- Bake the sausage balls until lightly golden brown and slightly puffed, 12 to 15 minutes, turning them halfway through.
- To serve, skewer a basil leaf (if the leaves are large, fold them in half), a pepper slice and a sausage ball onto a toothpick. Repeat with the remaining toothpicks and ingredients.

- Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper; set aside.
- In a large bowl, whisk together the flour, baking powder, salt, cayenne and black pepper. Add the shredded cheese and toss to evenly coat with the flour mixture. Add the sausage, onion and melted butter, and mix until a cohesive mass forms. Using your hands, break off pieces of the mixture and roll into 1-inch balls (I used a small cookie scoop). Place on the prepared baking sheet about ½-inch apart.
- Bake until the sausage is cooked through, about 25 to 30 minutes. Using tongs, transfer the warm sausage bites to a serving platter, insert toothpicks, and serve warm. These are best served as soon as they are baked, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.

- Preheat oven to 350 degrees. Freshly grate cheese.
- Mix flour & baking powder with the cheese.
- Break the ground sausage up into crumbles and mix into cheese. Mix well. There shouldn't be any dry flour left over. Add tiny amounts of milk or water if there's any dry bits that won't mix in. Start with 1 TB of liquid at a time and mix!
- Scoop mixture into small balls. Lightly wetting your hands with water will help smooth the balls.
- Bake sausage balls at 350 for 18 minutes. You can broil them for 1-2 minutes for a golden crust. Air Fry sausage balls at 350 for 7-10 minutes. Don't overcook them to avoid drying them out. They're done when internal tempature reaches 160 degrees.

- Preheat oven to 400º. Line a rimmed baking sheet with parchment paper.
- Add flour, baking powder, salt and butter to a stand mixer or food processor and mix until butter is incorporated or pinch the butter together with your fingers until it is incorporated into the flour. Add grated cheese and mix. Add sausage a little at a time and mix until it comes together
- Using a 1 tablespoon ice cream scoop, form into balls and place on prepared rack.
- Bake for 15 minutes until slightly browned on the outside. Serve warm.

- Mix in a large bowl the flour, curry, paprika, salt and cheese. With pastry blender or 2 knives used scissors fashion, cut in butter until mixture resembles coarse crumbs. With hands shape into a ball. Cover and refrigerate.
