CHEESY SAUSAGE STROMBOLI

I've had a hundred requests for this recipe over the years. Perfect for brunch or as an evening snack, this sausage-filled bread is not tricky to make-and I never have to worry about storing leftovers! -Vada McRoberts, Silver Lake, Kansas

Number Of Ingredients 12

5 cups all-purpose flour
2 tablespoons sugar
2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (120° to 130°)
1/2 cup warm 2% milk (120° to 130°)
2 tablespoons butter, melted
2 pounds bulk pork sausage
4 cups shredded part-skim mozzarella cheese
3 large eggs, divided use
1 teaspoon minced fresh basil or 1/4 teaspoon dried basil
2 tablespoons grated Parmesan cheese

Steps:

  • In a large bowl, combine the flour, sugar, salt and yeast. Add water, milk and butter; beat on low until well combined. , Turn onto a well-floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, in a large skillet over medium-high heat, cook sausage until no longer pink; drain and cool. Stir in the mozzarella, 2 eggs and basil; set aside. , Punch dough down; divide in half. Roll 1 portion into a 15x10-in. rectangle on a greased baking sheet. Spoon half of the sausage mixture lengthwise down 1 side of rectangle to within 1 in. of edges. , Fold dough over filling; pinch edges to seal. Cut 4 diagonal slits on top of stromboli. Repeat with remaining dough and filling. Beat remaining egg; brush over loaves. Sprinkle with Parmesan cheese. Cover and let rise until doubled, about 45 minutes. , Bake at 375° for 20-25 minutes or until golden brown. Slice; serve warm.

1 package (1/4 ounce) active dry yeast
1 teaspoon sugar
1 cup warm water (110° to 115°)
1/4 cup olive oil
1/4 teaspoon salt, divided
2-1/2 to 3 cups all-purpose flour
3/4 pound bulk pork sausage
1 medium onion, chopped
1 can (8 ounces) tomato sauce
1/2 cup chopped green pepper
1 garlic clove, minced
1-1/2 teaspoons Italian seasoning
Dash pepper
1 cup sour cream
3 tablespoons whipped chive and onion cream cheese
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 large egg white, lightly beaten
Fennel seed

Steps:

  • In a large bowl, dissolve yeast and sugar in water; let stand for 5 minutes. Add the oil, 1/8 teaspoon salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Add the tomato sauce, green pepper, garlic, Italian seasoning, pepper and remaining salt; set aside. Punch dough down. , On a large greased baking sheet, roll dough into an 18x12-in. oval. Spread sausage mixture lengthwise down the center., Combine the sour cream and cream cheese; spread over sausage mixture. Sprinkle with cheeses. Fold one long side of dough over filling. Fold other long side over the top; pinch seam and ends to seal. With a sharp knife, cut slits in top of dough. Cover and let rise until doubled, about 30 minutes., Brush top with egg white; sprinkle with fennel seed. Bake at 400° for 25-30 minutes or until lightly browned. let stand for 10 minutes before slicing.

Calvados is the famous apple brandy from Normandy. A well-stocked liquor store will generally have it on hand, but you can substitute applejack brandy (or even a good fresh apple cider.) "I can buy boudin blanc in many places in New York," Joseph says, "but depending on where you live, it may not be so easy for you. If I had to substitute, I suppose I would use bockwurst, which is a similarly, delicately flavored German veal sausage. Potatoes mashed with butter and cream is what we always eat with this."

3 or 4 links (about 1 pound) fresh French white sausage (boudin blanc) or bockwurst, cut into 3/4-inch slices
4 small Granny Smith or other firm, tart apples, about 1 1/2 pounds, peeled, cored, halved, and cut into 1/4-inch crosswise slices
Ground cinnamon
1/4 cup Calvados, applejack or good apple cider
1/4 cup heavy cream
Chopped fresh parsley leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large cold skillet, arrange the sausage slices in 1 layer. Set over medium-high heat, and cook, turning the slices once or twice until they are crisp and nicely browned on both sides, about 10 minutes. Remove from the heat and set aside.
  • In a 2-quart casserole, arrange a layer of about 1/4 of the sausage slices. Cover the sausage with a layer of about 1/4 of the apple slices. Sprinkle lightly with cinnamon. Continue in this manner to make 4 layers, ending with the apple slices.
  • Stir the Calvados into the skillet in which the sausage was browned, scraping up any crusty, brown bits that cling to the bottom of the pan. Stir in the cream until well blended, Pour this mixture evenly over the casserole.
  • Cover, and bake for 1 hour until the apples have cooked down and the mixture is bubbling. Sprinkle with parsley before serving.

1 lb bulk pork sausage
1 (12 ounce) can Pillsbury refrigerated classic pizza crust
1/2 cup orange marmalade, medley
1 small Granny Smith apples, cored, sliced 1/8-inch thick
8 ounces brie cheese, cut in 1/4-inch slices
5 tablespoons chopped pecans
5 tablespoons dried sweetened cranberries

Steps:

  • 1. Heat oven to 375°F. Line 15x10-inch nonstick pan with sides with parchment paper. Spray parchment paper with Crisco® Original No-Stick Cooking Spray.
  • 2. In 12-inch nonstick skillet, cook sausage over medium-high heat 10 to 15 minutes, stirring frequently, until sausage is no longer pink; drain.
  • 3. Unroll dough in pan. Press dough almost to edges of pan. Spread 1/3 cup of the marmalade down center of dough in 4-inch-wide strip. Top with apple slices, half of the cheese slices, the sausage, remaining half cheese slices, 3 tablespoons of the pecans and 3 tablespoons of the cranberries.
  • 4. Using kitchen scissors or sharp knife, make cuts 1 inch apart on long sides of dough to within 1/2 inch of filling. Fold strips of dough diagonally over filling, alternating from side to side, stretching dough as needed. Bake 15 minutes.
  • 5. Meanwhile in small bowl, mix remaining marmalade, 2 tablespoons pecans and 2 tablespoons cranberries. Spread marmalade mixture over top and sides of partially baked stromboli. Bake an additional 10 to 15 minutes longer or until golden brown. Loosen stromboli from parchment paper; let stand 5 minutes.
  • 6. Serve with additional apple slices, pecans and cranberries, if desired. Serve warm.

I wanted to use up some left-overs and had some frozen pizza dough and this is the result. This is really tasty and can be used as a main dish or as an appetizer.

Number Of Ingredients 8

1 lb frozen pizza dough, defrosted
1/2-3/4 lb Italian sausage
1 green pepper, 1/4 inch wide slices
1 medium onion, 1/4 inch wide slices
italian seasoning
1 -1 1/2 cup mozzarella cheese
2 -3 tablespoons grated parmesan cheese
pizza sauce (optional)

Steps:

  • Lay pizza dough on a lightly floured surface so it can rest.
  • Slice Italian sausage into 1/2 inch slices; fry in a 10" skillet over medium heat until browned, about 10 minutes.
  • Add 1/2 cup water, peppers and onions; bring to boil and cover.
  • Reduce heat to low and cook about 5-10 minutes more, or until veggies are tender and sausage is heated through.
  • Drain liquid from skillet and sprinkle sausage mixture with Italian seasoning; set aside.
  • ***If you have leftover sausage, onions and peppers, like I did, you just need to warm it up***.
  • Preheat oven to 375 degrees and spray a baking sheet with cooking spray.
  • Roll pizza dough (on a lightly floured counter) into a rectangle, approximately 11 x 17.
  • Sprinkle with sausage mixture, then the cheeses.
  • Start at the bottom of the long side and roll jellyroll fashion, stopping occasionally to stuff sides it. When you get to the end, pinch seam together, trying to squeeze air out as you go.
  • Place seam side down on baking sheet; bake for about 25 minutes at 375 degrees.
  • Remove from oven and lay a clean dish towel on top of loaf; this will allow the crust to soften up and it will be easier to slice and eat.
  • After about 10 minutes or so, slice into 1 inch slices. Serve with warmed sauce for dipping, if desired.
  • Enjoy!
