HOMESTYLE CHICKEN POT PIE
Classic southern homestyle chicken pot pie is the ultimate comfort food and is budget-friendly, perfect for leftover chicken. Make the crust and then the filling using cooked chicken, green beans, corn kernels, carrots, onion and celery. Pairs perfectly with a salad.

Steps:
- 1. In a large bowl, whisk together flour, salt, and baking powder. Cube shortening. Using a pastry blender, cut in butter and shortening until mixture is crumbly. Stir in ice water 1 tablespoon at a time with a fork just until dry ingredients are moistened.
- 2. Turn out dough onto a lightly floured surface, and shape into a disk. Wrap in plastic wrap, and refrigerate for 30 minutes.
- 3. Preheat oven to 375°. Spray a 10-inch deep-dish pie plate with cooking spray.
- 1. In a large skillet, melt butter over medium heat. Add potatoes, beans, corn, carrot, onion, and celery; cook, stirring occasionally, until vegetables begin to soften, about 7 minutes.
- 2. In a small bowl, stir together broth and half-and-half; whisk in flour until mixture is smooth. Stir half-and-half mixture, parsley, 1¼ teaspoons salt, pepper, and thyme into vegetables, and bring to a boil over medium-high heat. Cook, stirring frequently, until sauce is thickened, 3 to 5 minutes. Remove from heat, and stir in chicken. Pour mixture into prepared pan.
- 3. On a lightly floured surface, roll dough to a 12-inch circle; place on top of chicken mixture. Fold edges of dough under, and crimp as desired. Cut 6 slits in top of dough to release steam. Brush beaten egg onto dough, and sprinkle with remaining ¼ teaspoon salt. Place pot pie on a rimmed baking sheet.
- 4. Bake until crust is golden brown and filling is hot and bubbly, about 40 minutes. Let stand for 10 minutes before serving.
DELICIOUS CHICKEN POT PIE
This chicken pot pie recipe takes a little time, but it is WELL WORTH IT!! This is an all-time favorite in our family. Great on a cold winter day.

- Preheat oven to 400°F.
- Saute onion, celery, carrots and potatoes in margarine for 10 minutes.
- Add flour to sauteed mixture, stirring well, cook one minute stirring constantly.
- Combine broth and half and half.
- Gradually stir into vegetable mixture.
- Cook over medium heat stirring constantly until thickened and bubbly.
- Stir in salt and pepper; add chicken and stir well.
- Pour into shallow 2 quart casserole dish and top with pie shells.
- Cut slits to allow steam to escape.
- Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

CHICKEN POT PIE
This is my go-to chicken pot recipe - one that I adapted from the queen of comfort food, Ina Garten. My version has all the must-haves, like tender chicken and lots of veggies, but it's lighter on the butter and the recipe makes four reasonable-sized servings.

- Preheat oven to 375 degrees
- Heat the olive oil in a large pan over medium heat. While the oil is heating, season both sides of the chicken with salt and pepper. Add the chicken to the pan and cook on each side until internal temperature reads 165 degrees. Remove the chicken and set aside.
- In the same pan, melt the butter. Add the diced onion, garlic, and carrots. Using a wooden spoon, stir the vegetables to coat them in the butter and scrape the browned bits off the bottom of the pan. Cook the veggies until they start to soften. Add the thyme, parsley, salt, and pepper. Sprinkle the flour over the top of the veggies and stir to combine. Add the chicken stock to the flour mixture. Adjust the heat to bring the pot to a strong simmer. Simmer the sauce until it's thickened and coats the back of a spoon, about 10-15 minutes.
- While the filling simmers, dice the chicken into bite-sized pieces. Add the lemon juice and peas to the filling and stir to combine. Add the cream and stir. Ladle filling into bowls or a baking dish.
- In a small bowl, lightly beat the egg. Depending on what you decide to use to bake the pot pies (see notes for details), cut the pie dough to fit the dish (or bowls). Brush the edges of the pie dough with water so it adheres to the baking dish. Brush the top of the pie dough with a light coating of egg and sprinkle some cheese over the top. Cut a few slits in the dough to allow steam to escape while it bakes.
- Bake the pot pies on a baking sheet at 375 degrees for 25-30 minutes, or until the tops are golden brown and the filling is bubbling.

FLAVORFUL AND COMFORTING CHICKEN POT PIE
Not just your average pot pie, this dish is full of flavor and so wonderfully comforting on a cold winter night! Add whatever vegetables you have on hand, almost any will do. I served this with a simple salad of soft butter lettuce with a lemon and olive oil vinaigrette and a Pinot Noir in front of the fire! This makes a large, deep dish pie, or two, regular pies.

- Heat a large frying pan and add 2-3 TBS of the butter. In a large bowl, toss the bell pepper, onion, celery, garlic, carrots, and potato with Emeril's Creole Seasoning then toss them into the hot butter and saute for 10 minutes.
- Add the remaining vegetables, stirring occasionally for 5 minutes.
- Preheat the oven to 400 degrees.
- Add the wine and the parsley and let all the liquid evaporate on low heat.
- Remove the vegetables and set aside.
- Usine the same pan, over med. heat Add the remaining butter and when that is melted whisk in the flour, stirring constantly until all is incorporated.
- Slowly add the chicken broth, continue to stir, and then add the cream. This mixture will get thick and creamy.
- Salt and pepper to taste.
- Add the chicken and sauteed vegetables, stir well and remove from the heat.
- Spray or butter a casserole dish large enough for the pie, sprinkle with a little flour, and lay the bottom crust, add the chicken mixture, and cover with the top crust.
- Pinch the edges all around to seal and cut some slits on top to use as steam escape vents.
- Bake for approximately one hour, or until the crust is deep golden.

CHICKEN POT PIE
One of the most popular comfort food meals of all time, this Homemade Chicken Pot Pie has a flaky, buttery crust, a creamy sauce, and a deliciously filling mix of chicken and vegetables.

- Preheat the oven to 400F.
- Line the pie plate with one of the pie doughs.
- In a large mixing bowl, combine the vegetables, chicken, and soup mix.
- Pour into the bottom pie crust.
- Top with the butter (sliced in 1/2 Tablespoon pieces)
- Cover with remaining pie crust.
- Cut four slits in the top to release steam as it cooks.
- Place in the oven for 50 minutes.
- After about 30 minutes, cover the edges of the pie crust to keep from burning, while leaving the center majority exposed.
- Allow it to rest for about 10 minutes before slicing and serving.
BROCCOLI CHICKEN POT PIE
Enjoy my "grown-up" version of the ultimate in comfort food. This Broccoli Chicken Pot Pie recipe is super easy to prepare, and so incredibly delicious!

- Heat oven to 375°.
- Thaw the puff pastry according to package directions.
- Heat oil in a pot.
- Add the shallots, potatoes and celery stalk.
- Season with kosher salt and black pepper.
- Add the broccoli and allow the mixture to cook for about five minutes on medium heat. Do NOT brown the shallots.
- Add in the butter.
- Once the butter is melted, sprinkle in the flour.
- Cook for a minute or two to cook off the raw flour taste.
- Add the chicken stock.
- Turn up the heat to almost a boil.
- Scrape up the bits from the bottom.
- Add in the bay leaves.
- Reduce heat and simmer for ten minutes. (If the mixture seems too thick, add a touch more stock).
- Pour in the heavy whipping cream. Heat through.
- Remove the bay leaves and celery stalk.
- Slowly incorporate the cheese.
- Add in the shredded chicken.
- Taste for salt.
- Butter the inside of the ramekins.
- Ladle in the broccoli chicken mixture.
- Brush the sides with the egg.
- Top with a sheet of puff pastry large enough to cover the top. Be sure to pull tight across the top so that the pastry does not sink into the mixture. (see notes in post).
- Brush the puff pastry with more egg wash.
- Cut a slit in the top of the pastry to vent.
- Bake for 20 to 25 minutes, or until the puff pastry is fluffy and golden brown.
- Garnish with fresh chopped parsley.
- ENJOY!
