This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

280 g sauerkraut (chopped)
500 g potatoes (peeled, cubed)
1 medium carrot (finely diced)
50 g celeriac (peeled, finely diced)
1/2 small leek (thinly sliced)
1 onion (finely chopped)
1 bay leaf
1/3 tsp allspice powder
2 tbsp olive oil
6 cups vegetable or chicken stock
Salt and pepper to taste

Steps:

  • In a large pot heat up the oil, add the bay leaf, onion and fry for a couple of minutes over a medium heat stirring occasionally.
  • Add the sauerkraut (and meat if using, see *Notes below), stir and continue frying for another minute or so. Add 1/2 the amount of stock, cover and bring to boil. Lower the heat and simmer for 20 minutes stirring occasionally.
  • Add the rest of the ingredients (NOT the salt), including the remaining stock, stir, cover, bring to boil again and continue cooking over a low heat for 50 minutes. DO NOT add salt until the soup is fully cooked as the sauerkraut is salty so taste the soup to decide how much salt it needs.

2 quarts water
1 large onion (chopped)
1 bay leaf
5 black peppercorns
1 sprig fresh parsley or 1/4 teaspoon dried parsley
1/2 cup barley (rinsed and drained (not quick-cooking)
1 (14-ounce) can sauerkraut (drained and reserve liquid; rinsed and chopped)
Salt and pepper, to taste
Optional: 1 tablespoon caraway seeds

Steps:

  • Gather the ingredients.
  • Place ham hocks or ham bone and water in a Dutch oven or other large pot. Bring to a boil, skimming off foam. Add onion, bay leaf, peppercorns , and parsley. Return to a boil, reduce heat to a simmer and cook about 45 minutes, or until meat falls off the bones.
  • Remove meat from broth, dice and return to the pot with barley, sauerkraut, and caraway seeds, if using. Return to a boil, reduce heat and simmer , uncovered, for an additional 45 minutes.
  • If soup becomes too thick, add meat stock or water. If a more sour taste is desired, add some reserved kraut juice.

1 cup hard cider

1 cup peeled and cubed potatoes
3 sprigs fresh thyme

Steps:

  • Heat a large soup pot over medium-high heat and add the sausage. Cook until the sausage is caramelized and the fat is rendered, 4 to 6 minutes. Add the onions and celery and cook, stirring occasionally, until vegetables are soft and lightly browned, about 4 minutes. Add the garlic and cook, stirring, for 1 minute. Add the cider and cook until almost completely reduced. Add the sauerkraut, broth, potatoes, thyme and pepper and bring to a boil. 14 ounces sauerkraut ((400 g) German or Polish sauerkraut)
2 Tablespoons pork lard (or sunflower/Canola oil)
3 onions
1/3 cup all-purpose flour ((40 g) to thicken the soup)
1 Tablespoon sweet ground paprika (Hungarian-style)
1/2 teaspoon caraway seeds (crushed)
5 cups chicken broth ((1.2 liter) or water)
4 potatoes (all-purpose such as Yukon Gold)
2 bay leaves
1/4 cup granulated sugar ((50 g))
1/4 teaspoon black pepper (ground)
1/2 Tablespoon salt
7 ounces sausage (e.g. Polish kielbasa, 2 pieces each about 3.5 oz in weight)

Steps:

  • Peel the onions and chop them finely. Place a heavy-bottomed saucepan on the stove on medium heat. Heat the fat in it, carefully throw in the onions, and let them turn translucent. It takes about five minutes. Do not forget to stir.
  • Reduce the temperature a little. Add the flour, sweet paprika, and caraway seeds to the onions. Sauté for about half a minute to a minute, keep stirring.
  • Start adding the chicken stock in batches and gradually whisk to prevent lumps from forming. Bring to a boil.
  • Meanwhile, prepare the Sauerkraut and potatoes. Drain the Sauerkraut, but keep some brine aside for possible soup acidification later. Do not rinse the kraut-if it has long fibers, cut it into smaller pieces. Peel and cut the potatoes into small cubes about ½ inch in size.
  • Put the Sauerkraut and potatoes in the soup. Add the bay leaves. Turn down the heat, cover the pot and let it bubble for about 20 minutes.
  • Season with salt, pepper, and sugar. If the soup is not acidic enough, add the brine you reserved from the Sauerkraut at the beginning of cooking.
  • Cut the sausage into rounds and pan-fry them in a teaspoon of lard. Throw fried sausage into the soup and stir.

1 1 pound package Polish kielbasa, cut in rounds (could use pork stew meat or ground pork sausage)
1 large onion (chopped)
3 to 4 medium carrots (scraped and chopped)
3 to 4 medium potatoes (peeled and cut in pieces)
1 14.5 ounce can diced tomatoes, undrained
1 14.5 ounce can chicken broth or about 2 cups
1 cup water
2 cups sauerkraut or 1 (14.5 ounce can (Canned sauerkraut should be drained and rinsed several times))
1/4 teaspoon black pepper
1 bay leaf
1/2 teaspoon thyme
1/2 teaspoon smoked paprika
1 teaspoon minced garlic
Salt to taste

Steps:

  • I usually brown my sausage and onions in about 2 tablespoons of butter or oil before adding to crock pot but this is not necessary. Add all ingredients to crock pot, stir to combine.
  • Cook on low for 6 to 7 hours or high for 4 hours or until carrots and potatoes are cooked. Makes a 3 quart crock pot almost full or about 8 to 10 servings.

Steps:

  • Melt the butter in a large wide pot or Dutch oven over medium heat. Add the kielbasa and cook, stirring occasionally, until golden and crisp, 3 to 5 minutes. Remove with a slotted spoon to a plate, leaving the drippings in the pot.
  • Add the onion, diced celery and potatoes to the pot and cook, scraping up any browned bits with a wooden spoon, until the onion and celery are softened, about 5 minutes. Steps:

  • Melt butter in dutch oven or pot over medium/high heat. Toss in polish sausage pieces and brown for about 5 minute.
  • Once sausage is browned, add celery, bell pepper, onion and garlic and saute until onion is translucent, about 5-8 minutes.
  • Pour in chicken broth, and scrape the bottom of the pan to incorporate all of the brown bits (hello, flavor!). Then add sauerkraut, heavy cream, dill, ground pepper, and caraway seeds.
  • Bring to a boil, then reduce the temperature to low and simmer for 10 minutes. Add salt to taste.
