SAUCY PORK CHOP SKILLET

- Cook rice according to package directions. Meanwhile, in a large nonstick skillet, heat oil over medium-high heat. Brown pork chops on both sides; remove from pan., Add onion to drippings; cook and stir until tender. Stir in tomatoes, broth, parsley and seasonings; bring to a boil. Return pork to pan. Reduce heat; simmer, covered, until a thermometer inserted in pork reads 145°, 6-8 minutes., Remove pork to a serving plate; keep warm. In a small bowl, mix flour and water until smooth; stir into sauce. Bring to a boil, stirring constantly; cook and stir until thickened, 2 minutes. Spoon over pork; serve with rice.

SAUCY PORK STEAK
This is a very mild and somewhat sweet sauce. I put it on one pork shoulder blade steak but there is enough to cover two steaks. This recipe is very versatile, so if you want to spice it up, you can. I did not want to call it a BBQ sauce since it has no "smokey" flavor in it. Cooking more steaks may take additional time to cook in the crockpot.

Steps:
- Mix sauce ingredients together.
- Refrigerate for at least one hour before using.
- Trim excess fat from pork steak.
- If possible, cut it in half.
- Put half of the pork steak in bottom of a crockpot.
- Spread some of the sauce on top of the steak.
- Lay the other half on top of that.
- Pour the remainder of the sauce onto the steak.
- Cook on high for 2 hours.
- Turn down to low and cook another 45 minutes to 1 hour or until tender and falling off the bone.

- In a microwave-safe dish, microwave butter, covered, until melted; add brown sugar and lemon juice, stirring to dissolve sugar. Reserve 2/3 cup for drizzling., Brush pork chops with remaining sauce. Grill, covered, on an oiled rack over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. , Stir sauce to combine and gently reheat if necessary; drizzle over pork chops. Serve with lemon if desired.

- Grease a 13 x 9-inch baking dish.
- Heat oil and butter in a large skillet over medium heat.
- Season the pork steaks with a little garlic powder and black pepper; add to the oil and brown for about 3-4 minutes; transfer to prepared baking dish (do not drain the oil and butter in skillet).
- Sprinkle the chopped onion around the pork steaks.
- Add in sliced fresh mushrooms to the skillet and cook until the mushrooms loose their moisture (about 6 minutes).
- Add in fresh garlic and cook stirring for 1-2 minutes; transfer the mushroom/garlic mixture to a large bowl; add in both cans soup with milk or water, dry onion soup mix, Worcestershire sauce and 1/2 teaspoon black pepper; mix with a wooden spoon until well combined.
- Pour on and around the steaks then lift and turn the steaks to coat with the mixture.
- Cover the pan with foil and bake in a 350 degrees F oven for about 1-1/2 hours or until the steaks are tender.

- Add rosemary, capers, and ½ cup water to skillet; season with salt. Reduce heat as needed to maintain a very low simmer. Add butter and swirl pan continuously (and vigorously) until sauce becomes smooth, glossy, and emulsified.
