One Pot Fettuccine Alfredo image

Quick and easy fettuccine alfredo recipe, made in one pot, with simple ingredients on stovetop. This 30 minute meal is rich, creamy and loaded with parmesan cheese.

Provided by Abeer

Categories     Main Course

Time 30m

Number Of Ingredients 10

2 cups Milk (Whole or 2%)
1.5 cups Chicken broth (Low sodium)
1 tbsp Garlic
Salt (To taste)
Pepper (To taste)
1-2 tsp Italian seasoning (Optional)
8 oz Fettuccine (Uncooked)
1/2 cup Heavy cream
1 cup Parmesan cheese (Shredded)
1 tsp Parsley (For garnish)

Steps:

  • In a large nonstick pot, add milk, broth, garlic, salt, pepper, Italian seasoning and bring to a simmer over medium high heat.
  • Add uncooked fettuccine and mix everything together. Let it cook over (without lid) over medium heat until pasta is almost cooked (usually 9 minutes). Be sure to mix pasta every few minutes to prevent sticking.
  • Add heavy cream and parmesan cheese and mix and cook until sauce is reduced and becomes thick.
  • If the pasta is still not fully cooked, add some more milk and let it cook for a few more minutes. If the sauce becomes too thick, add a little milk to to make it smooth again.
  • Garnish with parsley and more freshly grated parmesan cheese and enjoy.

ONE POT PASTA BOLOGNESE

One Pot Pasta Bolognese image

Recipe video above. For One-Pot-Pasta Cynics (and Italian cooking pursists), there's a special message for you at the top of the post! :)This recipe is everything you love about Spaghetti Bolognese - the rich, thick tomato sauce, full flavoured (never bland!), made from scratch WITH the pasta in one pot! Excellent big batch cooking, keeps well. Tomato passata (aka tomato puree) is the key here for an instant thick, rich sauce rather than cooking down crushed tomato.Pasta types - long, short or tiny, but read recipe note 4 for adjustments.

Provided by Nagi

Categories     Dinner     One Pot

Number Of Ingredients 13

1 tbsp olive oil
2 garlic cloves (, minced)
1 onion (, finely chopped)
500g / 1 lb beef mince (ground beef) (, I use lean)
700g / 24.5 oz tomato passata (tomato puree) ((Note 1))
3 cups beef broth ((or stock cubes + water, Note 2))
2 tsp Italian mixed herbs ((options, see Note 3))
1/4 - 1/2 tsp chilli flakes (red pepper flakes) (, adjust to taste)
2 tsp Worcestershire Sauce
2 tbsp tomato paste
3/4 tsp each salt and pepper
350g / 12 oz spaghetti (, uncooked (other pasta - Note 4))
Parmesan

Steps:

  • Saute onion & garlic: Heat oil in a large pot over high heat. Cook garlic and onion for 2 minutes until translucent.
  • Cook beef: Add beef and cook, breaking it up as you go.
  • Add tomato: Once beef has all changed from red to brown, add tomato passata.
  • Rinse out bottle: Pour some beef stock into the empty bottle, shake, then pour into the pot.
  • Add everything else: Add remaining beef stock and all remaining ingredients except spaghetti. Give it a good stir, then let it come up to the boil.
  • Add spaghetti: Add pasta, fanning it out around the pot. Leave for 30 seconds to start softening, then start pushing it in under the liquid.
  • Cook pasta: Once fully submerged, cook for 12 minutes, stirring every minute or so, and more towards the end. At about the 8 minute mark, lower the heat to medium otherwise the base might catch (but ensure it is still bubbling gently - you don't want pasta just bloating in warm water).
  • Remove from stove, toss well: Take it off the stove once the pasta is JUST cooked, the tiniest bit firmer than you want, and when still saucy. Toss it for about 30 seconds or so - the sauce will reduce further, the pasta will finish cooking.
  • Serve immediately, garnished with parmesan.

SAUCY PASTA ALL-IN-ONE POT

Saucy Pasta All-In-One Pot image

Not sure where I received this recipe, but it's perfect for a quick weeknight supper. For some reason, I always have a jar of spaghetti sauce in the fridge that I need to use the remainder of or throw away. Sometimes I add a bit of Italian seasoning for extra flavor. This dish cooks in one pot, so there is minimal clean up. Also, it's much healthier than Hamburger Helper.

  • Heat the olive oil in a large saucepan or frying pan (one which has a lid) over a medium heat. Add the onions and garlic and fry gently until softened (about 4 - 5 minutes).
  • Remove the sausages from their skins and plop into the pan in small chunks, add the pepper slices, turn up the heat and let everything fry for 5 minutes until the sausage chunks are golden and the peppers are just starting to blacken at the edges.
  • Add the dry pasta, chopped tomatoes, fennel seeds, Italian herbs, chilli flakes, salt and pepper and about 500ml of the stock. Give everything a good stir, pop the lid on and cook for 13 - 15 minutes until the pasta is ALMOST cooked through and most of the liquid has been absorbed.
  • * Note! I always make up 750ml of stock and then check on the pasta as it cooks and add more if needed, if it's looking dry. If you like very 'wet' saucy pasta, go ahead and add it all at the start.
