1 can (15.25 ounces) whole kernel corn, undrained
1 can (14.75 ounces) cream-style corn
1 medium onion, chopped (1/2 cup)
8 slices bacon, cooked, crumbled (1/2 cup)
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1 can (12 ounces) evaporated milk

Steps:

  • Spray 3 to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except evaporated milk.
  • Cover; cook on Low heat setting 6 to 8 hours until potatoes are tender. Just before serving, increase heat to high setting. Stir in milk; cover and cook for 5 minutes or until chowder is hot.

2 large carrots (chopped)
1 large onion (chopped)
4 potatoes (chopped)
2 16 ounces cans of corn (drained OR one small 10-12oz bag of frozen corn)
2 16 ounces cans of creamed corn
4 cups of water OR chicken broth
1 pound bacon (cooked and crumbled)
½ teaspoon thyme
1 teaspoon dried parsley
½ teaspoon garlic powder
salt & pepper to taste
1 12 ounces can of evaporated milk
2 tablespoons cornstarch
3 tablespoons butter (optional)

Steps:

  • Place everything except for the evaporated milk, cornstarch and butter or margarine into the slow cooker.
  • Add just enough water or chicken stock to cover the ingredients.
  • Cook on high 5 hours or low 7-8 hours until vegetables are softened.
  • Combine cornstarch and evaporated milk. Stir into slow cooker along with butter 30 minutes before serving,
  • Taste and adjust seasoning with salt and pepper to taste.

1 oz (16 . package of frozen corn
2 tablespoons unsalted butter
3 tablespoons all purpose flour
6 cups of chicken stock
1/2 teaspoon dried thyme
1 teaspoon oregano
1 teaspoon onion powder
2 teaspoons garlic powder
1/2 cup heavy cream
salt and pepper to taste

Steps:

  • Dump diced potatoes in the bottom of the bowl of your slow cooker
  • Pour in package of frozen corn
  • Add three tablespoons of flour, toss together until corn and potatoes are coated
  • Add the chicken stock, thyme, oregano, onion powder, garlic powder, salt and pepper. Stir.
  • Cook on low 7-8 hours or high 3-4 hours
  • When cooking is complete stir in a half cup of heavy cream

1/2 pound bacon (cooked crisply, and diced)

Steps:

  • In a slow cooker combine the potatoes, onion, corn, chicken broth, salt, pepper, thyme, basil, and onion powder.
  • Cook on low for 6 to 8 hours or high for 3 to 4 hours.
  • Combine a the half and half and the corn starch in a small bowl, whisking until smooth. Stir in the mixture with the bacon and cook 10 to 15 minutes more on high or until the sauce is thickened.

2 ½ cups chicken stock
2 medium-size russet potatoes (about 1 ½ lb.), peeled and chopped
1 small yellow onion (about 5 oz.), chopped
4 thyme sprigs
3 garlic cloves, smashed
2 teaspoons kosher salt
1 teaspoon black pepper
4 thick-cut bacon slices, cooked and crumbled
½ cup finely chopped red onion (from 1 small onion)
2 tablespoons chopped fresh chives
2 tablespoons fresh lime juice (from 1 large lime)
1 cup heavy cream

Steps:

  • Cut corn kernels from cobs using a sharp knife. Reserve 1 cup corn kernels. Place remaining corn kernels in a 5- to 6-quart slow cooker. Working over a rimmed pan, use the back of the knife to scrape cobs to release all juices from cobs. Add corn milk, stock, potatoes, yellow onion, thyme sprigs, garlic, salt, and pepper to slow cooker.
  • Cover and cook on LOW until potatoes are very tender and chowder has thickened slightly, about 6 hours.
  • Meanwhile, stir together reserved 1 cup corn kernels, bacon, red onion, chives, and lime juice in a small bowl. Chill until ready to serve, up to 6 hours ahead.

Steps:

  • Begin by lining your Crockpot with these Slow Cooker liners. If you do not have Crockpot liners on hand, spray the Crock with non-stick spray.
  • Scrub your potatoes using a good vegetable brush like this one. Then chop them into cubes about one inch in size. My recipe calls for leaving the skins on the potatoes but if you wish to peel them, go right ahead.
  • Add the potatoes, onion, corn, chicken broth, and salt and pepper into the Crockpot. Stir to combine. Cover and cook on the high setting for 4 hours.
  • Add the cornstarch and half and half into a medium-sized bowl and whisk together to combine well until there are no lumps.
