3/4 cup BULL'S-EYE Original Barbecue Sauce
2 Tbsp. orange marmalade
2 tsp. hot pepper sauce
4 lb. pork baby back ribs

Steps:

  • Heat grill to medium-high heat.
  • Mix barbecue sauce, marmalade and pepper sauce until blended.
  • Place half the ribs in single layer in center of large sheet of heavy-duty foil. Bring up long sides of foil. Double fold both short ends of foil to seal, leaving top open. Add 1/4 cup water (or 1 ice cube) to foil packet through opening at top. Double fold top to seal packet, leaving room for heat circulation inside. Repeat with remaining ribs.
  • Grill 45 min. to 1 hour or until ribs are done. Remove ribs from foil packets; return ribs to grill. Brush ribs with barbecue sauce mixture. Grill 15 min., turning and brushing occasionally with remaining sauce.

2 racks baby back ribs
1/2 cup dark brown sugar
1 1/2 tablespoons freshly ground black pepper
1 tablespoon kosher salt
1 1/2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/4 cup plus 2 tablespoons dark brown sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon garlic powder
3 cups ketchup
1 1/2 cups apple cider vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt

Steps:

  • For the ribs: Pat the ribs dry with paper towels. Combine the brown sugar, black pepper, salt, paprika, garlic powder, onion powder and cayenne pepper, in a small bowl. Completely coat both sides of ribs with the dry rub, pressing it into the meat. Wrap each rack tightly in aluminum foil and refrigerate for at least 6 hours and up to overnight.
  • Preheat the oven to 300 degrees F. Put the foil-wrapped ribs on a baking sheet and bake for 2 hours. Cool for 15 minutes, then carefully remove and discard the aluminum foil.
  • For the barbecue sauce: Meanwhile, put the sugar, cayenne, red pepper flakes and garlic powder in a medium saucepan. Mix well together to break up any lumps. Stir in the ketchup, cider vinegar, Worcestershire sauce and salt and bring to a simmer over medium heat. Cook, stirring occasionally, until the sugar is melted and the sauce thickens slightly, about 5 minutes. Makes 3 1/4 cups sauce.
  • Preheat a grill to medium-high heat. Brush the ribs liberally with the barbecue sauce and grill until the sauce starts to darken, about 10 minutes. Cut into individual ribs and serve warm with any extra barbecue sauce on the side.

5 pounds pork spareribs, cut into slabs
1/3 cup Lone Star Dry Rub, recipe follows
1 1/2 cups mesquite or hickory wood chips, soaked in water for 30 minutes, and drained
2 cups classic BBQ sauce
2 tablespoons chili powder
1 tablespoon garlic salt
1 tablespoon sweet Hungarian paprika
1 tablespoon freshly ground black pepper
1 teaspoon cayenne pepper

Steps:

  • Rub the spareribs with the dry rub. Wrap each slab tightly in a double thickness of aluminum foil. Set aside while building the fire.
  • Build a charcoal fire in an outdoor grill and let burn until the coals are covered with white ash. In a gas grill, preheat on High, then adjust to Low.
  • Place the foil-wrapped ribs on the grill and cover. Cook, turning occasionally, until the ribs are tender, about 1 hour. Unwrap the ribs and set aside.
  • Add more charcoal to the fire and let burn until medium-hot. You should be able to hold your hand at grill level for about 3 seconds. Sprinkle the drained chips over the coals. In a gas grill: keep the heat on Low. Place the drained chips in the metal chip box. Or, wrap the chips in aluminum foil, pierce a few holes in the foil, and place on the heat source.
  • Lightly oil the cooking grate. Place the ribs on the grill, brush with sauce, and cover. Grill for 5 minutes. Turn, brush with more sauce. Cover and continue grilling until the ribs are glazed, about 5 more minutes.
  • Cut between the bones into individual ribs. Serve hot, with any remaining sauce passed on the side.
  • Mix all the ingredients together in a bowl or a jar. Use immediately or cover and store in a cool, dry place for up to three months.
  • Yield: 1/3 cup

Great do ahead ribs. Steam on broiler pan in slow oven, then grill at serving time. These are the most tender and delicious ribs you will ever eat. Alternate method is to season ribs and wrap in non stick foil. Bake at 350 degrees for 1 1/2 hours. Remove from oven and let cool. Place on bbq grill and brush with sauce of choice. Brown and serve.

  • Remove foil carefully as steam is very hot.
  • Refrigerate ribs until needed.
  • Combine all ingredients for barbecue sauce.
  • Place ribs on grill and brush generously with sauce.
  • Grill until crispy and hot- will only take about 10 minutes.
  • Watch carefully once you add sauce because the sugar will burn quickly.
