SANTA FE BAKED CHICKEN RECIPE
Our Santa Fe baked chicken recipe is easy to make, done in one dish and prepped in 15 minutes! It's the perfect weeknight dinner recipe.

Steps:
- Preheat oven to 375 degrees and spray a 9" x 13" casserole dish with cooking spray. Trim chicken breasts and pat dry with paper towels. Season both sides with salt and pepper then sprinkle with taco seasoning.
- Add black beans, corn kernels, salsa and cilantro into casserole dish and mix until evenly combined. Place seasoned chicken breasts on top of veggies and cover dish with aluminum foil.
- Bake 35-40 minutes until chicken is cooked through then remove from oven and discard aluminum foil. Spoon green chilies over chicken and top with shredded cheese. Return to oven uncovered to melt cheese-approximately 5 minutes.
- Remove from oven, top with reserved chopped cilantro and serve chicken with veggie medley spooned over the top or on the side. Enjoy!

- In a large skillet, saute onion in butter until tender. Add broth and salsa; bring to a boil. Stir in rice and garlic powder. CHICKEN TACO SALAD

- For the chicken: Generously sprinkle both sides of the breasts with the taco seasoning. Heat the oil and butter in a large skillet over medium-high heat. Cook the chicken on both sides until deep golden brown on the outside and done in the middle (or to an internal temperature of 165 degrees F), about 4 minutes per side. Set aside to cool for 5 minutes.
- For the dressing: While the chicken is cooking, pour the ranch dressing into a bowl. Add the salsa and cilantro and stir to combine.
- For the salad: Next, place the ears of corn in the skillet you used to cook the chicken and roll them around so that the flavorful oil/butter mixture coats the corn. Grill on a grill pan or cook in a separate skillet until the corn is still crisp but has color on the outside. Slice off the kernels with a sharp knife and set aside. Dice the chicken into cubes.
- On a platter, layer the shredded lettuce, diced chicken, tomatoes, cheese, corn, avocados, green onions, cilantro and crushed chips. Drizzle the dressing all over the top, saving some to serve on the side if you'd like. Serve the salad in individual bowls.

- In a small bowl, combine beans, corn, and tomato; season to taste with salt and pepper.
- Cover and refrigerate for at least 2 hours or for up to 6 hours.
- In another small bowl, combine barbecue sauce and ranch dressing.

- In a 5-6 quart pot, saute first 4 ingredients in oil over medium heat, until chicken is not pink and vegetables are tender.

- Place chicken breasts in crockpot and sprinkle with taco seasoning, garlic Herb seasoning, chili powder, and cumin. Pour salsa over seasoned chicken breasts, add corn and black beans. Place cubed cream cheese on top evenly. Pour undiluted cheese soup over everything. As crockpot heats up and cream cheese begins to melt, gently stir ingredients to blend soup, vegetables, and salsa. Cook on high for 2 (two) hours. Remove chicken breasts only and shred with two forks. Return shredded chicken to crockpot and gently stir once more to blend all ingredients together. Cook on low for an additional 2 (two) hours. Serve mixture over your favorite tortilla chips or a baked potato.

This is my stand by mexican night dish. It can be heated up by using hot picante sauce or cooled by using mild. i use extra lean ground beef and white corn chips.

- Brown ground beef in skillet, stirring untill no more pink remains.
- Drain fat.
- Add taco seasoning and mix well.
- In small bowl wisk together flour and chicken broth.
- Add to meat mixture and bring to a boil, cooking untill slightly thickened.
- Stir in sour cream and green chilies.
- In lightly greased baking dish (13x9x2) place 1/2 of the chips 1/2 of the beef 1/2 of the picante sauce 1/2 of cheese and 1/2 of onions.
- repeat layers with remaining 1/2 of ingredients, ending with onions.
- Bake at 350 for 25 minutes or until hot and cheese is melted.
- Let stand 5 minutes before serving.
