Our Santa Fe baked chicken recipe is easy to make, done in one dish and prepped in 15 minutes! It's the perfect weeknight dinner recipe.

4 boneless, skinless chicken breasts
salt and pepper
4 tsp taco seasoning
1 15 oz can black beans (drained and rinsed)
2 cups corn kernels (fresh, frozen or canned )
1 1/2 cups salsa (fresh, drained of excess liquid)
1/4 cup cilantro (chopped, plus extra for garnish)
1 cup Mexican cheese blend (shredded )
1 4 oz can green chilies (chopped, (mild, medium or hot))
sour cream (dollop for serving)

Steps:

  • Preheat oven to 375 degrees and spray a 9" x 13" casserole dish with cooking spray. Trim chicken breasts and pat dry with paper towels. Season both sides with salt and pepper then sprinkle with taco seasoning.
  • Add black beans, corn kernels, salsa and cilantro into casserole dish and mix until evenly combined. Place seasoned chicken breasts on top of veggies and cover dish with aluminum foil.
  • Bake 35-40 minutes until chicken is cooked through then remove from oven and discard aluminum foil. Spoon green chilies over chicken and top with shredded cheese. Return to oven uncovered to melt cheese-approximately 5 minutes.
  • Remove from oven, top with reserved chopped cilantro and serve chicken with veggie medley spooned over the top or on the side. Enjoy!

1 large onion, chopped
1 tablespoon butter
1-1/4 cups chicken broth
1 cup salsa
1 cup uncooked long grain rice
1/8 teaspoon garlic powder
4 boneless skinless chicken breast halves (4 ounces each)
3/4 cup shredded cheddar cheese
Chopped fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in butter until tender. Add broth and salsa; bring to a boil. Stir in rice and garlic powder. Place chicken over rice; cover and simmer for 10 minutes. , Turn chicken; cook 10-15 minutes longer or until a thermometer reads 165°. Remove from the heat. 2 boneless, skinless chicken breasts
2 tablespoons taco seasoning (store-bought or your own mix)
1/4 cup vegetable oil
2 tablespoons butter
3/4 cup ranch dressing (bottled is fine)
1/4 cup salsa (as spicy as you'd like)
3 tablespoons finely minced fresh cilantro
2 ears corn, shucked
1 large head or 2 regular heads green leaf lettuce, shredded thin
3 Roma tomatoes, diced
1/2 cup grated pepper-jack cheese
2 avocados, diced
3 green onions, sliced
1/2 cup fresh cilantro leaves
Tortilla chips of your choice (flavored or not), crushed slightly, for topping salad

Steps:

  • For the chicken: Generously sprinkle both sides of the breasts with the taco seasoning. Heat the oil and butter in a large skillet over medium-high heat. Cook the chicken on both sides until deep golden brown on the outside and done in the middle (or to an internal temperature of 165 degrees F), about 4 minutes per side. Set aside to cool for 5 minutes.
  • For the dressing: While the chicken is cooking, pour the ranch dressing into a bowl. Add the salsa and cilantro and stir to combine.
  • For the salad: Next, place the ears of corn in the skillet you used to cook the chicken and roll them around so that the flavorful oil/butter mixture coats the corn. Grill on a grill pan or cook in a separate skillet until the corn is still crisp but has color on the outside. Slice off the kernels with a sharp knife and set aside. Dice the chicken into cubes.
  • On a platter, layer the shredded lettuce, diced chicken, tomatoes, cheese, corn, avocados, green onions, cilantro and crushed chips. Drizzle the dressing all over the top, saving some to serve on the side if you'd like. Serve the salad in individual bowls.

1 tomatoes, seeded and diced
1/2 cup barbecue sauce
1/2 cup ranch dressing
1 1/2 lbs boneless skinless chicken breasts
1 tablespoon olive oil
kosher salt
fresh ground black pepper
8 flour tortillas, warmed (6-8 inch diameter)
2 cups chopped romaine lettuce
1 cup shredded monterey jack pepper cheese

Steps:

  • In a small bowl, combine beans, corn, and tomato; season to taste with salt and pepper.
  • Cover and refrigerate for at least 2 hours or for up to 6 hours.
  • In another small bowl, combine barbecue sauce and ranch dressing.
  • Cover and refrigerate for at least 30 minutes or for up to 6 hours.
  • Coat chicken with oil and season with salt and pepper to taste.
  • Preheat greased grill to med-high.
  • Grill chicken, turning once, until no longer pink inside, 6-8 minutes per side.
  • Transfer chicken to a cutting board and let stand for 6-8 minutes.
  • Cut into bite-size pieces.
  • To build tacos--divide chicken and bean mixture equally among tortillas.
  • Top with lettuce, cheese, and barbecue sauce mixture.
  • Fold tortillas in half.

12 saltine crackers, finely crushed (about 1/2 cup)
2 Tbsp. butter, melted
1 cup TACO BELL® Thick & Chunky Salsa
1 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Heat oven to 425ºF.
  • Dip chicken in egg then in cracker crumbs, turning to evenly coat both sides of each breast with each ingredient.

2 lbs boneless skinless chicken breasts, cut into 1/2 in pieces
2 medium sweet red peppers, diced
4 garlic cloves, minced
2 onions, chopped
1/4 cup olive oil
3 tablespoons chili powder
2 teaspoons cumin
1/4 teaspoon cayenne pepper
1 (28 ounce) can diced tomatoes, undrained
2 (14 1/2 ounce) cans chicken broth
2 (15 1/2 ounce) cans kidney beans, rinsed and drained
1 (12 ounce) jar salsa
1 (10 ounce) package frozen corn
salt and pepper

Steps:

  • In a 5-6 quart pot, saute first 4 ingredients in oil over medium heat, until chicken is not pink and vegetables are tender.
  • Add in chili powder, cumin, and cayenne; stir and cook for 1 minute.
  • Add in the tomatoes and chicken broth; bring mixture to a boil; lower heat and simmer, uncovered, for 15 minutes.
  • Add in beans, salsa, corn, salt and pepper; return mixture to a boil.
  • Lower heat, cover, and simmer for 15 minutes.

1 tablespoon taco seasoning
3/4 teaspoon garlic and herb seasoning or 3/4 teaspoon garlic powder

3/4 cup taco bell thick & chunky salsa (I used mild)
1 (10 3/4 ounce) can campbell's Fiesta nacho cheese soup, undiluted
1 (15 ounce) can whole kernel corn, well drained
1 (15 ounce) can black beans, well rinsed and drained
1 (3 ounce) package Philadelphia Cream Cheese, cubed

Steps:

  • Place chicken breasts in crockpot and sprinkle with taco seasoning, garlic Herb seasoning, chili powder, and cumin. Pour salsa over seasoned chicken breasts, add corn and black beans. Place cubed cream cheese on top evenly. Pour undiluted cheese soup over everything. As crockpot heats up and cream cheese begins to melt, gently stir ingredients to blend soup, vegetables, and salsa. 1 (1 1/4 ounce) package taco seasoning
2 cups chicken broth
1/4 cup all-purpose flour
1 cup sour cream
1 (7 ounce) can chopped green chilies
1 (11 ounce) package tortilla chips
2 cups grated cheddar cheese
1/2 cup sliced green onion, including tops
2 cups picante sauce

Steps:

  • Brown ground beef in skillet, stirring untill no more pink remains.
  • Drain fat.
  • Add taco seasoning and mix well.
  • In small bowl wisk together flour and chicken broth.
  • Add to meat mixture and bring to a boil, cooking untill slightly thickened.
  • Stir in sour cream and green chilies.
