2 cups pineapple chunks
2 Granny Smith apples, cored and cut into cubes
2 unpeeled lemons, thinly sliced
2 unpeeled limes, thinly sliced
1 cup green seedless grapes
1 cup red seedless grapes
1 small unpeeled orange, thinly sliced
1.5 liter red wine, such as cabernet sauvignon, merlot or pinot noir, chilled
1.5 liter dry white wine, such as chardonnay, sauvignon blanc or pinot grigio, chilled
1 cup orange or citrus flavored rum
1 cup orange or citrus flavored vodka
1 cup sugar
Ice, for serving

Steps:

  • Place the fruit in a large vat. Pour in the red wine, white wine, citrus rum and citrus vodka. Next, to add a subtle sweetness, dissolve the sugar in 1 cup water and add it to the mix. Stir well, then cover and refrigerate for several hours, giving the fruit and liquids time to meld. Serve in glasses over ice, and have tongs nearby so guests can help themselves to the fruit.

2 cups sliced fruit, any combination of oranges, lemons, apples, pears, and plums
2 tablespoons sugar
1/2 cup brandy
2 bottles red wine, preferably Burgundy

Steps:

  • Place the fruit, sugar, and brandy in a 2 to 3 quart pitcher and stir to combine. Set in the refrigerator for 6 to 8 hours. Add the wine and stir to combine. Serve over ice.

½ cup brandy
¼ cup lemon juice
⅓ cup frozen lemonade concentrate
⅓ cup orange juice
1 (750 milliliter) bottle dry red wine
½ cup triple sec
1 lemon, sliced into rounds
1 orange, sliced into rounds
1 lime, sliced into rounds
¼ cup white sugar
8 maraschino cherries
2 cups carbonated water

Steps:

  • In a large pitcher or bowl, mix together the brandy, lemon juice, lemonade concentrate, orange juice, red wine, triple sec, and sugar. Float slices of lemon, orange and lime, and maraschino cherries in the mixture. Refrigerate overnight for best flavor. For a fizzy sangria, add club soda just before serving.

1 large orange
1 lemon
2 peaches
1/2 cup sugar (to taste)
4 cups full flavored spanish wine, such as Rioja
ice cube, to serve

Steps:

  • Cut the orange into thin slices, and then cut the slices into wedges, and place in a large pitcher.
  • Cut one long slice of rind from the lemon and add to the oranges.
  • Slice completely around the peaches, cutting down to the pit, and twist the halves in opposite directions until the 2 halves come apart.
  • Remove and discard the pits, slice the peaches and add to the oranges.
  • Add the sugar to the fruit and stir.
  • Pour in the wine and stir until the sugar dissolves.
  • Taste and add more sugar or a squeeze or 2 of lemon juice to taste.
  • Chill for at least an hour.
  • When ready to serve, use a long handled spoon to stir and press the fruit against the side of the pitcher to extract some of the juice.
  • Put the ice into glasses and pour the chilled Sangria over and add some fruit from the pitcher to each glass.

TRADITIONAL SANGRIA

Rafael Mateo, the proprietor of Pata Negra, a Spanish wine bar in the East Village, formulated this sangria that is winelike and very refreshing, with a keen balance of tart and fruity flavors. Unlike many recipes, which specify Rioja made from the tempranillo grape, Mr. Mateo prefers using garnacha from Campo de Borja in central Spain, which he said has backbone without being overly tannic. He lightens the blend by adding rosé, and sweetens it with orange liqueur and orange soda rather than with fruit purée, a common addition, which he dislikes because, he said, it gives the sangria a grainy texture. He experimented with orange juice rather than soda, but found it, too, changed the texture. Finally, he allows the punch to knit together overnight and adds cut fruit only at the end, as a garnish.

  • To serve, fill glasses with ice. Pour 5 ounces sangria into each glass and garnish with diced apple and orange wedges.

2 oranges , chopped
2 pears , chopped
2 lemons , 1 chopped, 1 juiced
200g red berries , chopped (we used strawberries and cherries)
3 tbsp caster sugar
1 tsp cinnamon
ice
750ml bottle light red wine
100ml Spanish brandy
300ml sparkling water

Steps:

  • Put the chopped fruit in a bowl and sprinkle over the sugar and cinnamon, then stir to coat. Cover and leave to macerate in the fridge for at least 1 hr, or ideally overnight.
  • Fill a large jug with ice. Stir the macerated fruit mixture to ensure the sugar is dissolved, then tip into the jug with the wine and brandy. Stir, then top up with the sparkling water and serve.
