LEMON SUGAR COOKIES WITH SANDY'S COLORED SUGAR



Lemon Sugar Cookies with Sandy's Colored Sugar image

1 cup unsalted butter, softened
1 cup sugar
1 lemon, zested and juiced
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
8 to 10 drops each food coloring in 2 different colors

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, beat the butter and sugar on medium-high speed with an electric mixer until fluffy, about 3 minutes. Add the lemon zest and juice and mix well. In a separate medium bowl, combine the flour, baking soda, and salt. Gradually add the flour mixture to butter mixture and mix to combine. Shape into a log and wrap in heavy-duty plastic wrap. Refrigerate until firm, at least 2 hours.
  • Divide the sugar between 2 small resealable plastic bags. Add 8 to 10 drops of 1 color of food coloring to each bag. Shake vigorously to distribute and color the sugar. Put the colored sugar into 2 separate plates.
  • Slice the log into 1/2-inch thick rounds. Dip the cookies on 1 side into the sugar, making 12 of each color. Arrange the cookies on baking sheets, spacing evenly, and bake until lightly browned, about 12 to 15 minutes. Remove from the oven, allow to cool slightly, then remove the cookies from the pans. Cool completely on wire racks before serving.

1 cup margarine, softened
1 cup vegetable oil
1 cup white sugar
1 cup confectioners' sugar, sifted
2 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups chopped pecans
½ cup white sugar for decoration

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the margarine, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, cream of tartar and salt; stir into the creamed mixture. Mix in the pecans. Roll dough into 1 inch balls and roll each ball in remaining white sugar. Place the cookies 2 inches apart onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Remove from cookie sheets to cool on wire racks.

1 cup butter
⅓ cup white sugar
2 teaspoons water
2 teaspoons vanilla extract
2 cups sifted all-purpose flour
1 cup chopped pecans
3 tablespoons confectioners' sugar

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the water and vanilla. Stir in the flour and pecans until well blended. Cover dough and chill for at least four hours.
  • Preheat oven to 325 degrees F (165 degrees C). Shape dough into walnut sized balls or crescents. Place 2 inches apart onto unprepared cookie sheets.
  • Bake for 18 to 20 minutes in the preheated oven, until golden. Roll in confectioners' sugar while still warm.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter or margarine, softened
1 egg
1/4 cup Gold Medal™ all-purpose flour
3/4 cup finely chopped toasted pecans
1 teaspoon vanilla
1/2 teaspoon maple flavor
1/4 cup sugar
Coarse white sparkling sugar, if desired

Steps:

  • Heat oven to 375°F. In large bowl, stir all ingredients except 1/4 cup sugar until dough forms.
  • Roll dough into 1-inch balls; roll balls in 1/4 cup sugar. Place 2 inches apart on ungreased cookie sheet; press each with bottom of glass to flatten slightly.
  • Bake 9 to 11 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Sprinkle with sparkling sugar.

  • Cream sugars with butter and oil with an electric mixer until light and fluffy. Add eggs and vanilla, beat well. In a large bowl; sif flour with soda and cream of tartar. Add flour mix to creamed mixture a 1/2 c at a time and beat well. Refrigerate dough for 15 minutes. Drop by tsp onto ungreased cookie sheets. Bake at 350* until the edges of the cookies are brown. 10-20 min.

3/4 tsp salt
3/4 c oil
2 eggs, unbeaten
1 1/2 tsp baking powder
1/4 tsp nutmeg
1 c sugar
1 tsp vanilla

Steps:

  • 1. Mix and sift flour, salt, powder and nutmeg. Set aside. Combine oil and sugar in a bowl. Add eggs one at a time, beating well after each addition. Add vanilla and all sifted ingredients at once. Make into 3/4 inch balls. Dip into additional sugar. Place sugar side up 3" apart on lightly greased cookie sheets. Press flat with fork like you do for peanut butter cookies. Bake at 375 degrees 10-12 min and remove immediately to cool. Can be frosted or left plain.
