Panko-Crusted Wild Striped Bass with Coconut-Guava Sauce image

3 cups fresh orange juice
1 cup soy sauce
4 sprigs thyme
2 tablespoons garlic, chopped
4 tablespoons fresh ginger, sliced
1/4 onion, diced
2 wild striped bass fillets
2 (8-ounce) cans guava juice
1 (8-ounce) can coconut milk
3 tablespoons brown sugar
Pinch salt
1 habanero pepper, seeded and diced
Salt and pepper
2 cups all-purpose flour
2 cups panko (Japanese bread crumbs)
2 whole eggs, lightly beaten
4 cups canola oil

Steps:

  • Combine all ingredients for the marinade in a non-reactive bowl. Take boneless fillet of wild striped bass and cut into 2 to 3 pieces. Rinse fillets and pat dry. Place pieces into the marinade. Refrigerate for 1 to 2 hours.
  • In a saucepan over medium heat, combine the ingredients for the sauce and let reduce by 1/2 or until it reaches the desired thickness.
  • In a heavy saute pan, heat canola oil to 340 degrees F.
  • Remove the fish from the marinade. pat dry and season with salt and pepper. On a clean plate put flour and on another clean plate, put panko. Dredge fish fillets through flour, then egg, then panko, completely coating each fillet.
  • Place the breaded fish carefully into the hot oil and cook until it achieves a light golden brown color. Remove with a spider or strainer and dry on paper towel.
  • Serve fish on brown paper with the sauce in a small bowl for dipping.

7 tablespoons butter
3/4 cup panko (Japanese breadcrumbs)
2 shallots, minced
3 tablespoons chopped fresh flat-leaf parsley
Zest of 1 lemon
Kosher salt and freshly ground pepper
4 (5 to 6-ounce) halibut fillets
2 tablespoons mayonnaise
1 bunch rainbow chard, washed, stems sliced, and leaves torn

Steps:

  • 1. Heat the oven to 350 degrees F. Melt 4 tablespoons butter in a small pot. Stir in the breadcrumbs, half the shallots, the parsley, lemon zest, and season with salt and pepper.
  • 2. Sprinkle both sides of the halibut fillets with salt and pepper. Spread a thin layer of mayonnaise on top of each fillet, then press the panko mixture on top.
  • 3. Heat the remaining 3 tablespoons butter in a 12-inch skillet. Add the rainbow chard stems and remaining shallots. Cook 2 minutes, then turn off the heat. Fold in the torn chard leaves, 2 tablespoons water, and salt and pepper, to taste. Place the halibut fillets on top of the chard leaves.
  • 4. Transfer the skillet to the oven until the fish is just cooked through, 15 to 20 minutes.

2 cups coconut milk
1 tablespoon fish sauce
1/2 cup clam juice
1/4 white wine
2 kaffir lime leaves
1 tablespoon garlic
2 shallots
1 stalk lemongrass
1 tablespoon fresh ginger
1 ounce green curry paste
1/4 cup brown sugar
1/4 cup lime juice
1/4 cup carrot, small dice
1/4 cup celery, small dice
1/4 cup yellow onion, small dice
1 tablespoon chopped fresh ginger
1 cup basmati rice
3 cups water
1/2 tablespoon turmeric
1/2 cup zucchini squash, julienne
1/2 cup yellow squash, julienne
1/4 cup carrots, julienne
1/2 cup red bell peppers julienne
Oil or butter
1/4 cup cayenne pepper
1/4 cup paprika
1 cup grapeseed oil
4 (6-ounce) sea bass fillets
Grapeseed oil

Steps:

  • 2 cups panko
  • 3 kaffir lime leaves
  • 2 tablespoons dried lemongrass
  • Preheat oven to 350 degrees F.
  • For the Green Curry Sauce:
  • Combine the coconut milk, fish sauce, clam juice, white wine, kaffir lime leaves, garlic, shallots, lemongrass, ginger and green curry paste into a saucepot. Reduce by 1/3 over medium heat. Add brown sugar and lime juice. Strain through chinois.
  • For the Gingered Basmati Rice:
  • Sweat the carrots, celery, yellow onion and fresh ginger in a medium saucepot. Add basmati rice and toast. Add water and turmeric, and bring to a boil then cover. Finish in the preheated oven for 15 to 20 minutes.
  • For the Stir-Fried Vegetables:
  • Heat saute pan on medium-high heat. Saute vegetables in oil or butter until al dente.
  • For the Lemongrass-Panko Crust:
  • Add panko bread crumbs, kaffir lime leaves and dried lemongrass to food processor and pulse until uniform. Sift through china cap to remove any large chunks.
  • For the Chili Oil:
  • Toast cayenne pepper and paprika in a saute pan over medium heat for 3 to 4 minutes. Add grapeseed oil, remove from heat and let steep for about 5 minutes. Strain through coffee filter.
  • For the Sea Bass:
  • Preheat oven to 400 degrees F.
  • Heat a cast iron skillet on med to medium-low. Crust 1 side of the sea bass with the panko mixture. Season the other side of the fish with salt and pepper. Cook the fish, panko side down, in grapeseed oil until golden brown, about 5 to 7 minutes. Flip the fish and finish in the preheated oven until done (about 6 to 7 minutes depending on the thickness of the fish).
  • Serve the fish with the sauce alongside the rice and vegetables.

  • In bowl mix all ingredients together. Let sit in bowl at room temperature for an hour. Grill one side of fish and then flip fish and then apply sauce on top of fish and let it cook until fish is cooked thoroughly.

1 1/2 lbs fish fillets
4 teaspoons Emeril's Original Essence (creole spice)
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup flour
2 large eggs
6 tablespoons milk
1 1/2 cups breadcrumbs (panko or other)

Steps:

  • Heat oil in large skillet over medium heat.
  • Season fish with essence.
  • Salt and pepper.
  • Put flour in shallow dish. Set aside.
  • Add eggs to milk in bowl and whisk to combine. Set aside.
  • Place bread crumbs in 3rd shallow dish.
  • Dredge each fillet in flour, shake off excess, coat in egg wash, press into crumbs coating evenly.
  • Fry fish in hot oil until golden brown; about 2-3 minutes on first side and 1-2 minutes on second side.
