1 teaspoon butter
2 cups all-purpose flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup canola oil
1/4 cup 2% milk
1 jar (28 ounces) prepared mincemeat
1 cup chopped pecans

Steps:

  • Preheat oven to 400°. Line an 8-in. square baking pan with foil; grease foil with butter. In a large bowl, whisk flour, sugar, baking soda and salt. Stir in oil and milk. Reserve 1 cup for topping. Press remaining crumb mixture onto bottom of prepared pan. Spread with mincemeat. Stir pecans into reserved crumb mixture; sprinkle over top. Bake 30-35 minutes or until topping is golden brown., Cool completely in pan on a wire rack. Cut into bars.

1 tablespoon butter, softened
1 ½ cups brown sugar
2 tablespoons molasses
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 tablespoons hot water
¼ cup slivered almonds
¼ cup raisins
1 (9 ounce) package condensed mincemeat, crumbled
1 ½ cups confectioners' sugar
3 tablespoons hot milk
½ teaspoon vanilla extract
½ teaspoon almond extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease two 9x13 inch baking pans.
  • In a large bowl, mix together the butter, brown sugar, molasses and 1 teaspoon vanilla until well blended. Combine the flour, salt, baking soda, cinnamon and cloves; stir into the molasses mixture. Stir in hot water, almonds, raisins and mincemeat. Spread the dough evenly into the bottoms of both pans. It will be thin but the mixture will puff up when baking.
  • Bake for 12 to 15 minutes in the preheated oven, or until firm. Cool in pans on wire racks. In a small bowl, mix together the confectioners' sugar, hot milk, 1/2 teaspoon vanilla and 1/2 teaspoon almond extracts until smooth. Spread over warm bars. Allow to cool before cutting into squares.

1 cup oatmeal
1/4 cup butter, melted
1 (27 ounce) jar mincemeat

Steps:

  • Preheat oven to 400.
  • Grease or spray 13 x 9 pan.
  • Combine cake mix, oatmeal and melted butter in mixing bowl.
  • Reserving 1 cup of mixture, spread remaining mix into prepared pan, gently pressing to form bottom "crust".

1 cup granulated sugar
1/4 cup milk
3 tablespoons butter or margarine, softened
1 egg
1 1/2 cups prepared mincemeat
1/2 cup powdered sugar
1 teaspoon finely shredded orange peel
1 tablespoon orange juice

Steps:

  • Heat oven to 375°F. Grease rectangular pan, 13x9x2 inches.
  • Stir Bisquick, granulated sugar, milk, butter and egg in medium bowl until dough forms.
  • Pat half of the dough in pan, using floured fingers, to within 1/2 inch of edges. Spread mincemeat over dough. Pat out remaining dough to same size on waxed paper. Place paper side up over mincemeat; peel off waxed paper.
  • Bake 25 to 30 minutes or until golden brown. Cool slightly.

1 (15 ounce) can pumpkin (2 cups)
1 (14 ounce) can sweetened condensed milk
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • Preheat oven to 425.
  • Combine flour and sugars; cut in butter until crumbly. Stir in nuts.
  • Reserving 1 1/2 cups crumb mixture, press the rest on the bottom and halfway up sides of a 13x9 inch baking pan.
  • Spoon mincemeat over crust.
  • Combine remaining ingredients except reserved crumb mixture and mix well. Pour over mincemeat. Top with reserved crumb mixture.
  • Bake 15 minutes; reduce oven to 350. Bake 40 minutes longer or until golden brown around the edges.
  • Cool. Cut into squares.

2 ½ cups all-purpose flour
2 ½ cups quick cooking oats
1 ½ cups packed brown sugar
¼ teaspoon baking soda
1 ½ cups butter
2 cups prepared mincemeat pie filling
1 teaspoon orange zest
1 cup confectioners' sugar
¼ teaspoon vanilla extract
1 tablespoon milk

Steps:

  • In large mixing bowl stir together: flour, oats, brown sugar and baking soda. Melt butter or margarine over low heat and stir in until well blended. Set aside 2 cups of this mixture.
  • Distribute remaining oat mixture evenly into an ungreased 15 X 10 X 1 inch baking pan and pat down. Bake this in a 350 degrees F (175 degrees C) oven for 12 minutes.
  • Stir lemon OR orange peel into mincemeat OR fruit-pie filling. Spread filling carefully over the HOT baked crust. Sprinkle the reserved oat mixture over the filling. Pat oat mixture very gently onto filling.
  • Bake for 20 to 25 minutes or until top is golden. Cool pan on rack. Drizzle with icing.:
  • To Make Icing: Mix together 1 cup confectioners' sugar, 1/4 teaspoon vanilla, and 1 to 2 tablespoon milk. Add milk a little at a time to obtain drizzling consistency.

125g softened butter
100g dark brown soft sugar
50g golden caster sugar
½ heaped tsp fine sea salt
1 medium egg
1 tsp vanilla extract
5 tbsp mincemeat (check the label if you're vegetarian)
220g plain flour
½ tsp bicarbonate of soda

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Beat the butter with both types of sugar and the salt. Beat in the egg, vanilla extract and mincemeat. Stir in the flour and bicarbonate of soda, then chill for 20 mins.
  • Scoop tablespoons of the mixture onto two lined baking sheets, leaving a bit of space between each so they can spread. Bake for 10-12 mins, or until the cookies are just firm around the edges but still soft in the middle - they will firm up as they cool. Transfer to a wire rack and leave to cool.

2 cups oats (not instant)
1 cup brown sugar
1 teaspoon baking soda
3/4 cup melted butter (or margarine, but butter is best)
2 cups mincemeat

Steps:

  • Preheat oven to 375F; grease a 13x9 pan and set aside.
  • In a large mixing bowl, combine the flour, oats, sugar and baking soda.
  • Stir in melted butter and mix together until mixture appears crumbly.
  • Firmly pat half the crumb mixture into prepared pan, then cover evenly with mincemeat.
