TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

Steps:
- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.
SALTED TOFFEE BARS

Steps:
- Heat oven to 350°F. Line 15x10x1-inch cookie sheet with sides with foil. In large bowl, stir cookie mix, butter and egg until soft dough forms. Stir in 1/2 cup of the toffee bits. Press dough in bottom of pan. Bake 14 to 16 minutes or until light golden brown. Cool 5 minutes on cooling rack.
- In 2-quart saucepan, heat caramels and cream over medium-low heat, stirring constantly, until caramels are melted, 5 to 10 minutes. Remove from heat. Spread over warm cookie base. Bake 5 minutes. Return to cooling rack. Sprinkle chocolate chips evenly over top. Let stand 3 minutes; spread melted chips evenly over filling. Sprinkle with sea salt and remaining 1/2 cup toffee bits. Refrigerate bars until chocolate is firm, about 15 minutes. Cut into 8 rows by 4 rows. Store at room temperature in airtight container.

SALTINE TOFFEE BARS
A simple yet delicious recipe that will keep your eaters coming back for more as well as asking for the recipe.

Steps:
- Line cookie sheet with tin foil and lay saltines touching in a single layer. (If there is excess room on the cookie sheet, fold up the foil so the crackers stay close together and the butter doesn't seep away from the crackers.)
- Combine sugar and melted butter (the sugar will not dissolve). Evenly distribute mixture, being sure to cover all the crackers with some butter and sugar.
- Bake for 10-15 minutes at 350 degrees. While baking, the butter will start to look frothy and bubbly. Be sure to remove from oven as soon as butter turns a light golden brown.
- Once removed from the oven, push crackers together as they may of moved or overlapped while baking. Immediately sprinkle with peanut butter and chocolate morsels. Let sit a few minutes to melt then use a spatula to spread it over all the crackers.
- Top with pecans (pressing them with your hands into the chocolate will help them stick a little better) then cool in the refrigerator. Break into bite size pieces and store in a closed container.

Steps:
- Preheat oven to 350°F.
- Lightly grease a 9 x 13" baking pan; set aside.
- In a large mixing bowl, mix together the brown sugar and flour.
- Using a pastry cutter or two knives, cut in butter until mixture resembles coarse crumbs.
- Remove 1 cup of mixture and set aside.
- To mixture in large bowl, add baking powder and salt.
- Using a fork, lightly beat in vanilla, milk and egg.
- Continue beating until a smooth batter forms.
- Pour batter into prepared baking pan.
- In a small bowl, combine the chocolate chips and walnuts.
- Fold in the coconut.
- Sprinkle reserved crumb mixture over top of batter in pan.
- Sprinkle with the chocolate chips and walnuts.
- Using a long flat spatula, spread topping evenly over the top of the batter in pan.
- Bake bars for 35 minutes, or until a skewer inserted in center comes out clean.
- Transfer pan to wire rack.
- Cool bars in pan completely before slicing.
- Using a serrated knife, cut into 24 bars.
- Store in airtight container for up to 5 days.
SEA SALTED COFFEE TOFFEE BARS

Steps:
- Preheat oven to 350°F.
- In a mixing bowl, beat together butter, brown sugar and salt until light and fluffy.
- Add flour, 1 cup at a time, stirring between additions. Add instant coffee crystals and blend until well incorporated.
- Pat batter into ungreased 9x13x2-inch baking pan in an even layer.
- Bake until edges are lightly browned and center is puffy, 12 to 15 minutes.
- Meanwhile, in heavy saucepan, stir condensed milk and 2 tablespoons butter over low heat until butter melts. The mixture will thicken and become smooth. Stir in vanilla or rum, remove from heat and let sit until bottom layer is done baking.
- Sprinkle nuts over baked bottom layer and pour hot condensed milk mixture evenly over nuts using a spatula to spread.
- Return to the oven and bake until top is golden and bubbling, 10 to 12 minutes.
- Immediately sprinkle desired amount of sea salt over bubbling toffee top. Cool slightly in pan and cut into bars. Bars can be kept up to one week in an airtight container.
