NEWFOUNDLAND JIGG'S DINNER
A traditional Newfoundland meal, comparable to Corned beef and cabbage. Newfoundland is Canada's easternmost province, and is an island in the Atlantic. Make sure that the split peas are securely tied into a cloth bag (pudding bag), a dish towel or cheesecloth, if they escape you will not have a dinner, you will have pea soup!!

- Cover the corned beef with cold water and soak overnight in the refrigerator.
- Drain the beef and place in a large Dutch oven. Cover with fresh water. Place the yellow peas in a triple layer of cheesecloth and tie securely. Place the bag inside the Dutch oven with the beef. Bring to a boil, then reduce to a simmer and cook for 2 hours.
- After 2 hours, add the chopped cabbage, turnip, and carrots to the pot. Simmer for 25 minutes.
- Add the chopped potatoes and simmer an additional 20 to 25 minutes, or until all of the vegetables are fork tender.
- While the vegetables are cooking, prepare the dumpling dough as follows: Combine the flour, sugar, and baking powder in a bowl, then add the water a little bit at a time to make a pasty dough. You may not need to add all of the water. Divide the dough into 6 balls. Be careful not to over-handle the dough.
- During the last 5 to 10 minutes of simmering the vegetables, place the dough balls on top of the vegetables and cover with a lid. Allow the dumplings to steam in the pot for 7 minutes.
- When the dumplings are cooked through, remove all ingredients from the pot and arrange on a warm serving platter. Remove the cooked peas from the cheesecloth bag and mash with the butter and black pepper. Serve alongside the beef and vegetables.

SALT AND PEPPER RIBS
Deliciously different Salt and Pepper Ribs! Low and slow is the key to cooking these beauties!

Steps:
- Preheat oven to 300 degrees.
- Combine the salt, pepper and garlic powder together in a bowl.
- Place the ribs on a lightly oiled baking sheet.
- Sprinkle the ribs with the salt mixture.
- Bake for at least 2 1/2 hours, until the meat is pulling off of the bone.
- Heat the sesame oil in a skillet over medium heat then add the garlic and onions.
- Cook until the garlic has browned slightly.
- You have two options here:
- Option 1: If you want to brown the green onions for a deeper flavour ( shown in my photos) then take the ribs out and place on top of the stove. Pour/brush the oil and garlic mixture over the ribs, then return to the oven. Cook until the onions are the desired flavour. Remove, sprinkle with a little extra salt and serve.
- Option 2: Remove the ribs and brush/pour the oil and garlic mixture all over them. Serve immediately.
- Place ribs on a serving platter, spooning any leftover garlic oil over the top.
- Serve and enjoy!

Steps:
- Mix ketchup, garlic powder, pepper, brown sugar and vinegar. Adjust to taste. Set aside.
- Pre heat oven to 250.
- Spinkle both sides of riblets with ground sea salt and pepper.
- wrap in a single layer in heavy foil, making sure that all sides and sealed.
- Cook in oven 2.5 - 3 hours.
- Take out of oven and remove foil.
- Pre heat grill to medium.
- Place riblets on grill and grill on both sides until dry, about 2 minutes per side (the sauce will not stick otherwise).
- Slather with BBQ sauce and continue grilling until sauce is think and carmelized.

NIF'S LAST MINUTE RIBS OR PORK RIBLETS
I went to a surprise party tonight. I decided at the last minute to make ribs and they went over really well with everyone! These were very tender and had lots of flavour. The best part? They are incredibly easy to make and are the quickest ribs I have ever made. You can also use regular sized ribs - these were good for an appetizer at the party. Enjoy!

- In a large pot, bring enough water to cover the ribs to a gentle boil. Add salt, pepper, whole garlic cloves and bay leaves to the water. Meanwhile remove the silver skin from the back of the racks and cut rib racks in half. Add ribs to water. Boil for 30 minutes and strain.
- Preheat oven to 350°F.
- Cut rib racks into individual ribs and place in a baking pan lined with tin foil, for easier clean up. Sprinkle ribs with seasoning and toss. ***If you are using a salty seasoning, be careful not to use too much and don't use salt at the end. Cover with foil. Bake for 30 minutes.
- Meanwhile, place a wire rack on a cookie sheet. I lined the sheet with tin foil as well. Place ribs on the rack.
- Broil ribs until they are medium brown. In my oven, they are done after 4 minutes under a high broil setting. If you have time, you can turn them over and broil the other side. Sprinkle with freshly ground sea salt and pepper to taste. Do not add the salt if your seasoning is salty.
- Make sure you taste them! I added more of my dry rub seasoning at this point because they needed a bit more flavour.
SALT AND PEPPER RIBS

- Soak the ribs with clean water for 30 minutes and change the water at least once. This is to remove any dirty parts and raw taste.
- Drain completely and then place all of the marinating ingredients except egg and coating flour at least for 30 minutes or over night.
- Just before cooking, crack an egg and mix with the ribs.
- Coat the ribs with potato flour or starch around 10 to 15 minutes before frying.
- Heat oil until there are fine small bubbles surrounding when insert a chop sticker. Place ribs in and fry for 6-8 minutes over small fire. I recommend frying the ribs for two batches. Strain and remove extra oil.
- Prepare a pan, add 1/2 tablespoon of oil and fry garlic, ginger, green onion and fresh peppers until aromatic.
- Place ribs in and toss with salt and pepper. Serve with extra salt and pepper for option.

- 1. WHAT ARE RIBLETS? Riblets are simply smaller pieces cut from a full rack, while rib tips are meaty chunks from the underside of spare ribs that contain cartilage but no bone. Both are inexpensive and easy to cook. They can be grilled, but we prefer ours pan fried in a cast iron skillet, western style!
- 2. HOW TO COOK RIBLETS. Trim and discard the membrane away from the underside of the riblets. Season with salt and pepper. Heat about 1/4 inch of olive oil in the cast iron skillet over medium heat. Note: There is a meat side and a bone side to the riblet. Place the BONE SIDE down in the hot oil (the meat side will be facing up) and let it cook until it looks like the meat is starting to separate from the bone. You will only turn the riblet once. Even though you are cooking the side with no meat, the riblet is cooking. Then turn the riblet so the meat side is down in the oil, and cook until the riblet is well browned and done to the bone. This will take about ten minutes for each side. Remove the riblets as they brown onto paper towels to drain.
