This isthe best Pico de Gallo (Salsa Fresca) you will ever have! Made with fresh tomatoes, onion, chiles, cilantro and lots of lime juice plus a secret ingredient.

4 medium roma tomatoes (diced)
⅓ of a medium white or yellow onion (diced)
1 to 2 jalapeños or serrano pepper (Or one of each) (remove the seeds, finely diced)
¼ cup minced cilantro
2 Tbsp tomato sauce
2 Tbsp fresh lime Juice (1 large lime)
1 tsp kosher salt or more to taste
1 tsp fresh groun pepper or more to taste

Steps:

  • Cut the tomatoes, onions, jalapeños (or preferred pepper) in evenly sized small chunks. Add to a large bowl
  • Mince the cilantro and add to the bowl.
  • Add two tablespoons of tomato sauce (optional) and lime juice. Season with salt & pepper according to taste.
  • Stir to combine and serve immediately. Or store in an airtight container and refrigerate until ready to serve.
  • Eat within 3 days for the best taste & freshness.

2 containers of cherub tomatoes - 10.5 oz each
1/2 white onion
1 5″ jalapeno - seeded and deribbed
2 garlic cloves peeled
1 chipotle from the can (See above)
1/3 c cilantro

Steps:

  • Dump the tomatoes into your food processor. (If you want this chunkier, feel free to chop with a knife.) Using on/off button, process tomatoes until coarsely, but not too roughly chopped. Empty into a good sized bowl. If there is a lot of liquid, drain some off so your salsa isn't too watery. But if you like it that way-no worries!
  • Place onion, jalapeno, garlic cloves, chipotle and cilantro in food processor. Chop until mixture is evenly chopped, but do not over process. Add to tomatoes. Stir well. Season with salt if desired.

My ex's mom had the best hand-chopped salsa fresca I have ever tasted back in college. Over the years, I have tweaked it to something my friends and family rave about. The trick for this salsa is marinating the onions and jalapenos in lime juice for about 5 minutes before adding the tomatoes and cilantro. There are two tricks to this recipe: 1. Hand-chop everything. It takes a while, but it is worth it. 2. The marinating is what makes this salsa special. Hope you enjoy.

1 pound fresh tomatoes, diced small ((grape, cherry, beefsteak, and heirloom are all good; avoid roma tomatoes))
1 ripe avocado, diced small
1/2 white onion, diced small
1/2 lime, juiced
1 jalapeño pepper (optional)
1 handful fresh cilantro, leaves and tender stems, finely chopped
1/4 teaspoon kosher salt, plus more to taste
pinch sugar (optional)

Steps:

  • If using, prepare the jalapeño pepper by removing the stem and slicing it open lengthwise. Remove the seeds and white membrane, and finely dice the pepper. You may only want to use half of the jalapeño depending on your desired level of heat.
  • In a medium-sized mixing bowl, combine all of the ingredients and stir. Adjust seasoning. Let rest 15 to 30 minutes.
  • Drain the tomato liquid that has collected in bottom of the bowl. Serve at room temperature with fresh tortilla chips, or as a side dish to Mexican dishes such as quesadillas, fajitas, burritos, and so on.

  • In a food processor, pulse tomatoes, onion, jalapeño, and minced garlic until evenly chopped.
