These vegan oatmeal chocolate chip cookies are everything you want from a cookie: crispy on the outside, soft on the inside and loaded with chocolate-y goodness. Best of all, these one-bowl cookies are ready in just 30 minutes!

1 1/2 cups (120 grams) quick oats* (- $0.25)
1/2 cup (63 grams) all-purpose flour (- $0.04)
1/2 cup (100 grams) white sugar** (- $0.43)
1 tsp baking powder (- $0.01)
1/4 tsp salt (- $0.01)
2/3 cup (130 grams) vegan chocolate chips (- $2.00)
1/3 cup (40 grams) chopped walnuts ((optional) - $0.92)
¼ cup (60 ml) neutral-flavored oil (- $0.20)
6 tablespoons plant-based milk (- $0.03)

Steps:

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the oats, flour, sugar, baking powder, salt, chocolate chips and walnuts.
  • When the oven is heated, add the oil and plant-based milk to the dry ingredients and mix well.
  • Form the dough into balls. You can use a cookie or ice cream scoop, I just get in there with my hands and press the dough together into balls. You can make them as big or small as you like. I generally get about 10 cookies from this recipe.
  • Place the balls on the prepared baking sheet and gently flatten them with the palm of your hand.
  • Bake for 20 minutes, or until they no longer appear wet on top and the bottoms are beginning to turn golden brown.
  • Remove from the oven and let cool on the pan.

2 tablespoons canola oil
1 teaspoon pure vanilla extract
1 cup whole wheat flour
1 cup rolled oats
½ teaspoon baking soda

½ cup vegan semi-sweet chocolate chips
½ cup walnut pieces

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Oil a large baking sheet.
  • Stir sugar, soy milk, peanut butter, canola oil, and vanilla extract together with a whisk in a large bowl until completely smooth.
  • Mix flour, oats, baking soda, and salt in a separate bowl; add to the peanut butter mixture and stir to combine. Fold chocolate chips and walnut pieces into the flour mixture.
  • Drop your batter by large spoonfuls onto prepared baking sheet.
  • Bake cookies in preheated oven until browned along the edges, about 10 minutes. Cool cookies on sheet for 10 minutes before removing to a cooling rack to cool completely.

1/4 cup brown sugar
1 tablespoon white sugar
1/4 teaspoon vanilla

1/4 teaspoon salt

Steps:

  • Cream together margarine and sugar in a bowl, then mix in vanilla.
  • Add flour and salt, mix well.
  • Mix together baking soda and water, and then add to the batter.
  • Stir in the oats and chocolate chips.

2 tablespoons canola oil
1 cup sugar
1/3 cup soymilk
1 teaspoon pure vanilla extract
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats
1/2 cup non-dairy chocolate chips
1/2 cup chopped macadamia nuts or 1/2 cup walnuts

Steps:

  • Preheat oven to 425°F Oil a large baking sheet; set aside.
  • Whisk together first five ingredients until very smooth. Add remaining ingredients, and stir to combine (be sure to mix in thoroughly the baking soda and salt--you may want to stir these into the flour first).
  • Drop batter by large spoonfuls onto prepared baking sheet. Bake for about 8 minutes, or until tops just begin to crack. Remove sheet from oven, and wait 10 minutes before transferring cookies to a plate or wire rack.

  • In a medium bowl, add all the wet ingredients, and use a beater to cream the vegan butter and sugar together. Dump the wet ingredients into the dry, and mix. I find different vegan butter brands have different moisture contents, so if you find the dough is a little dry, add up to 1 Tablespoon of water until the dough holds together. When it just comes together stir in the chocolate chips. Feel free to snack on cookie dough, it can be eaten raw!
  • Take two tablespoons of cookie dough and roll into a ball and place on the prepared baking sheet. Repeat until you have used up all the cookie dough. Bake 14 to 18 minutes, the cookies will have spread but look almost raw, they should be golden on the on underside. Let cool on the pan to let the cookies set.
