1 pound tomatillos, husked
½ cup finely chopped onion
1 teaspoon minced garlic
1 serrano chile peppers, minced
2 tablespoons chopped cilantro
1 tablespoon chopped fresh oregano
½ teaspoon ground cumin
1 ½ teaspoons salt, or to taste
2 cups water

Steps:

  • Place tomatillos, onion, garlic, and chile pepper into a saucepan. Season with cilantro, oregano, cumin, and salt; pour in water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the tomatillos are soft, 10 to 15 minutes.
  • Using a blender, carefully puree the tomatillos and water in batches until smooth.

I was looking for a tomatillo salsa recipe for canning & couldn't find one that suited our Taste so, I came up this this one. Everyone that has tried it likes it. We have a lot of tomatillos in the garden, so I wanted a way to use them.

6 cups tomatillos, chopped
3 cups onions, chopped
3 jalapeno peppers, chopped
6 garlic cloves, chopped
1/2 cup cilantro, chopped
1/2 cup lemon juice
2 teaspoons cumin
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • Combine all ingredients in a large pot & stir frequently over high heat until mixture boils.
  • Reduce heat.
  • Simmer 20 minutes.
  • Ladle into pint jars.
  • Leave 1/2 inch head space.
  • Adjust lids, process in a hot water bath for 20 minutes.
  • Be sure to wear gloves when chopping peppers as they will burn fingers.
  • Also, have good ventilation when cooking--I have found this to be true when cooking ALL salsa.
  • I use a food processor for chopping.
  • If you want it hotter use more jalapeños & you can use more or less cumin, as cumin makes it hot, BUT gives a good flavor.

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

1 small onion, chopped

This is a standard Mexican salsa that you find everywhere in Mexico. Tomatillos have a natural acidic and fresh note that gives them a little sparkle. (They keep that sparkle even after they're cooked.) Tomatillo salsa is a natural with the flavors of grilled meat, but it is a great do-ahead, have-on-hand salsa to freshen up anything off the grill or out of a skillet.

Number Of Ingredients 7

1 pound fresh tomatillos
1 large Spanish onion (about 12 ounces), cut into large chunks (about 3 cups)
3 cloves garlic
1/2 packed cup coarsely chopped cilantro leaves
1/2 jalapeno (seeds and all if you like heat)
1/2 lime, juiced
Kosher or fine sea salt

Steps:

  • Pull the husks from the tomatillos and wash them under cool water until they no longer feel sticky. Cut them into quarters and put them into the work bowl of a food processor. Add the onion and garlic and process until smooth. Add the cilantro, jalapeno and lime juice and process until the jalapeno is finely chopped.
  • Scrape the mixture into a small saucepan. Season lightly with salt and bring to a boil over medium heat. Cook, stirring occasionally, until most of the liquid is boiled off and the salsa looks relish-y, about 15 minutes. Cool before using. The sauce can be refrigerated for up to 1 week. If refrigerated, you may want to add a little salt and/or lime juice to the salsa before serving.

1 1/2 teaspoons salt (to taste)
1 small white onion, coarsely chopped
2 -3 serrano chili peppers, stems removed, cut into chunks
1/2 lb tomatillo, cut into quarters (6 - 8 average-sized tomatillos)
1/4-1/2 cup cilantro
1 avocado, ripe

Steps:

  • In a food processor or blender, process the garlic and salt to a paste.
  • Scrape down the sides if necessary with a rubber spatula; add the onion, chiles, tomatillos, and cilantro.
  • Process with an on-off motion to make a slight chunky puree.
  • Scoop out the avocado flesh into the machine and process to the desired smoothness.
  • Serve within 1 hour (or preferably at once).

½ pound fresh tomatillos, husks removed (about 6 large tomatillos)
1-2 canned chiles chipotles en adobo
½ small white onion, finely chopped
½ teaspoon dried Mexican oregano
½ teaspoon salt, or to taste
Pinch of sugar, or to taste

Steps:

  • Place the tomatillos in a small saucepan, cover with water, and bring to a boil. Simmer, uncovered, until they change color, about 5 minutes. Drain, reserving ½ cup of the liquid. 2. Place the chipotle chiles (with the sauce that clings to them) in a blender or food processor fitted with the steel blade with the tomatillos, reserved ½ cup liquid, white onion, and oregano. Process until smoothly puréed, about 1 minute. Taste the sauce; season with salt and a pinch or two of sugar.
  • Salsa be stored, tightly covered, in the refrigerator for 2 to 3 days.

10 dried chiles de árbol, seeds and ribs removed
3 medium tomatillos, husks removed, rinsed
3 garlic cloves, smashed
Kosher salt
1 teaspoon fresh lime juice

Steps:

  • Toast chiles in a medium skillet over medium heat, turning often, until starting to brown lightly in spots (don't char), about 3 minutes. Transfer to a plate.
  • Place chiles, tomatillos, garlic, and 2 1/2 cups water in a medium saucepan and season with salt. Cover, bring to a simmer, and cook until tomatillos turn olive green and burst, 5-8 minutes. Remove from heat and let sit (still covered) 5 minutes.
  • Using a slotted spoon, transfer chiles, tomatillos, and garlic to a blender or food processor; add ½ cup cooking liquid from saucepan and purée until smooth. Add lime juice and season with salt. Let cool before serving.
  • Do Ahead
  • Salsa can be made 3 days ahead. Cover and chill.

  • Put the tomatillos in a pan of boiling water, cook for 3 mins or until the skins split, remove with a slotted spoon and cool for 5-10 mins. Blitz in a food processor with the coriander, onion, chilli, garlic and lime. Tip into a bowl, stir in the avocado and season to taste.

1 1/2 lb tomatillos washed and cut in halves
1 large vidalia onion or white onion cut in half
1/2 c fresh cilantro leaves
4/5 Tbsp fresh key lime or regular lime juice
1/4 tsp sugar
2 large jalapeno peppers stemmed, roasted and chopped
1 tsp salt and 1/2 tsp pepper
1/4 tsp ground cumin
1/2 tsp garlic powder

Steps:

  • 1. Remove papery husk from the tomatillos and wash well under cool water. Cut them in half and keep the cut side down on a foil lined baking sheet. Put the the two stemmed rinsed jalapenos cut in halves as well seed side down (cut length wise) next to the tomatillos. Cut vidalia onion in half and palce cut side down next to the jalapenos and tomatillos Broil for 5 to 7 minutes to lightly blacken the skins of the veggies. You are looking for a light char. Watch that they do char real bad.
  • 2. Next Place the tomatillos, onions, jalapenos, lime juice, cilantro, sugar, & cum,in the food processor and pulse till the ingredients are finely chopped. Add salt and pepper & galic powder to season. Place in refrigerator and serve cold with tortilla chips or on top of grilled meats. Enjoy
  • 3. If you do not like the taste of lime you can reduce the tablespoons of lime juice to two or three. I will post my picture tomorrow of my tomatillo salasa, My camera died and I am re-charging it tonight.
