Salmon and zucchini have always been a great pairing, but have you tried stuffing zucchini with salmon? Try it and love it with this healthy recipe that offers plenty of veggies with filling salmon and cheese.

4 medium zucchini (about 8 oz. each)
0.333 cup finely chopped green onions
0.25 cup roasted red sweet pepper, drained and chopped
0.25 cup light mayonnaise
2 tablespoon snipped fresh parsley
1 teaspoon dried Italian seasoning, crushed
3 2.5 ounce pouches lemon-pepper or plain skinless, boneless pink salmon
0.5 cup panko bread crumbs
0.5 cup finely shredded Gruyere or Parmesan cheese (2 oz.)
Lemon wedges

Steps:

  • Preheat broiler. Cut each zucchini in half lengthwise; if desired, trim ends. Using a small spoon, scoop out and discard pulp, leaving 1/4-inch-thick shells. Place zucchini shells, cut sides up, in a shallow baking pan. Broil 4 inches from the heat 4 to 5 minutes or until edges of zucchini start to brown.
  • Meanwhile, in a bowl stir together the next five ingredients (through Italian seasoning). Add salmon and bread crumbs. Stir gently to combine.
  • Spoon salmon mixture into broiled zucchini halves. Sprinkle with cheese. Broil about 3 minutes or until cheese is melted and golden. Serve with lemon wedges.

The risotto is delicious stuffed in either peppers or squash so keep that in mind if one looks better than the other at the market. Also, the zucchini can be mixed with small firm yellow squash rather than red peppers.

4 cups chicken stock
1 teaspoon orange zest
1 teaspoon lemon zest
Generous pinch saffron threads
2 medium zucchini
2 red bell peppers, halved lengthwise and seeded
4 tablespoons EVOO, plus more for drizzling
Salt and freshly ground pepper
4 cloves garlic, finely chopped
1 medium onion, finely chopped
1 1/2 cups Arborio rice
1/2 cup dry white wine
1 cup grated Parmigiano-Reggiano
2 tablespoons butter
Juice of 1/2 lemon
Juice of 1/2 orange
1/2 cup panko or homemade breadcrumbs
1/2 cup finely chopped fresh flat-leaf parsley, or a combination of parsley and fresh mint

Steps:

  • Combine the chicken stock, 2 cups water, the orange and lemon zests and the saffron in a pot, and bring to a low simmer.
  • Halve the zucchini lengthwise and gently scrape out the center flesh and seeds. Chop the center flesh and seeds and reserve. Halve each zucchini again crosswise. Arrange the zucchini and bell peppers cut-side up in a baking dish. Drizzle with EVOO and season with salt and pepper.
  • Heat 2 tablespoons EVOO in a round-bottomed risotto pot or pan over medium to medium-high heat. Add the garlic and onions and cook, stirring, until softened, 2 to 3 minutes. Add the chopped zucchini and season with salt and pepper. Cook, stirring often, until lightly browned, 2 to 3 more minutes. Stir in the rice, then add the wine and cook until evaporated, about 1 minute. Add the stock mixture a few ladles at a time, stirring vigorously after each addition and allowing the liquid to mostly evaporate before adding more. The rice will take about 18 minutes to cook to al dente. In the last minute or so of cooking, stir in 1/2 cup cheese, the butter and the lemon and orange juices.
  • Scoop the risotto into the vegetables.
  • Preheat the oven to 425 degrees F.
  • Combine the remaining 2 tablespoons EVOO and 1/2 cup cheese with the breadcrumbs. Sprinkle over the tops of the risotto filling. Cover with foil and bake for 35 minutes. Uncover and bake until the tops are browned, 10 to 15 more minutes. Garnish with the parsley.
  • Cook's Note: If you are not serving the dish immediately, fill the vegetables with the risotto and let cool (do not bake). Cover and store in the refrigerator. When ready to serve, bake as directed.

3 tablespoons butter
2 medium zucchini, cut into 3/8x1-inch sticks
3 cups chicken stock (approximately)
1 large onion, chopped
3/4 cup arborio rice
salt & freshly ground black pepper, to taste
2/3 cup freshly grated parmesan cheese (preferably imported)

Steps:

  • Melt 1 T. butter in heavy medium saucepan over medium saucepan over medium-high heat. Add zucchini, and cook until beginning to soften, stirring frequently, about 3 minutes. Transfer to bowl; reserve saucepan (do not clean).
  • Bring 3 cups broth to simmer in small saucepan. Reduce heat to lwo and keep warm.
  • Melt remaining 2 T. butter in reserved medium saucepan over medium-low heat. Add onion and cook until tender, stirring occasionally, about 6 minutes. Add rice and stir until opaque, about 2 minutes. Add 1/2 cup broth. Adjust heat so liquid simmers slowly and cook rice until broth is absorbed, stirring occasionally. Continue adding broth, 1/2 cup at a time, until rice is just tender and creamy, stirring occasionally, about 25 minutes.
  • Season with salt and pepper. Add zucchini and stir until heated through. Mix in cheese.

Being from the North West, I think it's almost a requirement to like salmon which I certainly do. This is one of my favorite recipes for salmon, very easy to make.

1 (5 lb) salmon
1/2 cup flour
8 slices moist crumbed bread
1/4 cup butter
1 chopped sweet onion
3 tablespoons chopped fresh parsley
1/2 lb bacon (about 8 pieces)
1/2 lemon

Steps:

  • Preheat oven to 325°F.
  • Dredge the salmon in flour, using more as needed to ensure even coverage.
  • In a medium mixing bowl, combine crumbed bread, butter, onions, and the parsley and mix evenly.
  • Stuff the cavity of the salmon with bread mixture, then close with toothpicks.
  • In a baking dish large enough for the salmon to rest flat, lay half the bacon evenly on the bottom.
  • Place the salmon on top of the bacon, and then place remaining bacon evenly over the salmon.
  • Squeeze lemon juice evenly over the salmon.
  • Bake 1 hour to 1 1/2 hour, depending on size of salmon (5 lb about 1 hour and fifteen minutes).
  • Remove from oven and take out toothpicks.
  • Cut salmon crosswise into about 2 inch pieces.

1 medium zucchini
6 large fresh mushrooms, finely chopped
1 green onion, finely chopped
1 tablespoon butter or 1/2 cup margarine
1/2 cup white wine or 1/2 cup chicken broth
1/8 teaspoon salt
1 dash white pepper
2 teaspoons grated parmesan cheese

Steps:

  • Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Chop pulp; set shells aside. In a nonstick skillet, saute the zucchini pulp, mushrooms and onion in butter for 3-4 minutes or until tender. Add wine or broth. Reduce heat; simmer, uncovered, for 10-12 minutes or until liquid has evaporated. Stir in salt and pepper.
  • Place zucchini shells in a saucepan and cover with water; bring to a boil. Cook for 2 minutes; drain. Fill shells with mushroom mixture. Sprinkle with cheese. Broil 3-4 inches from the heat for 3-4 minutes or until lightly browned.

Being able to bake risotto is a dream come true, since who has time anymore to stand over the stove and constantly stir it? Not me, at least not most days.

2 tablespoons extra virgin olive oil
1 onion, finely chopped
200 g arborio rice
375 ml chicken stock
400 g chopped tomatoes
2 (185 g) cans tuna
2 cups finely sliced zucchini
1/2 cup finely grated parmesan cheese
12 fresh basil leaves

Steps:

  • Pre-heat the oven to 200 C or about 375 F.
  • Heat the olive oil in a large pan over a medium heat.
  • Lightly fry the onion for about 5 minutes until translucent.
  • Add the rice and stir for another minute.
  • Add the stock to the rice with the tomatoes.
  • Bring to a simmering point and then stir in the tuna and zucchini.
  • Season with black pepper and salt and then put in an ovenproof dish and bake for 30 minutes or until the rice is cooked.
  • Scatter shredded basil leaves over the top and the freshly grated parmesan just before serving.

A great low calorie/low fat recipe. I created this recipe by significantly modifying Tish's stuffed zucchini recipe (#17260) to create a much healthier version. This is a fun recipe because you can add many different ingredients and still get great results! I've added corn, prosciutto....the possibilities are endless!

6 zucchini
1 medium tomatoes, Diced
1 medium onion, Diced
1 teaspoon garlic, minced
1 tablespoon olive oil
3/4 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese, grated

Steps:

  • Boil Zucchini for 10 minutes.
  • Remove from water, cool, cut in half length wise and scoop out pulp. Chop pulp and set aside.
  • Saute garlic, tomato, and onion in oil until onion is soft.
  • Add breadcrumbs and pulp and continue to saute for additional 2 - 3 minutes.
  • Add mixture to zucchini shells and bake on top rack of 350 degree oven for 20 minutes.
  • Sprinkle with parmesan cheese and bake for an additional 5 minutes on top rack, or until cheese is melted and stuffing is slightly brown.
