1/2 CUP FLOUR
1-1/2 TEASPOONS CINNAMON
1/4 KOSHER SALT
4 tablespoons (1/2 stick) unsalted butter,at room temperature
6 ounces bittersweet chocolate,chopped
3 tablespoons slice blanched almonds

Steps:

  • preheat oven 350 grease and flour 8x8x2 square pan in bowl with electric mixer,cream butter and the sugar together on high speed for 3 minutes until light and fluffy. scrape down the bowl with a rubber spatula. With mixer on low, beat in the egg,vanilla,banana and sour cream and mix until combined. Don't worry it may look curdled. In another bowl,sift together the flour,baking powder,baking soda and salt. With the mixer on low,slowly add the dry ingredients to the wet ones. Scrape into prepared pan and smooth the top. For the streusel,combine the brown sugar,flour,cinnamon,salt and butter in medium bowl and pinch the ingredients together with fingers until the mixture makes crumbles. Add the chocolate and combine. Distribute the streusel evenly over the batter,sprinkle with almonds on top. bake for 40 to 45 minutes,until a cake tester inserted in the center comes out clean. cool in pan.

1 teaspoon vanilla
2 cups flour

3/4 cup sour milk (put 1 tbsp. of vinegar in 3/4 measuring cup, fill with skim milk)

Steps:

  • Preheat oven to 350 degrees F.
  • Cream margarine with sugar and eggs.
  • Mix in banana and vanilla.
  • Mix flour with remaining dry ingredients.
  • Add flour mixture to margarine mixture in 3 parts, alternately with sour milk.
  • Begin and end with flour.
  • Spread in 2 greased 8" cake pans.
  • Bake in oven about 40 minutes.
  • When cool, frost generously with chocolate butter frosting.

1/2 c unsalted butter, (1 stick)
3/4 c granulated sugar
1 egg
1 tsp vanilla extract
1/4 c sour cream
1 1/2 c mashed bananas *see note, about 4 to 5 ripe bananas
1 1/2 c all-purpose flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp kosher salt
3/4 c brown sugar
1/2 c all-purpose flour
1 1/2 tsp ground cinnamon
1/4 tsp kosher salt
1/4 c unsalted butter, softened and cubed
6 oz of chocolate chips **see note
2 tbsp to 3 shaved almonds

Steps:

  • Preheat the oven to 350°F. Grease a 9-inch pie pan or 8-inch baking pan with baking spray. If you're going to be removing the cake from the pan, fit a long piece of parchment paper in the pan, with some of the parchment paper hanging off of the edges of the pan.
  • Create the cake by creaming the butter and sugar together until light and fluffy; about 2 minutes. Add in the egg, vanilla, and sour cream on low speed. Add the mashed bananas and mix just until combined; cake may look lumpy and curdled - thats perfectly fine.
  • Sift the all-purpose flour, baking powder, baking soda, and salt together before adding to the wet ingredients. Mix until everything has been incorporated. Pour the batter into your prepared pan and use a spatula to even the batter out in the pan.
  • To create the streusel topping, whisk the sugar, flour, cinnamon and salt together to combine. Drop in the butter and use your fingers to rub the butter into the dry ingredients and create a crumble. Stir in the chocolate chips before evenly distributing this mixture all over the top of the cake. Garnish with some shaved almonds all over the top.
  • Bake the cake for 45 to 50 minutes on a center rack in your oven, or until a toothpick inserted in the center comes out with little to no crumbs. Let the cake rest in the pan until it's just warm. Store in an airtight container at room temperature for up to 3 days.

100ml sunflower oil, plus extra to grease
175g caster sugar
175g self-raising flour
½ tsp bicarbonate of soda
4 tbsp cocoa powder
100g chocolate chips or chunks
175g very ripe bananas
3 medium eggs, 2 separated
50ml milk
100g milk chocolate
100ml soured cream
handful dried banana chips, roughly chopped

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the sugar, flour, bicarb, cocoa and chocolate in a large bowl.
  • Mash the bananas in a bowl and stir in the whole egg plus 2 yolks, followed by the oil and milk. Beat the egg whites until stiff. Quickly stir the wet banana mixture into the dry ingredients, stir in a quarter of the egg whites to loosen the mixture, then gently fold in the rest. Gently scrape into the tin and bake for 1 hr 10-15 mins, or until a skewer inserted comes out clean.
  • Cool in the tin on a wire rack. To make the icing, melt the chocolate and soured cream together in a heatproof bowl over a pan of barely simmering water. Chill in the fridge until spreadable. Remove cake from tin, roughly swirl icing over and scatter with the banana chips.

2 eggs
1 cup boiling water
1 teaspoon vanilla sugar
2 bananas

Steps:

  • Preheat the oven to 350°F.
  • Grease 2 bread loaf tins (holding about 6 cups each).
  • Put the dry ingredients in the food processor.
  • Add eggs, water, and bananas.
  • Process for about 15 seconds making sure all is well mixed.
  • Pour the mixture in the 2 loaf pans and bake for 30 minutes.
  • When done, an inserted skewer should come out clean.
  • If you don't have a food processor:.
  • Mash the bananas.
  • Put the bananas and the rest of the ingredients in a bowl and stir until blended.

250g golden caster sugar
250g self-raising flour
140g pecan , roughly chopped
1 tbsp butter
2 eggs , plus 2 egg whites
3 large ripe bananas , or 4 small, mashed
150ml sunflower oil
100ml milk
1 tsp cinnamon
1 tsp baking powder

Steps:

  • Heat the oven to 180C/fan 160C/gas 4, and line the base and sides of a deep 20cm (8 inch) loose-bottomed cake tin with baking parchment. For the crumble topping stir together 2 tbsp each of the sugar, flour and chopped pecans, then add the butter, cut into a few pieces, and rub together until you have sticky crumbs. Set aside.
  • Break up the whole eggs with a fork, then mix with the mashed banana, oil and milk until all the wet ingredients are well combined. In a separate, large bowl tip in the remaining sugar, flour and pecans, and briefly stir with the cinnamon and baking powder. Whisk the egg whites until just stiff. To combine, tip the oily banana mixture into the bowl of dry ingredients and quickly stir in until you have a smooth, lump-free mix. Finally using a large metal spoon or spatula gently fold in the egg whites, then carefully pour the mixture into the prepared tin. Scatter over the crumble topping and bake for 1 hr, until a skewer stuck in to the middle comes out clean. Check the cake with 15 mins to go, if the surface is browning too quickly cover with another piece of baking parchment.
  • Once the cake is ready leave it in its tin for 5 minutes, then finish cooling on a wire rack.

250 g butter
2 cups sugar
4 eggs
4 mashed bananas (medium in size)
2 teaspoons bicarbonate of soda
1/2 cup boiling milk
2 teaspoons baking powder
2 cups plain flour
2 tablespoons cocoa
1 tablespoon melted butter
1 tablespoon cocoa
icing sugar

Steps:

  • Cream butter, sugar and eggs.
  • Add in the mashed bananas and mix well.
  • Dissolve the bicarb soda in the milk and add to the creamed mixture.
  • Add sifted flour, baking powder and cocoa.
  • Add to prepared cake tins.
  • (The mixture makes two good-sized cakes).
  • Place in a 180oc oven for about 50 minutes.
  • When cold decorate with icing.
  • Icing: Mix all the ingredients together to form a thick consistency.

  • In a medium bowl, toss the flour, cinnamon, baking soda, baking powder, and salt together. Set aside.
  • Using a handheld or stand mixer with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Scrape down the sides and the bottom of the bowl as needed. Switch the mixer to medium speed and beat in the sugar until combined. Beat in the egg and vanilla extract, scraping down the sides and bottom of the bowl as needed. Add the mashed banana and yogurt and turn the mixer on high and beat until creamy, about 1 minute. Turn the mixer off and pour the dry ingredients into the wet ingredients. Turn the mixer on low and slowly beat until combined. Do not overmix.
  • Make the streusel by combining all of the streusel ingredients into a small bowl. Layer half of the batter into the prepared baking pan. Top with half of the streusel. Repeat with the rest of the batter and streusel. Bake for 40-50 minutes, covering the cake with aluminum foil after 25 minutes to prevent the edges from browning too quickly. Bake until the center is baked through, mine took 45 minutes exactly. Test doneness with a toothpick; if it comes out clean, the cake is done.
