¼ cup yogurt
2 tablespoons spicy dijon
1 tablespoon fresh dill, chopped
2 tablespoons fresh chives, chopped
1 ½ teaspoons honey
16 oz fresh skinless salmon
½ red onion, minced
1 tablespoon fresh dill, chopped
1 tablespoon prepared horseradish, optional
½ teaspoon honey
1 ½ teaspoons sea salt
½ teaspoon pepper

Steps:

  • In a small bowl, combine yogurt, spicy dijon, dill, chives, and honey. Set aside.
  • Cut salmon into ½ inch (1¼ cm) cubes and transfer to a food processor.
  • Pulse 5 times.
  • Add onion, dill, horseradish, honey, salt, and pepper and pulse a few more times to combine.
  • Form mixture into 4 patties.
  • Drizzle small amount of olive oil into frying pan and heat pan to medium-high.
  • Cook patties for 3-4 minutes until browned. Flip and cook another 3-4 minutes until browned.
  • Serve on your favorite multi-grain bread with yogurt dill sauce.

These are a little like crab cakes, but they're made with fresh salmon and grilled. The secret to juicy (not pasty!) salmon burgers is to chop the salmon coarsely with a knife.

2 ½ pounds salmon filet, skin and pin bones removed
2 eggs, beaten
⅔ cup finely chopped parsley
¼ cup finely chopped green onions
2 tablespoons fresh lemon juice
½ cup plain dried bread crumbs
1 tablespoon seafood seasoning (such as Old Bay®)
½ teaspoon salt
½ teaspoon black pepper
½ cup plain yogurt
2 tablespoons light mayonnaise
2 tablespoons finely chopped parsley
2 tablespoons finely chopped green onion
1 tablespoon fresh lemon juice
⅛ teaspoon salt
⅛ teaspoon black pepper
2 tablespoons olive oil
8 brioche buns, split and toasted
2 cups fresh arugula

Steps:

  • Chop salmon into 1/8- to 1/4-inch pieces. Transfer to a bowl with 2 eggs, 2/3 cup parsley, 1/4 cup green onions, 2 tablespoons lemon juice, bread crumbs, seafood seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper; mix together with your hands. Divide into 8 equal portions and pat into 3 1/2-inch patties (1/2 inch thick). Chill, covered, at least 30 minutes or up to 4 hours.
  • Stir together yogurt, mayonnaise, 2 tablespoons parsley, 2 tablespoons green onion, 1 tablespoon lemon juice, 1/8 teaspoon salt, and 1/8 teaspoon pepper in a small bowl.
  • Preheat an outdoor grill to medium heat (325 degrees F to 375 degrees F).
  • Brush patties with oil. Oil grate. Grill patties, turning carefully, until cooked through and a thermometer inserted in center of each patty registers 160 degrees F, 2 to 3 minutes per side. Serve on buns with sauce and arugula.

4 (6-ounce) skin-on salmon fillets, 3/4- to 1-inch thick, preferably wild-caught, thawed if frozen (see Chef's Note)
1 tablespoon kosher salt
1 tablespoon extra-virgin olive oil
1 lemon
1 cup (260 grams) whole milk yogurt (not Greek-style)
1/2 cup (23 grams) chopped fresh dill fronds
2 teaspoons stone-ground mustard
1 teaspoon prepared horseradish
3 grinds black pepper
2 tablespoons neutral oil, such as safflower or canola

Steps:

  • Place the salmon on a wire rack set in a rimmed baking sheet. Rub the fillets with 2 teaspoons of the salt, then refrigerate for 45 minutes. Meanwhile, set your immersion circulator bath for 124 degrees F (51 degrees C).
  • Pat the salmon dry with paper towels, then divide between two gallon-size vacuum-seal or high-quality freezer zip-top bags. Add 1 1/2 teaspoons of the olive oil to each bag, then gently rub the fish to coat. Use a peeler to harvest eight strips of lemon peel and place two strips, pith-side up, on top of each fillet. Halve and juice the lemon; set the juice aside to use in the sauce. If using vacuum-seal bags, use the "gentle" or "moist" setting to seal the bags.
  • Transfer the fillet bags to the water bath. If using zip-top bags, let the salmon sink, forcing the air out of the bag via displacement. Right before the mouth of the bag goes into the water, seal the bag. Leave the salmon to cook for 45 minutes. (If one of the bags floats, carefully reopen and try the sink-and-seal method again.)
  • While the salmon cooks, make the sauce: In a medium bowl, combine the yogurt, dill, mustard, horseradish, and pepper. Stir in the remaining teaspoon of salt and 1 tablespoon of the lemon juice. Stir well, then season to taste with additional salt, pepper, and lemon juice, if desired. Set aside until ready to serve.
  • When the salmon is finished, remove it from the water bath. Open the bags and very carefully remove the fish to a paper towel-lined sheet pan. Pat the fish as dry as possible with additional paper towels. Brush the skin side lightly with some of the neutral oil.
  • Heat a 10-inch cast-iron skillet over high heat for 3 minutes. Add 2 teaspoons of the neutral oil and swirl the pan to coat. When the oil starts to smoke, add two of the salmon fillets, skin-side down. Brush the flesh side lightly with additional oil. Cook until the skin is browned and crisp, about 1 minute. Carefully flip with a narrow metal spatula or "fish turner" and cook on the second side just until just brown, about 30 seconds. Carefully transfer to a serving platter and repeat with the remaining oil and fillets. Serve with the dill-yogurt sauce.

1 lb skinless salmon fillet (frozen is fine)
1 tablespoon prepared white horseradish
1/2 teaspoon lemon zest (to taste)
1 tablespoon fresh lemon juice
1 large egg
3 scallions, thinly sliced (to taste)
1 tablespoon of plain dried breadcrumbs
4 large crusty or wheat rolls
salt and pepper
1 tablespoon chopped dill (fresh is best, but dried is fine)
1/2 cup plain low-fat yogurt
1 tablespoon prepared white horseradish

Steps:

  • Lightly cook salmon, after thawing if frozen. An easy way is to poach in very hot but not boiling water for about 4-5 minutes. Do not cover salmon with water, only allowing water to be about half way up the fillets. Set aside.
  • Put egg in bowl, lightly beat. Mix in 1 tbsp horseradish, lemon zest, lemon juice, scallions, breadcrumbs, tsp of salt and 1/8 tsp pepper. Mix evenly.
  • In another bowl, break up salmon into small pieces/flakes.
  • Pour egg mixture from step two on to of salmon, and mix until salmon is thoroughly covered with mixture.
  • Cover glass or similar dish with foil (saves on cleanup!). Make four similarly-sized balls of this salmon mixture using your hands and space evenly on the dish.
  • Press each ball into a patty of about 3.5in in diameter and 1 inch thickness.
  • Cover the dish and the salmon patties and place in fridge for at least 30 minutes. This helps the patties maintain their shape.
  • While patties are in fridge, mix yogurt, dill, salt, pepper and 1 tbsp horseradish (to taste) in a small bowl to make sauce. Cover and refrigerate. The longer this sauce is in the fridge, the stronger the dill flavor.
  • Remove patties from refrigerator.
  • Heat a pan or skillet to medium to high heat. Pour a small amount of olive oil in the skillet, and when hot place patty or patties (can do one one or more at a time depending on your comfort level) in pan.
  • Let sizzle until brown on one side, and then flip. If you made the patties well and refrigerated them, flipping should be easy.
  • When brown on both sides, place on bun of your choice, toasted or prepared however you like (I like to brush bun with olive oil, parmesan cheese and hot pepper before toasting in convection oven).
  • Cover with yogurt dill sauce, and add lettuce, tomatoes, etc. Serve immediately.

16 ounces of leftover salmon or 16 ounces canned salmon
2 cups loosely packed soft breadcrumbs
1/3 cup chives or 1/3 cup shallot
1/4 cup milk
2 eggs, beaten
2 tablespoons finely chopped parsley or 2 teaspoons dried parsley
2 tablespoons lemon juice
1/8 teaspoon finely ground black pepper
1/4 teaspoon dill weed
3/4 cup cracker crumb (I use Ritz crackers)
4 tablespoons butter or 4 tablespoons margarine
1/4 cup mayonnaise
1/4 cup sour cream or 1/4 cup plain yogurt
1/2 teaspoon dill weed
1 1/2 teaspoons lemon juice

Steps:

  • Make the dill sauce first by combining the mayonnaise, sour cream, dill weed and lemon juice in a small bowl, refrigerate until ready to serve.
  • In a large bowl flake the salmon into fine flakes, combine with soft bread crumbs, onion of choice, milk, eggs, parsley, lemon juice, pepper, and dill weed.
  • Shape into 8 patties about 3/4-inch thick (I use a hamburger patty mold).
  • Dip patties into cracker crumbs to coat.
  • Melt butter or margarine in a large skillet.
  • Pan fry patties until golden brown on both sides.
  • Serve with Dill Sauce.
  • OPTIONAL: Serve with lemon wedges to squeeze over patties.

  • Finely dice half of the salmon into pieces about ¼-inch in size. Cut the remainder of the salmon roughly into chunks and place them in a food processor. Pulse until a paste forms.
