This is a simple and healthy dish. The sauce is optional, but if you like a light vinegar-y sauce, it does add a little something to the dish. Otherwise some sort of cream sauce would probably be nice.

1/4 cup fresh parsley leaves, packed
1 tablespoon breadcrumbs (plain or Italian flavored)
1/2 teaspoon dried dill weed
1 tablespoon lemon juice
1/2 teaspoon garlic, minced
1/4 teaspoon lemon pepper
2 tablespoons white wine
1 ounce fat-free cream cheese (or reduced fat, or regular)
1 tablespoon parmesan cheese, fresh grated
3 ounces crabmeat or 3 ounces imitation crabmeat
2 (6 ounce) boneless skinless salmon fillets, thawed
4 sheets phyllo dough, thawed
cooking spray or olive oil
3 tablespoons white wine
1/4 teaspoon dill weed, dried
1/2 teaspoon cornstarch
2 teaspoons honey mustard
1 teaspoon butter
white pepper, to taste

Steps:

  • Preheat oven to 350F and lightly oil (or use cooking spray) a glass baking dish.
  • Place parsley, bread crumbs, 1/2 tsp dill weed, lemon juice, garlic, lemon pepper, and 2 Tbsp white wine in a mini food processor or chopper; process until parsley is finely chopped and the other ingredients are well combined.
  • Add in cream cheese and process again until well mixed.
  • Add parmesan and crab and pulse a couple of times just to lightly mix everything together and to break up the crab a bit (don't pulverize the crab).
  • Lay out one sheet of phyllo and spray with cooking spray or lightly brush with olive oil.
  • Layer a second sheet on top and spray again.
  • Spoon half of the crab mixture into the middle of the phyllo, and lay one salmon filet on top.
  • Wrap and fold the dough over the fish, and place fold side down in the baking dish.
  • Spray the top of the packet with cooking spray.
  • Repeat with the remaining phyllo, fish, and crab mixture.
  • Bake for approximately 30 minutes, until the fish is cooked and the phyllo has begun to brown.
  • When there are just a few minutes of baking time left, combine all the sauce ingredients in a small saucepan with a wire whisk.
  • Cook over medium-low heat while whisking continuously, and remove from heat as soon as it comes to a boil.
  • Spoon sauce over the packets and serve.

4 6- to 7-ounce skin-on salmon fillets
1/2 cup low-fat mayonnaise
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons finely chopped fresh chives, plus more for garnish
Kosher salt and freshly ground white pepper

Steps:

  • Preheat the oven to 375˚. Line a baking sheet with foil and lightly coat with cooking spray. Lay the salmon skin-side down on top. Set aside.
  • Combine the mayonnaise, mustard, honey, chives and a pinch each of salt and white pepper in a medium bowl and stir to thoroughly combine. Remove half of the sauce to a separate bowl and set aside for serving. Season the salmon with salt and white pepper and spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet.
  • Roast just until the fish is opaque in the center, about 7 minutes. Switch to the broiler setting. Broil the fish until browning in spots, 6 to 8 minutes. (Keep your eye on it to avoid burning.) Garnish with chives and serve with the reserved sauce.

2 salmon fillets, with skin
0.5 (6 1/2 ounce) package crabmeat, chopped coarse
1 -2 shallot, chopped coarse
1/4 cup extra virgin olive oil
1 1/2-2 1/2 tablespoons butter
1/4 teaspoon Old Bay Seasoning
1/2 cup milk (not canned milk) or 1/2 cup whipping cream (not canned milk)
1/4 cup dry white wine
flour or cornstarch, for thickening

Steps:

  • Clean and pat dry salmon filets- set aside.
  • Drain chopped crab meat- set aside.
  • Use your favourite pan which is large enough to accommodate all of the ingredients, when finished.
  • Heat olive oil and butter in pan- medium heat (you don't want to burn the liquid).
  • Clarify coarsely chopped shallots; remove from pan and set aside.
  • To the pan, add coarsely chopped crab meat; fast-fry until slightly brown; remove from pan and set aside.
  • At this point, you may need more oil or butter-- you be the judge.
  • Be sure your stove burner is set medium, to medium-low-- olive oil and butter heat through at low temperature.
  • Add salmon filets, skin side down, to the pan, and cover.
  • Allow filets to cook, skin side down, until the flesh is pink- approximately 10 minutes.
  • Carefully turn the filets over, and allow to cook until the topside is nicely browned- approximately 5 minutes.
  • Remove salmon filets from pan and place on a plate (skin side up) to keep warm-- carefully peel back, remove and discard skin-- cover filets, to keep warm.
  • Prepare the Creamy, White Wine, Crab-Meat Sauce Add flour or corn starch to pan-- whisking constantly-- until all browning juices are absorbed Add 1/2 the quantity of milk, slowly-- whisking constantly-- When mixture is thickened, add balance of milk-- whisking constantly When completely blended, and smooth add crab meat and shallots Mix constantly, (with a mixing spoon) during this cooking process; you want the mixture to be well blended.
  • Add Old Bay Seasoning and mix well-- Add white wine when crab meat mixture is completely blended and well thickened. Mix well to ensure a good blend. Turn off burner and cover pan while you prepare the salmon filets for serving.
  • To serve, place salmon filets on two preheated dinner plates-- Divide crab meat mixture and sauce evenly between the two servings and spoon over Salmon Fillets.
  • Serve with any kind of rice; orzo; baked potato; or just a mixed green salad with an olive oil/ balsamic vinaigrette-- crusty Italian bread or French baguette.

1 (1.5 pound) skinless center-cut salmon fillet, cut into 4 pieces
1 cup milk
¼ cup fine bread crumbs
2 tablespoons grated Parmesan cheese
1 egg
¼ cup butter, melted
1 tablespoon prepared yellow mustard
1 tablespoon honey

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a baking sheet with cooking spray.
  • Place the salmon fillets in a baking dish; pour the milk over the fillets. Allow the salmon to soak in the milk 10 to 15 minutes.
  • Stir the bread crumbs and Parmesan cheese together in a wide, deep bowl. Beat the egg in a separate bowl until frothy. Remove the salmon fillets from the milk; shake the excess milk off the fish.
