SALAD OF SHREDDED GREENS AND SMOKED SALMON (CHIFFONNADE DE SAUMON)

Salad of Shredded Greens and Smoked Salmon (Chiffonnade de Saumon) image

DURING the last year or so, chiffonnades - greens and vegetables cut into thin slivers - have become increasingly popular, as salads appear more often on menus. At Auberge des Templiers, in Beziers, in the Languedoc region, a chiffonnade of watercress and raw mushrooms was paired with tiny marinated red mullet and monkfish. This recipe comes from Christiane Massia of L'Aquitaine. The dressing can be made a day in advance, then refrigerated, but prepare the rest of the ingredients just before serving time.

HOME SMOKED SALMON WITH GREEN SALAD AND APPLE VINAIGRETTE

Home Smoked Salmon with Green Salad and Apple Vinaigrette image

Categories     appetizer

Time P1DT45m

Yield 2 servings

Number Of Ingredients 23

3 cups hot water
1 cup packed brown sugar
1 cup white sugar
4 tablespoons coarse or kosher salt
Pinch grated lemon zest
2 (4-ounce) skin-on salmon fillets
1 to 2 cups hickory or alder wood chips, for smoking
1/2 cup water
Olive oil, for garnish
1 cup apple juice
1 teaspoon Dijon mustard
Freshly ground black pepper
Pinch coarse or kosher salt
Dash apple cider vinegar
3 tablespoons canola oil
4 to 6 frisee lettuce sprigs
2 large radishes, thinly sliced
1 small yellow beet, peeled and thinly sliced
Handful baby green beans, blanched
Handful baby arugula leaves
Handful fresh celery leaves
1/3 cup croutons, toasted and slightly crushed
Zest of 1/2 lemon, for garnish

Steps:

  • To make the salmon: In a medium bowl or container, combine the hot water, brown sugar, white sugar, salt and lemon zest. Add the salmon, skin side up, to the brine, pressing it down to submerge. Cover with plastic wrap, and refrigerate overnight.
  • Remove the salmon from the brine, and discard the liquid. Rinse the fillet under cold running water briefly to remove the excess salt. Place the salmon, skin side down, onto a rack. Let it stand until the top is dry to the touch, for about 1 hour. Do not pat dry.
  • To prepare your wok smoker: Lay 2 layers of foil in the bottom of a wok if you want to protect the pan from getting charred. Add 2 handfuls of wood chips to the wok and place it over high heat. Add the 1/2 cup water.
  • Position the bamboo steamer over top of the chips, and set the salmon fillets inside.
  • Cover the wok with a lid or aluminum foil, and let the salmon smoke for about 20 to 30 minutes, or until its flesh is firm to the touch, and its edges are brown, crustier and caramelized.
  • Remove the salmon from the steamer and transfer to a plate. Drizzle the smoked salmon with olive oil for garnish, and serve it alongside the salad.
  • To make the vinaigrette: Pour the apple juice into a small pot, then boil it on high to reduce the liquid by half.
  • Into a bowl, add the mustard and grind over some black pepper.
  • Add a nice pinch of coarse salt, then add a dash of the apple cider vinegar. Whisk in your reduced apple juice along with the canola oil. Taste for seasonings and adjust if necessary.
  • To make the salad: Toss the frisee, radishes, beets, green beans, arugula, and celery leaves into a bowl with just enough vinaigrette to barely moisten the leaves.
  • Partially crush your crunchy croutons by placing them into a bowl, then crunching them with the bottom of a second bowl. Then add them to the vegetables.
  • Grate a little lemon zest over the salad with a grind of black pepper. Give everything a final toss and plate.

Time 30m

Number Of Ingredients 10

1 1/2 cups frozen shelled edamame
1 teaspoon finely grated lime zest, plus 2 tablespoons lime juice
1 tablespoon honey
6 teaspoons soy sauce
1 tablespoon plus 1/4 teaspoon toasted sesame oil
3/4 pound center-cut salmon fillet, skin removed
5 teaspoons grated peeled fresh ginger (from a 3-inch piece)
1/4 head napa cabbage, cored and thinly sliced (4 cups)
1/2 head red cabbage, cored and thinly sliced (4 cups)
1 small bunch scallions, thinly sliced (3/4 cup)

Steps:

  • Cook edamame according to package instructions; drain. Heat broiler, with rack in top position. In a small bowl, stir together lime zest, honey, and 2 teaspoons soy sauce. Brush a foil-lined rimmed baking sheet with 1/4 teaspoon sesame oil. Add salmon; brush with honey glaze. Broil until salmon is browned and opaque throughout, 6 minutes. Let cool slightly. Meanwhile, in a large bowl, whisk together lime juice, ginger, 4 teaspoons soy sauce, and 1 tablespoon sesame oil. Add cabbages, edamame, and scallions and toss to coat. Flake salmon into salad and toss very gently to combine.

SMOKED SALMON CHOPPED SALAD

Smoked Salmon Chopped Salad image

Found this recipe online, from a 1999 BH&G magazine. Sounds like it has potential, so I'm posting it here to keep track of it. I may post some changes once I've actually made it. I'm guessing the smoked salmon in the recipe refers to hot-smoked salmon like alder-smoked salmon, not cold-smoked like lox or nova.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 13

2 tablespoons olive oil
2 teaspoons lemon zest
2 tablespoons lemon juice
1/2 teaspoon sugar
1/4 teaspoon salt
3 dashes bottled hot pepper sauce (to taste)
3/4 cup flaked smoked salmon
1/4 cup thinly sliced green onion
1/2 cup chopped yellow sweet pepper
1 1/3 cups chopped seeded tomatoes
1/4 cup chopped red onion
1 medium cucumber, coarsely chopped (about 2 cups)
2 teaspoons small capers, drained

Steps:

  • To make dressing: combine olive oil, lemon zest, lemon juice, sugar, salt, and pepper sauce in a jar. Allow to sit at room temperature for 30 minutes before using. Shake well before use.
  • Spray four 6-ounce cups or ramekins with nonstick spray.
  • Equally divide and layer ingredients in each cup in the following order: salmon, green onion, yellow pepper, tomatoes, onion, and cucumber.
  • Cover tops with plastic wrap and firmly press mixture into cups with a can slightly smaller than diameter of cup to press ingredients together.
  • Turn salads out onto individual plates lined with lettuce leaves or other greens (if desired). Carefully remove cups.
  • Sprinkle salads with capers. Drizzle dressing over salads and serve.

SMOKED SALMON SALAD

Smoked Salmon Salad image

I bought some smoked salmon, not the lox style cured fish, but a section of the fish that had been smoked as one piece. After eating some of it plain, I decided to turn the rest of it into salmon salad and it was wonderful. Since salmon is so good for you, this might become a staple in my diet. NOTE: Be sure to use salmon that has been cooked with heat in the oven, on a grill or skillet...then cooled before flaking.
