STUFFING BALLS

Stuffing Balls image

This is an heirloom recipe made by many members of my family. It can be made ahead of the holidays and the balls frozen. One less job at the end. We always formed the stuffing into balls so they were easy to serve individually, easy to grab a cold stuffing ball as leftovers. My Grandma made extra to freeze and use for stuffed chicken breasts later. Grandma always said to try and get a little bit (a speck) of poultry seasoning on each piece of bread. If you like to stuff a bird with it, just place the stuffing balls in the cavity loosely. Unsure of yield. Times do not allow for day of bread getting stale. I always mix mine in a large roasting pan.

Time 1h

Yield 1 batch

Number Of Ingredients 13

2 loaves white bread
2 eggs
1 cup milk
1 cup water
1/4 cup butter
2 stalks celery, chopped
1 large onion, chopped
1 small green pepper, chopped
salt, to taste
pepper, to taste
1/4 cup fresh parsley, chopped
2 teaspoons ground sage
1 1/2-2 teaspoons poultry seasoning

Steps:

  • Open the loaves of bread and allow the bread to get stale for a day.
  • Tear the bread into 1-1/2" pieces including the crusts.
  • Beat the eggs with the milk and water; sparingly, drizzle this mixture over the bread and mix it in just to moisten.
  • Saute the celery, onions, and green pepper in the butter until translucent. Salt and pepper to taste.
  • Add the warm celery and butter mixture to the bread.
  • Add the parsley and sprinkle in a little rubbed sage.
  • Cover lightly with poultry seasoning.
  • Gently toss with your hands.
  • Gently push the stuffing mixture into the corner of your mixing pan and allow to sit for 30 minutes to absorb the liquid in the bread.
  • Form the stuffing into small balls similar to a baseball.
  • You may freeze the balls at this point by arranging on a baking sheet and flash freezing.
  • When frozen, place stuffing balls in the bread bag wrappers.
  • When ready to bake, place balls in a 9 x 13 inch pan with about 1/4" hot broth in the bottom of the pan.
  • You can bake them frozen or defrosted, adjust your time accordingly.
  • Bake at 350 degrees Fahrenheit for about 30 minutes, basting a few times until browned.

DEEP-FRIED STUFFING

Deep-Fried Stuffing image

If you thought leftover Thanksgiving stuffing was boring, this dish will change your mind! Any kind of stuffing (sausage, oyster, corn bread, or any variety of boxed) can be used. Heat up some gravy and bring on the cranberry sauce.

Categories     Appetizers and Snacks

Time 45m

Yield 6

Number Of Ingredients 10

½ cup all-purpose flour
1 teaspoon poultry seasoning
salt and ground black pepper to taste
2 eggs
2 tablespoons milk
1 cup seasoned bread crumbs
½ cup grated Parmesan cheese
1 teaspoon ground black pepper
2 ½ cups prepared stuffing
1 quart oil for frying, or as needed

Steps:

  • Combine flour, poultry seasoning, salt, and black pepper to taste in a shallow bowl. Beat eggs and milk together in a second shallow bowl until smooth. Mix bread crumbs, Parmesan cheese, and 1 teaspoon black pepper together in a third shallow bowl.
  • Scoop stuffing, about 2 tablespoons per serving, and roll into a ball using your hands, forming about 12 balls. Dredge each ball through the flour mixture, shaking off any excess. Transfer each ball to the egg mixture and evenly coat. Roll each ball in the bread crumbs mixture until evenly coated. Set each stuffing ball on a plate and allow to sit for the coating to stick to the stuffing.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Carefully lower 4 to 5 stuffing balls into the hot oil and fry until golden brown on all sides, about 4 minutes; transfer to a paper towel-lined plate using a slotted spoon. Repeat with the remaining stuffing balls.

TURKEY AND STUFFING SOUP

Turkey and Stuffing Soup image

This is one of my very favorite "holiday leftover" recipes. It's really great because you can basically add any leftover vegetables to the soup. Again, from my Rachel Ray collection.

Provided by Hippie2MARS

Categories     One Dish Meal

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 11

4 -6 cups prepared stuffing
1 tablespoon oil
2 medium carrots, sliced thin
2 celery ribs, sliced thin
1 onion, diced
1 bay leaf
2 quarts chicken stock
1 1/2 lbs light and dark cooked turkey, diced
1/4 cup flat leaf parsley, chopped
1 cup green peas or 1 cup other leftover mixed vegetables
salt and pepper

Steps:

  • Preheat oven to 350 degrees and transfer stuffing into a small baking dish.
  • Place dish in oven and reheat 12 to 15 minutes, until warmed through.
  • Heat a pot over moderate heat and add extra-virgin olive oil.
  • Add carrots, celery and onion and lightly season vegetables with salt and pepper.
  • Add bay leaf and stock and bring liquid to a boil by raising heat.
  • Add turkey and reduce heat to simmer.
  • Simmer until any raw vegetables are cooked until tender, about 10 minutes.
  • Stir in the parsley, and peas, if using.

  • Ladle soup around stuffing ball.

  • Preheat the oven to 400ºF. Place the dry stuffing mix in a large bowl, add the hot water, and stir until no more water pools on the bottom of the bowl. Let the stuffing sit for another 5 minutes to further soften. (Less water is added to the stuffing mix than is listed on the box in order to leave room for the absorption of moisture from the turkey and egg.)
  • Add the ground turkey and beaten egg to the bowl with the partially hydrated stuffing mix. Combine these ingredients by hand until they are evenly mixed. Form the mixture into 20 meatballs, slightly larger than ping pong balls, or about 3 Tbsp each.
  • Line a baking sheet with parchment paper, then place the meatballs on the parchment. Bake the meatballs for 20 minutes in the preheated oven.

I also keep ice cubes of “drippings” from roasts, etc. to create a good soup stock, broth or gravy. Nuke a couple of these and it will make your stuffing oh so much more delicious! Dice (or tear) bread ends and measure about 4 1/2 cups. Melt butter in a large frying pan (or pot). Add onion and whatever else you’ve decided to add.
