1/2 pound (2 sticks) unsalted butter, at room temperature
1 1/2 cups sugar
1 teaspoon pure vanilla extract
2 extra-large eggs, at room temperature
2 cups (18 ounces) creamy peanut butter (recommended: Skippy)
3 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons kosher salt
1 1/2 cups (18 ounces) raspberry jam or other jam
2/3 cups salted peanuts, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 9 by 13 by 2-inch cake pan. Line it with parchment paper, then grease and flour the pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes. With the mixer on low speed, add the vanilla, eggs, and peanut butter and mix until all ingredients are combined.
  • In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.
  • Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if all the jam isn't covered; it will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares.

75g butter , plus a little extra for greasing
50g peanut butter
1 egg
25g cocoa powder
50g plain flour
100g sugar
few tsp of jam

Steps:

  • Add the butter and peanut butter to a microwave-safe bowl and cook on High for 30 secs to melt. Remove from the microwave and stir thoroughly. Allow to cool slightly then add the egg and stir to combine. Grease with butter and line a second microwaveable round dish (about 15cm wide) with cling film. Tip the peanut butter mix into the lined dish then sieve in the cocoa powder and flour and tip in the sugar. Mix gently to form a thick, sticky paste. Smooth the top of the mixture with the back of a large spoon.
  • Using a teaspoon, make crater-holes in the top of the brownie mixture and fill each generously with jam as it will melt and bubble down when cooked. Pop in the microwave for 3-4 mins on High. Remove and leave to cool for 15 mins (it will carry on cooking as it cools) then enjoy!

A childhood favourite combination, these bars are healthy and made from simple ingredients! This makes around 18 small bars depending on how big you cut them.

1 ½ cups large flake oats
½ cup flour ((whole wheat, all-purpose or GF))
¾ cup natural smooth peanut butter
¼ cup melted butter ((or vegan butter or coconut oil))
½ cup maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla
¼ teaspoon salt
3/4-1 cup lower sugar fruit spread or chia jam ((I used Bonne Maman))

Steps:

  • Preheat the oven to 350F and line an 8x8" baking pan with parchment paper.
  • In a food processor combine the oats, flour, peanut butter, melted butter, maple syrup, cinnamon, vanilla and salt. Process until it is fine and sticks together when pressed between your fingers.
  • Press ¾ of the mixture into the bottom of the prepared pan, spread evenly with the Bonne Maman Strawberry Spread, and crumble the remaining oat mixture on top.
  • Bake for 30 minutes and cool completely before cutting into bars and serving. These keep refrigerated or in the freezer for a quick snack!

1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, melted
1 cup (200g) light brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup (125g) smooth peanut butter
3/4 cup (245g) seedless raspberry jam

Steps:

  • Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with foil or parchment paper, and set aside.
  • Whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate large bowl, whisk together the butter and sugar until combined. Add the egg, vanilla, and peanut butter, and mix until combined.
  • Add the dry ingredients and mix until completely combined.
  • Press about 2/3 of the dough into the bottom of the prepared pan. Spread the jam evenly on top. Crumble the remaining dough evenly over the jam.
  • Bake for 30 - 35 minutes or until golden brown on top. Allow to cool completely in the pan on a wire rack before cutting into bars.

1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick oats
1 cup sugar
3/4 cup margarine
1 -2 cup jam (depends on how much you like)

Steps:

  • Place dry ingredients in a bowl.
  • Stir in oats and sugar.
  • Cut in margarine until crumbly.
  • Pat 2/3 of crumbs in a 11 by 17 inch pan.
  • Spread with jam and top with remaining crumbs.
  • Bake at 375° for about 45 minutes (or until light brown around edges).
  • Cool and cut into bars.

1/3 cup peanut butter
1/3 cup firmly packed light brown sugar
1/3 cup sugar
1 egg
1 2/3 cups all-purpose flour
2/3 cup strawberry jam or 2/3 cup preserves (not jelly)

Steps:

  • Combine margarine, peanut butter, sugars and egg.
  • Then add flour and beat until crumbly.
  • Reserve one cup of the crumbs.
  • Press remaining crumbs into an 8" square glass dish.
  • Place on inverted plate in microwave.
  • Cook at medium 6 1/2 minutes or until base looks dry.
  • Spread jam to base within 1/2" of edge.
  • Sprinkle with reserved crumbs.
  • Cook on medium 6-7 minutes.
  • Cool.
  • Makes 16 bars.

1/2 cup packed brown sugar
1/2 cup butter, melted
1/4 cup corn syrup
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine oats and brown sugar. Stir in butter and corn syrup. Press into a greased 9-in. square microwave-safe dish. , Microwave, uncovered, on high for 1-1/2 minutes. Rotate a half turn; microwave 1-1/2 minutes longer. Sprinkle with chocolate chips.
