8 sprigs fresh thyme
Zest of 3 lemons, removed with a vegetable peeler
3 large rinds Parmesan cheese
1 bay leaf
4 tablespoons olive oil
1 shallot, chopped
1 1/2 cups Arborio rice
1 1/2 teaspoons kosher salt
1 cup dry white wine
1/4 cup chopped chives
1 cup freshly grated Parmesan cheese, optional

Steps:

  • For the lemon Parmesan broth: Add the thyme, lemon zest, Parmesan rinds and bay leaf to a medium sauce pan. Cover the mixture with 5 cups water. Place over medium heat and bring to a simmer. Simmer for 20 minutes, skimming the surface as needed. Strain, discarding the solids and reserving the liquid.
  • For the risotto: Heat a Dutch oven over medium-high heat. Add 2 tablespoons of the olive oil and the shallot and cook until the shallot is soft and fragrant, about 2 minutes. Add the rice and toast, stirring often to coat the rice in the flavored oil, for 2 more minutes. Season with the salt, deglaze with the white wine and cook, stirring often, until the wine is almost entirely absorbed. Add 1 cup of the lemon Parmesan broth and cook, stirring constantly, until the liquid is nearly absorbed. Continue to cook, adding more broth by the cup and stirring often, until the rice is just tender and the mixture is creamy, about 25 minutes total. Finish with the remaining 2 tablespoons olive oil, the chives and grated Parmesan, if using.

1.2 litres/2 pints chicken stock
2 tbsp butter
1 tbsp olive oil
1 onion , very finely chopped
350g arborio risotto rice
125ml Fino sherry or dry white wine
½ tsp saffron
50g parmesan , or vegetarian alternative, grated
1 egg yolk
rocket salad, to serve (optional)

Steps:

  • Heat the stock in a pan over a very low heat - have a ladle at the ready. Melt the butter and olive oil in a high-sided, non-stick frying pan. Add the onion and a large pinch of salt, then cook, stirring, for 5 mins until softened and fragrant but not colouring. Tip in the rice and coat in the oil and butter, cooking for a few mins until beginning to toast. Pour in the wine and cook, stirring, until it's absorbed. Add the saffron and begin to add the stock, a ladle at a time, stirring continually. Add more stock as it's absorbed. After 25-30 mins, all the stock should be absorbed and the rice should be creamy and al dente.
  • Add the Parmesan and stir until melted. Turn off the heat and stir in the egg yolk. Season and serve with a peppery rocket salad, if you like.

3/4 pound shrimp, peeled, deveined, and coarsely chopped
1/2 teaspoon kosher salt
1 tbsp fish sauce
1/2 tbsp Tapioca starch or corn starch
2 tbsps canola oil
1 tbsp Lard
1 garlic clove, minced
1 pound Chinese chives, cut into 1-inch pieces
1 cup diced, peeled, cooked water chestnut
1/2 cup dried shrimp
1/2 cup chopped green onions white and light green parts only
1/2 teaspoon ground white pepper
2 cups wheat starch
1 cup Tapioca starch
1 1/2 tbsps potato starch
1/2 tbsp sugar
3/4 teaspoon kosher salt
1/2 tbsp canola oil
2 cups boiling water
1/4 cup Sriracha sauce
1/4 cup light soy sauce
1 tbsp canola oil

Steps:

  • For the filling: In a large bowl, combine fresh shrimp, salt, fish sauce, tapioca starch. Set aside. Stir-fry the chives in half of the oil and half of the lard with garlic and water chestnuts until the chives are soft. Place chives on the center of a large piece of cheesecloth, wrap up the cloth, and squeeze the mixture until there is no liquid. Set aside.
  • In a small bowl soak the dried shrimp in warm water to cover for about 20 minutes. Drain, discard the liquid, and coarsely chop the shrimp. In a skillet or sauté pan over medium-high heat, warm the canola oil and remaining lard until shimmering. Add the dried shrimp and stir until the shrimp turns brown. Remove and set aside. In the same skillet add the fresh shrimp, pepper and green onions and saute until cooked through, 2-3 minutes. Remove from heat and combine shrimp-both fresh and dried-and chives.
  • For the dough: In the bowl of a stand mixer fitted with a paddle attachment, combine the starches, bread flour, sugar, salt, and oil. Mix on high speed, slowly adding the hot water until a sticky dough forms, about 5 minutes. Turn the dough out onto your work surface and divide into 10 pieces. Using a small rolling pin, roll out the ball into circles about 1/8 inch thick and 4-5 inches in diameter. Holding the dough in your palm, add about 2-3 tablespoons of the filling in the middle of each circle and pinch the ends together. Lightly pat down to flatten the cake. Repeat with the remaining dough and filling.
  • Set up a steamer and steam the chive cakes until the dough is translucent, about 7-10 minutes.
  • Remove the dumplings from the steamer and set aside to cool. Just before serving, coat the bottom of the skillet with oil and pan fry the chive cakes until browned on both sides.
  • Serve with both hot Sriracha and soy sauce for dipping.

2 tablespoons olive oil
1/2 cup finely chopped onion
1 cup plus 2 tablespoons arborio rice
1/4 cup dry white wine

1 1/2 cups panko (Japanese breadcrumbs), divided
1/2 cup (packed) coarsely grated Fontina cheese (about 2 ounces)
1/4 cup chopped fresh parsley

1 large egg yolk
2 large eggs
Canola oil (for frying)

Steps:

  • Bring 3 cups broth to simmer in small saucepan. Reduce heat to very low; cover and keep warm. Heat olive oil in heavy medium saucepan over medium heat. Add onion; sauté until translucent, about 5 minutes. Add rice; stir 1 minute. Add wine; stir until absorbed, about 30 seconds. Add broth, 1/3 cup at a time, and simmer until rice is just tender and risotto is creamy, allowing broth to be absorbed before adding more, and stirring often, about 18 minutes. Remove from heat. Mix in 6 tablespoons Parmesan and butter. Season generously with salt and pepper. Spread risotto in 13x9x2-inch pan and cool completely.
  • Mix 1/2 cup panko, Fontina cheese, parsley, chopped chives, and 1 egg yolk into risotto. Shape into 1 1/4-inch balls; flatten to 2-inch rounds. Arrange on rimmed baking sheet. (Can be made 2 days ahead. Cover and refrigerate.)
  • Preheat oven to 250°F. Set another rimmed baking sheet in oven. Beat 2 eggs in shallow bowl to blend. Place 1 cup panko in another shallow bowl. Dip risotto cakes into beaten egg, then into panko to coat. Pour enough canola oil into large skillet to coat bottom; heat oil over medium-high heat. Working in batches, sauté risotto cakes until crisp and brown, about 2 1/2 minutes per side. Transfer to baking sheet in oven.
  • Serve risotto cakes sprinkled with cheese and garnished with chives.

1 teaspoon finely grated lemon zest, plus 4 teaspoons fresh lemon juice

1 cup finely chopped yellow onion (from 1 small)
1 1/2 cups short-grain Italian rice, such as arborio
1/4 cup dry white wine, such as Sauvignon Blanc
1 pinch saffron
1 pound large peeled, deveined shrimp
3/4 cup fresh peas
3 tablespoons unsalted butter, room temperature
1/2 cup finely grated Parmigiano-Reggiano (1 1/2 ounces), plus more for serving

Steps:

  • In a saucepan, combine broth, 2 cups water, lemon zest, 1 1/4 teaspoons salt, and 1/4 teaspoon pepper. Bring to a simmer over medium heat. Meanwhile, heat a large straight-sided skillet over medium. Swirl in 2 tablespoons oil. Add onion, season with 1/4 teaspoon salt, and cook, stirring occasionally, until soft and translucent, about 5 minutes. Add rice and cook, stirring, until translucent and grains begin to make a popping sound, 3 to 4 minutes. Stir in wine and saffron; cook until wine is mostly evaporated, about 30 seconds.
  • Ladle 1 cup broth mixture into skillet. Stir with a wooden spoon at a moderate speed until most of broth is absorbed and bottom of skillet stays visible for a second or two as you mix, 2 to 3 minutes. Continue ladling broth into skillet, about 1/2 cup at a time (or enough to just cover rice). Stir slowly but constantly, allowing rice to absorb most of broth before adding more. Risotto is ready when rice is al dente and broth has thickened to a rich sauce, 20 to 25 minutes. (You may not need to use all of broth.) Add shrimp and peas to skillet with last addition of broth; cook until shrimp are opaque, 2 to 3 minutes.
  • Remove from heat. Stir in butter, lemon juice, and cheese; season with salt and pepper. Drizzle with oil and sprinkle with more cheese and pepper to serve. If the risotto becomes stiff before serving, stir in more hot broth, a little at a time, until it's loose and creamy.

These are made from scratch. Panko is a key ingredient so don't just use regular bread crumbs. As Ina notes, "Panko, or Japanese bread flakes, have a crisper, lighter texture than regular bread crumbs." These can be assembled ahead and then fried right at meal time. 3 tablespoons olive oil
1/2 medium Spanish onion, finely chopped
3 cloves garlic, finely chopped
2 cup white wine
2 cups arborio rice
1 tablespoon saffron threads
1 tablespoon honey
2 tablespoons coarsely chopped fresh tarragon
Salt and freshly ground pepper
8 scallions
1/2 large white onion, cut into chunks
3 garlic cloves
1/3 cup rice wine vinegar
1 cup pure olive oil
1 teaspoon honey
Salt and freshly ground pepper
12 large shrimp, shelled and deveined
2 tablespoons olive oil

Steps:

  • Bring stock to a simmer in a saucepan. Heat the olive oil in a large saucepan over medium heat and sweat the onion and garlic until softened but not colored. Raise the heat to high add the wine, and reduce until dry. Reduce the heat, add the rice and saffron and stir until the rice is coated with the oil. Cook 2 minutes.
  • Add 1 cup of the stock and cook, stirring, until absorbed. Repeat with a second cup. As the rice becomes dry, add stock in 1/2 cup increments, cooking and stirring until it is absorbed. Add the honey and tarragon and season to taste with salt and pepper.
  • Green Onion Vinaigrette: Blanch the scallions for 30 seconds in a large pot of boiling salted water over high heat. Drain and shock in cold water.
  • Combine the scallions, onion, garlic, and vinegar in a blender and process until pureed. With the motor running, slowly add the oil until emulsified. Add the honey, season to taste with salt and pepper and pour into a squeeze bottle.
  • Grilled Shrimp: Heat the oil in a large saute pan over high heat. Season the shrimp with salt and pepper to taste. Saute 2 to 3 minutes on each side. Spoon risotto into large serving bowl, arrange shrimp on top.

GRILLED HALIBUT ON A SAFFRON RISOTTO CAKE WITH PEA TENDRILS AND WHITE TRUFFLE OIL VINAIGRETTE

1/4 cup butter
10 ounces arborio rice
1 pinch saffron threads
1/2 cup white wine
1 quart chicken broth, simmering
2 tablespoons butter, for finishing the risotto
1 pinch salt
1 pinch ground white pepper
1 small shallot, minced
1/4 cup verjus
1 tablespoon whole grain mustard
3/4 cup canola oil
1/4 cup olive oil
2 teaspoons white truffle oil
2 tablespoons fresh chives, sliced thin
Salt and pepper
1 large leek, cleaned and halved lengthwise, root end trimmed off and trimmed to a length of 12 to 15 inches
1 teaspoon kosher salt
1 (24-ounce) halibut fillet, about 12 inches long
8 (6-inch) bamboo skewers or long toothpicks
Canola oil
1 tablespoon canola oil
2 shallots, finely chopped
8 ounces pea shoots or tendrils

Steps:

  • For the saffron risotto cake: Preheat the oven to 300 degrees F.
  • Sweat the onions in butter until transparent. Add the rice and cook, stirring, for 2 minutes. Add the saffron and white wine and stir until the wine is absorbed. Start adding the broth, 1/2 cup at a time, waiting for each addition to be absorbed before adding another 1/2 cup. Continue until the rice is just tender or "al dente". Add the butter, then season with salt and pepper. Remove from the heat and pour into a small, 2 inch deep pan, or put into ramekins, smoothing over the tops and put into a refrigerator until cold and set.
  • If using the pan, cut the risotto into circles with a 2 3/4-inch biscuit cutter, if using ramekins, remove the rice carefully, retaining the disk-shape. Heat a saute pan and add 2 tablespoons of canola oil. Saute the rice cakes until golden brown on both sides. Put in the oven for 10 minutes over to insure the cakes are heated through.
  • Preheat a grill.
  • For the White Truffle Vinaigrette: Put shallots, verjus, and mustard into a glass bowl and stir together. Blend the oils together. Slowly whisk in the oils into the mustard-verjus mixture, constantly stirring to emulsify the dressing. Add the chives, and season, to taste, with salt and pepper. Reserve at room temperature.
  • Grilled Halibut wrapped with Leeks: Bring a pot of water large enough to hold the leeks to a boil. Add kosher salt. Cook the leek until just tender and immediately plunge into ice water. Drain well and cut into 1/2-inch wide strips at least 12 to 15 inches long.
  • Cut the fish into strips 12 inches long about 1-inch wide and 1/2-inch thick. Roll up in a spiral and wrap with the leek strip. Secure with the skewers in a "x" fashion. Brush with canola oil and season with salt and pepper then place on a stovetop grill or BBQ and cook until just done about 4 minutes on both sides. Keep warm until service.
  • For the Pea shoots: Heat a large saute pan and add the oil. When the oil just begins to smoke add the shallots and cook for 10 seconds. Add the tendrils and "stir fry" the pea shoots until they just begin to wilt. Do not over cook, you want them wilted but still crispy. They cook fast, so do this at the last moment.
  • Assembly: Place the tendrils down first on a warm plate or large entree bowl, put the risotto cake in the center. Top with the grilled halibut and spoon the dressing over the pea tendrils and put a little on the fish. You can top the fish with some micro greens, lightly dressed or herb plush or nothing at all.

28 ounces chicken stock
1 tablespoon vegetable oil
1/2 onion, finely chopped
1 cup arborio rice
1 cup white wine
Large pinch of saffron
1 tablespoon butter
1/4 cup grated Parmigiano-Reggiano, plus shavings for garnish (optional)

Steps:

  • Bring stock to a low simmer in a medium pot. Heat oil in a medium saucepan over medium heat for 1 minute. Cook onion until translucent, about 3 minutes. Add rice and a pinch of salt. Sauté until rice is translucent, 1 to 2 minutes. Add wine and saffron; bring to a simmer, stirring, until rice has absorbed most of wine. Add 2 ladles of stock to rice; simmer, stirring, until rice has absorbed most of stock. Continue adding stock, allowing rice to absorb it before adding the next ladleful. Cook until rice is al dente and mixture is a little loose. Stir in butter. Turn off heat. Stir in grated cheese. Cover and let sit 2 minutes. Divide among 4 bowls. Garnish each with cheese shavings, if desired.

My mom made this risotto for us fairly frequently as we loved it so much. I got this recipe from "Italian Cooking" by Capalbo et al. I was forced to find an actual recipe since my mom doesn't have her recipes on paper (you know how it is :)) and this one comes very close. Yes, it's a bit time consuming and requires a lot of stirring, but you will be well-rewarded in the end for your effort! :D In Italy, this risotto is classically served with osso bucco, but it's wonderful even on its own!

5 cups beef stock or 5 cups chicken stock
1 pinch saffron (1 sachet)
6 tablespoons butter
1 onion, finely chopped
1 1/2 cups arborio rice (if you can find it, carnaroli makes the *best* risotto)
1 cup grated parmesan cheese (not the stuff from the can!)
salt and pepper, to taste

Steps:

  • Bring the stock to a boil, then reduce to a low simmer.
  • Ladle a little stock into a small bowl.
  • Add the saffron threads or powder and leave to infuse.
  • Melt 4 tbsp of the butter in a large saucepan until foaming.
  • Add the onion and cook gently for about 3 minutes, stirring frequently, until softened.
  • Add the rice.
  • Stir until grains start to swell and burst, then add a few ladlefuls of the stock, with the saffron liquid, and salt and pepper to taste.
  • Stir over low heat until the stock is absorbed.
  • Add the remaining stock, a few ladlefuls at a time, allowing the rice to absorb all of the liquid before adding more, and stirring constantly.
  • After 20-25 minutes, the rice should be al dente and the risotto golden yellow, moist and creamy.
  • Gently stir in about two-thirds of the parmesan and the rest of the butter.
  • Heat through until the butter has melted, then taste for seasoning.
  • Transfer the risotto to a warmed serving bowl or platter and serve immediately, with the remaining parmesan sprinkled on top.
