FRUIT PIZZA EVEN BETTER
Almond extract makes all the difference in this updated version of the traditional fruit pizza. Kiwi makes the topping completely fresh and adds beautiful color. Use low-fat cream cheese for a slightly lighter version. Any clear juice (apple, pear, peach, etc.) may be substituted for the pineapple.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 12-inch round pizza pan with butter-flavored cooking spray.
- Combine flour and confectioners' sugar in a bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Press into prepared pizza pan to make a crust.
- Bake in preheated oven until very lightly browned, 12 to 15 minutes. Cool on a wire rack.
- Beat cream cheese, 1/3 cup white sugar, and almond extract until smooth; spread over completely cooled crust. Arrange strawberries, blueberries, and kiwi decoratively over cream cheese mixture.
- Mix pineapple juice, 1/2 cup white sugar, cornstarch, and lemon juice in a saucepan until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes. Cool slightly and drizzle over fruit. Refrigerate until chilled.

Steps:
- Roll out cookie dough flat onto a prepared greased cookie sheet.
- I used my 12 inch pizza stone.
- Bake by instructions.
- This is very good with a chewy texture.
- Be sure not to over bake.
- Mix in a mixer cream cheese and powdered sugar until fluffy.
- Slice the assorted fruit while cookie is baking.
- Allow cookie to cool then spread cream cheese over dough.
- Arrange fruit over cream cheese.
- Glaze:
- Combine orange juice, lemon juice, sugar and corn starch in a sauce pan.
- Cook on low until thickened.
- Once sauce is thickened allow to cool completely before pouring over fruit pizza.
- Serve right away if you have 8 hungry teenagers standing around.
- Or refrigerate several hours before serving.

The crust of this fruit pizza is what makes it so good. I am not a big fan of other fruit pizzas, but I could eat this one all day!

Steps:
- Crust: Beat first 3 ingredients well then add the leftover ingredients. Spread on cookie sheet. Bake 10 minutes at 350° Cool.
- Spreading Layer: Beat above ingredients. Spread on cooled crust. Arrange fruit of your choice on pizza.
- Fruit Glaze: Heat and thicken above ingredients. Cool and pour over fruit to keep from going brown. Store in fridge.

- For the pizza crust, cream together the 1/2 cup of butter, the 1/3 cup white sugar and the 1/2 tsp vanilla. Slowly add in the cup of flour until fully combined and spread onto a pizza pan and press down firmly.
- Next, combine the cream cheese, the 1/2 cup of white sugar and the 1 tsp of vanilla. Beat this well and pour over the pizza crust. Bake at 400 for 10-15 minutes. Cool. Arrange a layer of sliced fruit over cooled base.
- Finally, in a saucepan, combine the orange juice, cornstarch, 3/4 cup of white sugar and orange zest. Bring this to a boil. When thickened, remove from heat and allow to cool. Pour over pizza and chill.
