ROAST BEEF WITH COFFEE



Roast Beef with Coffee image

Don't pass this up because it sounds strange. It is wonderful! Serve with mashed potatoes. This can also be made with a sirloin tip roast or a rump roast.

4 pounds chuck roast
5 cloves garlic, minced
1 ½ cups prepared strong coffee
2 tablespoons cornstarch
½ cup water

Steps:

  • Preheat slow cooker to low setting OR preheat oven to 350 degrees F (175 degrees C).
  • Using a sharp knife, make 5 or 6 deep slits around the top and side of the roast. Push the whole cloves of garlic down into the slits. Place the meat in a slow cooker OR a 10x15 inch roasting pan and pour the coffee over the meat.
  • Cook in slow cooker on low setting for 6 to 8 hours OR bake at 350 degrees F (175 degrees C) for 2 to 3 hours.
  • When roast is done, remove from slow cooker OR oven, and pour the drippings into a small saucepan over medium low heat. In a separate small bowl, combine the cornstarch and water. Mix well and add slowly to the drippings, stirring constantly. Simmer until thickened.

1 cup beef broth
1 medium onion, sliced
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • In a large shallow dish, combine vinegar and 2 garlic cloves. Add roast; turn to coat. Cover and refrigerate overnight, turning occasionally., Drain roast, discarding marinade. Pat roast dry; sprinkle with salt and pepper. Place roast in a 5- or 6-qt. slow cooker; add coffee, broth, onion and remaining garlic. Cook, covered, on low until meat is tender, 6-7 hours., Remove roast and keep warm. Strain cooking juices, discarding onion and garlic; skim fat. In a small bowl, mix cornstarch and cold water until smooth; gradually stir into slow cooker. Cook, covered, on high until gravy is thickened, 30 minutes. Slice roast; serve with mashed potatoes and gravy.

  • In a large resealable plastic bag, combine the orange juice, soy sauce, brown sugar and Worcestershire sauce; add the roast. 8 ounces of mushrooms

Steps:

  • Brew Hug In A Mug Coffee
  • Make 5 deep slits all over your roast and shove the cloves of garlic in it
  • Rub the meat generously with salt and pepper
  • Place the roast, mushrooms, and onions in your crockpot
  • Add coffee
  • Cook on low for 8 hours or done to your liking.

1 (3- to 4-pound​) beef pot roast, preferably a chuck roast
Kosher salt, to taste
Freshly ground black pepper, to taste
1 tablespoon plus 2 teaspoons extra virgin olive oil , divided
1 large onion, halved, thinly sliced
3 cloves garlic, minced
1 teaspoon dried leaf thyme
2/3 cup strong brewed black coffee
2 tablespoons flour
2 tablespoons cold water

Steps:

  • Heat the oven to 325 F.
  • Sprinkle the chuck roast all over with the salt and pepper.
  • Heat the oil in a Dutch oven over medium-high heat.
  • Add the beef and sear, turning to brown all sides.
  • Remove to a plate and set aside.
  • Reduce the heat to medium and add the onions to the pan, along with the remaining 2 teaspoons of olive oil.
  • Cook, stirring frequently, until the onion begins to brown, about 7 to 9 minutes.
  • Add the minced garlic and thyme; cook, stirring, for 1 minute longer.
  • Stir in the coffee and bring to a simmer.
  • Put the beef back into the pot and turn to coat well with the onions and liquids.
  • Put the lid on the Dutch oven and transfer to the oven. Braise for about 2 hours, or until the beef is very tender.
  • Transfer the beef to a plate and keep warm.
  • Strain the liquids into a gravy separator and discard excess fat.
  • Put the liquids and onions back in the pot over medium heat. In a separate bowl, mix the flour into the water, then stir it into the pot. Cook, stirring, until thickened.
  • Taste and season with salt and pepper, as needed.
  • Serve the beef with the sauce.

2 tablespoons flour
10 baby carrots
6 small potatoes
2 small onions
3 stalks celery
8 ounces brewed coffee
4 ounces Italian dressing

2 beef bouillon cubes (dissolved in 1/2 c. hot water)
1/4 cup Dale's Steak Seasoning (optional)

2 tablespoons butter
4 pounds chuck roast
1 tablespoon butter
salt to taste
1 onion, chopped
6 cups brewed coffee
2 cups canned mushrooms
3 tablespoons cornstarch

Steps:

  • Melt 2 tablespoons of butter in a large saucepan over medium high heat. Add the roast and sear on all sides until well browned; set aside.
  • In the same saucepan, melt the remaining butter, add the salt and onions and saute for 5 minutes. Return the meat to the saucepan and pour in the coffee and the mushrooms.
  • Bring to a boil, reduce heat to low and simmer for 5 hours, turning meat over halfway through cooking time.
  • To make gravy: Remove a cup of the coffee mixture from the saucepan, combine with the cornstarch, stirring until smooth, and return to the simmering pan. Mix well, remove from heat and serve.

3/4 cup strong brewed coffee
1 cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons Italian seasonings
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 teaspoon kosher salt
3 pound chuck roast

Steps:

  • Make the marinade by combining brewed coffee, brown sugar, Worcestershire sauce, Italian seasonings, smoked paprika, garlic and salt in a saucepan. Cook over medium- high heat, whisking together until mixture comes to a boil. Remove from heat and cool slightly. Pat chuck roast dry with paper towels and place in a shallow dish or zip top bag. Pour marinade over meat, coating all sides. Allow meat to marinate at least 30 minutes before grilling. Prepare grill fire to 300° with hickory wood for smoke flavor. Place marinated roast over an indirect fire and baste with marinade. Cook with the lid closed for 15 minutes. Baste roast once more with marinade and then discard any remaining marinade. 2 teaspoons packed light brown sugar or palm sugar
1 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon salt
1 2.5-pound boneless beef roast
1 1/2 teaspoons olive oil

Steps:

  • Preheat oven to 350˚F. Line a rimmed baking sheet with aluminum foil.
  • Mix together coffee grounds, sugar, pepper, oregano, and salt in a small bowl until combined.
  • Use your hands to rub the roast all over with the spice blend.
  • Place a large cast iron skillet over medium-high heat, and add oil. Once hot, sear beef on all sides, about 3-4 minutes per side.
  • Transfer seared meat to the prepared baking sheet.

2 tablespoons plus 1 teaspoon Worcestershire sauce
2 cups ice cubes
4 pounds bison (often labeled buffalo) short ribs, cut between ribs to separate
Short Ribs:
1/4 cup chopped bacon (about 1 1/2 ounces)
2 cups chopped onions
1/2 cup chopped shallots
6 garlic cloves, chopped
1 small jalapeño chile, seeded, chopped
1 cup strong brewed coffee
1 cup low-salt chicken broth
1/4 cup chili sauce (such as Heinz) or ketchup

  • For marinade:

Sprinkle ribs with salt and pepper. Working in batches, cook ribs until browned on all sides, about 7 minutes per batch. Transfer to large plate. Add onions, shallots, garlic, and jalapeño to pot. Reduce heat to medium, cover, and cook until vegetables are soft, stirring occasionally, about 10 minutes. Add coffee and broth; stir, scraping up browned bits. Add chili sauce and all remaining ingredients; bring to boil. Add bacon and ribs, cover, and transfer to oven. Braise until meat is tender, about 2 hours 15 minutes. DO AHEAD: Can be made 2 days ahead. Cool slightly. Chill uncovered until cold, then cover and keep chilled. Rewarm in 325°F oven until heated through, about 20 minutes, before continuing.
