PEAR CLAFOUTIS
If you don't want to make a crust but want something tartlike for your Thanksgiving dessert, a clafoutis, which is something like a cross between a flan and a pancake, is a great choice. It's a very easy dessert, yet it's always impressive.

- Combine the pear eau-de-vie and the honey in a bowl. Peel, core and slice the pears and toss with the mixture. Let sit for 30 minutes.
- Preheat the oven to 375 degrees. Butter a 10-inch ceramic tart pan or baking dish.
- In the bowl of an electric mixer or with a whisk, beat together the eggs, the seeds from the vanilla bean and the sugar. Pour off the marinade from the pears and add to the egg mixture. Gradually beat in the flour, then beat in the yogurt, milk and salt.
- Arrange the pears in the baking dish. Pour on the batter. Place in the oven and bake 40 to 50 minutes, until the top is beginning to brown. Serve hot or warm.

PEAR CLAFOUTIS
This French pear clafoutis combines tender, sweet pears with a custard-like base. It is so comforting and delicious. Perfect fall baking!

Steps:
- Preheat oven to 375F. Lightly grease an 8 inch, cast iron skillet or similar sized baking dish with some butter.
- Put the eggs and sugar in a bowl or mixer and whisk well until well broken up and combined. Add the milk, flour, vanilla, lemon zest and salt and mix/whisk until smooth.
- Peel the pears, cut in half and remove the core. Cut into slices and arrange in the bottom of the skillet/baking dish - you can fan them out slightly as I did or arrange any other way you choose.
- Carefully pour the batter into the skillet/baking dish over the pears.
- Bake in the oven for roughly 35 minutes, until lightly browned around the edges and set.
- Remove from the oven and allow to cool for a couple of minutes before serving. It will probably be puffed up when you take it out the oven and collapse slightly after a minute.
- Sprinkle with a little confectioner's sugar to serve, if desired.

SAFFRON & PEAR CLAFOUTIS
Lukewarm pear clafoutis with a hint of saffron... a great autumn dessert!

- 1. Pour 2 teaspoons of water in a tiny cup and add the saffron threads. If you're using saffron powder, skip this step.
- 2. Peel the pears and slice them in half lengthwise. Core them. Place the halves cut side down in a medium pan. Then add the milk.
- 3. Place the pan over medium heat. Gently poach the pears for 10 minutes. Turn them over after 5 minutes. Once done, remove the pears. Then place them in an 8-inch (20 cm) diameter tart tin you rubbed with the butter.
- 4. Let the pears cool. Strain the warm milk in measuring cup. To make the clafoutis you only need ⅔ cup (160 ml). Break the eggs and transfer them to a large mixing bowl. Add the sugar.
- 5. Beat the eggs and sugar until pale and foamy. Then add ⅔ cup (160 ml) of the lukewarm milk.
- 6. Stir well. Sprinkle with the sifted pastry flour and a pinch of salt.
- 7. Also add the soaked saffron and liquid (or saffron powder).
- 8. Whisk into a runny batter. Let it rest for 10 minutes. Preheat the oven to 356°F (180°C). Then pour the saffron batter carefully in the tart tin with the poached pears.
- 9. Bake the pear clafoutis in the hot over for 45 to 50 minutes. The top should be lightly golden and the batter should be fully set in the center. The pear clafoutis will puff up while baking but that will disappear while cooling down. Remove the pear clafoutis from the hot oven and let it cool at room temperature. Then sprinkle with icing sugar and serve lukewarm.

PEAR CLAFOUTI

- Preheat the oven to 375 degrees F.
- Butter a 10 x 3 x 1 1/2-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.
- Beat the eggs and the 1/3 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.
- Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top is golden brown and the custard is firm, 35 to 40 minutes. Serve warm or at room temperature, sprinkled with confectioners' sugar, and creme fraiche.
RECIPE: FRENCH CHOCOLATE AND PEAR CLAFOUTIS

- Arrange a rack in the middle of the oven and heat to 400°F. Coat a 10-inch cast iron skillet with the butter and set aside.
- Place the milk, sugar, eggs, and vanilla in a blender or food processor fitted with the blade attachment and process until the batter is smooth, about 20 seconds. Add the flour, cocoa powder, and salt and pulse until just incorporated, 5 to 7 pulses.
- Arrange the pear slices in a single layer in the prepared pan, fanned out in a circle. Pour the batter evenly over the pears, then sprinkle the chopped chocolate on top.

POACHED SAFFRON PEARS
Try infusing pears with the taste of saffron to make a unique and tasty pudding

- Soak the saffron in warm water and leave for an hour. Dissolve the caster sugar in the water and ginger wine in a medium pan. Turn up the heat and boil for 3-4 minutes before adding the star anise and orange peel. Turn the heat to low and add the pears, peeled with stalks left on. Press scrunched greaseproof paper lightly over the pears. Cover and simmer for 30 minutes, occasionally turning.
- Remove with a slotted spoon and transfer to a bowl. Strain the syrup into a jug and stir in the soaked saffron and liquid. Pour over the pears. Cover and chill for 24 hours, turning once.
- Place each pear on a separate plate, drizzle over a little syrup. Serve with dollops of mascarpone.

- Preheat oven to 375. Butter a 9 inch glass pie plate.
- In a medium bowl, whisk together eggs and sugar till lightly colored.
- Whisk in the flour and half and half. Stir in the melted butter.
- Pour the mixture into the prepared pie plate.
- Arrange the pears in the batter (you can leave the pears in halves, but I cubed mine) and surround with cranberries.
- If desired, dust top with sugar and cinnamon (or whatever spices you like - I added in some allspice as well).
- Bake for 25 to 30 minutes, or till the pears are tender and the custard is lightly browned.
- Cool slightly and serve.
- (The original recipe says this serves 6-8, but 3 of us polished it off at breakfast quite easily).

PEAR & HAZELNUT CLAFOUTIS

- Heat oven to 180C/160C fan/gas 4. Put the hazelnuts in a food processor and whizz until finely ground. Add the flour, eggs, extra yolks, sugar, milk, cream and vanilla and whizz until you have a smooth batter.
- Halve, core and slice the pears (you can peel them first if you like, but I usually don't). Arrange the pear slices in a 26 x 33cm ceramic, cast iron or copper gratin dish, then pour in the batter. Bake for 30-35 mins, or until the batter is set in the centre, golden and slightly souffléd.
- For the topping, toast the hazelnuts in a dry frying pan (keep a close eye on them - they can go from toasted to burnt very quickly), then roughly chop them so you're left with a mixture of halved and more finely chopped nuts. Scatter over the clafoutis, then sieve a little icing sugar over the top. Leave to sit for 10-15 mins (the clafoutis will deflate a little). Serve warm with crème fraîche or pouring cream.

PEAR CLAFOUTIS
It sounds odd to say that a recipe's biggest problem is that it looks too good, but that's sort of the case with this pear clafoutis, a crustless custard fruit tart that often looks a lot sweeter and richer that it actually is. Usually made with cherries, this rustic French dessert adapts easily to any kind of seasonal fruit. If desired, brush top with warmed fruit preserves and honey and garnish with whipped cream, creme fraiche, or ice cream.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch baking dish generously with 1 tablespoon butter.
- Whisk eggs, 1/3 cup sugar, milk, salt, nutmeg, vanilla extract, almond extract, and flour together in a bowl for batter.
- Reserve 12 to 14 pear slices for topping and add remaining pear slices to the prepared baking dish. Pour batter over pears in the baking dish and top with almonds.
