SWEET AND SOUR RUSSIAN CHICKEN
Russian Chicken is a deliciously sweet and sour chicken dish that our whole family loves. This apricot chicken recipe is one of my mom's special recipes. Chicken covered in a Russian dressing and apricot jam glaze, and baked to perfection.

Steps:
- Preheat the oven to 350F. Spray a 9x12-inch baking dish.
- Place the chicken breasts in a single layer in the baking dish.
- Combine all other ingredients in a medium bowl and mix well.
- Pour the mixture over the chicken.
- Bake covered at 350F for 20 minutes.
- After 20 minutes, remove the cover and bake 15-20 minutes or just until breasts are cooked through.
- Serve with rice. Spoon sauce over the meal.

- Add chicken to a 3 quart casserole dish. Season with paprika, salt and pepper and toss to cover.
- In a medium bowl, stir together Russian salad dressing, onion soup mix and apricot jam. Pour over the chicken and stir to combine.
- Bake, uncovered, for 1 hour.

SUPER EASY SWEET AND SOUR CHICKEN
Steps:
- Gather the ingredients.
- Place chicken pieces in a shallow baking dish, skin-side up. Position a rack in the center of the oven and heat to 350 F.
- In a medium bowl, whisk together the dressing, soup mix, and preserves. If the sauce is too thick and not pourable, whisk in water 1 to 2 teaspoons at a time to reach desired consistency.
- Pour the mixture over the chicken.
- Bake 1 1/4 to 1 1/2 hours, or until chicken is tender and the internal temperature reaches 165 F on an instant-read thermometer.

RUSSIAN CHICKEN
This is fabulously easy and delicious!! My step-mother gave me the recipe from Maryland. The recipe calls for Creamy Russian dressing, well in MN we seem to only have plain Russian dressing. So I add 1/4-1/2 cup of light Mayo to the dressing mix to make it creamy. I have made it without the mayo and it definitely needs it if you cant find the creamy Russian dressing! Served best over Jasmine Rice!

- Mix the Russian dressing, apricot jelly, (mayo if applicable) and french onion soup.
- Stir until well combined in separate bowl.
- Place chicken in glass baking pan.

- Served best over Jasmine rice.

- Drain the pineapple, reserving the juice. If in rings, chop into chunks. Mix with the chicken, onion, leaves, coriander and tomatoes, and divide between 2 containers if taking as lunch.
- For the dressing, whisk 2 tbsp of the pineapple juice, the red chilli, vinegar and sweet chilli sauce with some seasoning in a small jam jar or lidded container, and toss this through the salad before serving.
