Every Flavor Thanksgiving Pie Bars image

You can enjoy three of your favorite Thanksgiving pies in just one dessert with these tasty pie bars. Layers of prepared pie dough are baked until golden brown, then stacked among pecan pie, pumpkin pie and apple pie fillings, sprinkled with a super-simple crumb topping and baked to perfection. Serve the bars as is or a la mode like traditional pie for an impressive and fun holiday treat.

3 refrigerated rolled pie crusts (from two 14.1-ounce boxes), such as Pillsbury
All-purpose flour, for dusting
3/4 cup packed light brown sugar
1/2 cup light corn syrup
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
Pinch kosher salt
3 large eggs
1 1/2 cups pecans, toasted and roughly chopped
1 1/2 cups pure pumpkin puree
1/2 cup heavy cream
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch ground nutmeg
Pinch kosher salt
2 large eggs
2 Gala or McIntosh apples, peeled, cored and thinly sliced
2 Granny Smith apples, peeled, cored and thinly sliced
1/3 cup granulated sugar
4 tablespoons unsalted butter, melted
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
Pinch kosher salt
1 cup all-purpose flour (see Cook's Note)
1/3 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
Nonstick cooking spray, for the baking dish

Steps:

  • For the pie dough layers: Preheat the oven to 350 degrees F.
  • Roll 1 sheet of pie dough out on a lightly floured work surface into an 8 3/4-by-12 3/4-inch rectangle, trimming and squaring off the edges as needed. Transfer to a parchment-lined baking sheet and prick all over with a fork. Top with another layer of parchment and another baking sheet; this will keep the dough from rising when baking. Bake until the dough is just starting to brown and cook through, 10 to 14 minutes. Remove the top baking sheet and parchment, then continue to bake the crust until golden brown, 3 to 5 minutes more. Transfer to a wire rack to cool. Repeat with the remaining 2 pieces of pie dough.
  • For the pecan pie layer: Meanwhile, whisk together the brown sugar, corn syrup, melted butter, vanilla, salt and eggs in a large bowl until smooth and combined, then stir in the chopped pecans. Set aside.
  • For the pumpkin pie layer: Whisk together the pumpkin puree, cream, granulated sugar, vanilla, cinnamon, nutmeg, salt and eggs in another large bowl until smooth and combined. Set aside.
  • For the apple pie layer: Toss together the sliced apples, granulated sugar, melted butter, flour, lemon juice, cinnamon and salt in a third large bowl until well combined. Set aside.
  • For the crumb topping: Whisk together the flour, brown sugar, cinnamon and salt in a medium bowl until combined. Stir in the butter until the flour mixture is completely moistened and starts to clump together. Set aside.
  • For the assembly: Spray a 9-by-13-inch baking dish generously with cooking spray and line with aluminum foil, leaving a 2-inch overhang on both longer sides. Spray the lined pan again with cooking spray. Lay 1 sheet of cooked pie dough in the bottom of the pan, then top with the pecan pie filling, using an offset spatula to spread the filling all the way to the edges of the dough. Add another layer of pie dough, then spread with an even layer of the pumpkin pie filling. Place the third and final piece of pie dough on top, then evenly spread with the apple pie filling. Sprinkle the crumb topping evenly over the top.
  • Bake until the edges and crumb topping are golden brown and the center is set, 1 hour to 1 hour 10 minutes. Cool completely in the pan, about 2 hours. Once cool, run an offset spatula around the edges of the pan, then use the foil overhang to lift the bars out onto a cutting board. Cut into 12 squares and serve.

1 1/2 cups chopped roasted turkey, such as Triple Citrus Buttered Turkey, recipe follows
1 cup Country Bread Stuffing
One 10-ounce package frozen corn, thawed
1/2 cup pan drippings
1 tablespoon chopped fresh parsley
2 cups Leek Mashed potatoes, warmed, recipe follows
One 12 to 14-pound frozen turkey, thawed
1 lemon
1 lime
1 orange
1 stick unsalted butter, softened
Kosher salt and freshly ground black pepper
2 leeks, green parts only
1 loaf country wheat bread
3 tablespoons unsalted butter
One 8-ounce package sliced fresh mushrooms
2 stalks celery, chopped
1 medium onion, chopped
Kosher salt and freshly ground black pepper
One 8-ounce can sliced water chestnuts, drained and rinsed
2 large eggs
1 cup low-sodium chicken broth
1 tablespoon chopped fresh parsley
1 tablespoon soy sauce
1 lemon, juiced
1 lime, juiced
1 orange, juiced
4 pounds russet potatoes
Kosher salt
2 leeks, white parts only
6 tablespoons butter
Freshly ground black pepper
1 cup milk
1 tablespoon chopped garlic
2 sprigs fresh thyme

Steps:

  • In a large bowl, fold together the turkey, stuffing, corn, drippings and parsley. Pour this into the prepared baking dish and smooth out the top. Cover with the mashed potatoes, making sure to get it completely covered. Bake until the mixture is bubbling and the top is lightly browned, 30 to 35 minutes. Let rest for 5 minutes before serving.
  • Preheat the oven to 350 degrees F. Let the turkey sit at room temperature, covered, for 30 minutes to come to temperature before preparing.
  • Zest and juice the lemon, lime and orange. Reserve the juice for another use and set the rinds aside. Mix the butter with the citrus zest and salt and pepper to taste. Rub the seasoned butter all over the turkey, inside and out, as well as under the skin. Put the citrus rinds and leeks into the cavity. Tie up the legs and put the turkey, breast-side up, onto the rack in a roasting pan. Pour 2 cups water into the pan and roast, basting with the pan juices every 15 to 20 minutes. Cook until the internal temperature taken from the thickest part of the thigh is 170 degrees F, 15 to 20 minutes per pound. Remove the turkey from the oven and let it rest for 20 minutes before carving.
  • Cut the bread into large cubes and spread them onto a baking sheet. Leave them uncovered overnight to get stale.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • Put a large skillet over medium heat and add the remaining 2 tablespoons butter. When it is melted, add the mushrooms, celery and onions and season with salt and pepper. Cook until all the vegetables have softened, 6 to 8 minutes. Let cool for a few minutes.
  • In a large bowl, combine the bread, cooked vegetables and water chestnuts. Toss to combine. In a separate bowl, whisk the eggs with the broth, parsley, soy sauce and citrus juices. Fold into the bread mixture. Sprinkle with salt and pepper. If the mixture seems too dry, add more broth or a little water. Spread the mixture into the prepared baking dish. Can be covered and refrigerated overnight until you are ready to bake. Let it come to room temperature first.
  • Cover the pan with foil and put it into the oven for 20 to 25 minutes. Uncover and cook until the top is browned, about another 20 minutes. Let rest for 5 minutes before serving.
  • Peel the potatoes and cut them into 1-inch pieces. Put them into a large pot of cold water. Add a big pinch of salt and put the pot over high heat. When it comes to a boil, cook until the potatoes are just cooked through, about 20 minutes.
  • While the potatoes are cooking, slice the leeks into small pieces and thoroughly wash to remove any dirt. Put a medium skillet over medium-low heat and add 2 tablespoons butter. When the butter is melted, add the leeks and season with salt and pepper. Cook the leeks until they are very soft, being careful not to let them color or burn, about 20 minutes.
  • Drain the potatoes in a colander. Then put the potatoes back into the pot and let the potatoes dry out a bit while you finish the leeks.
  • In a small pot over low heat, add the milk, the remaining 4 tablespoons butter, garlic and thyme and warm it up. Strain the garlic and thyme from the warm milk and stir the milk into the potatoes using a wooden spoon. Mash with a potato masher, breaking up the big lumps. Stir in the melted leeks, taste and season with salt and pepper.

Stuffed full of our favorite Thanksgiving leftovers, these savory hand pies are a welcome twist on the usual day-after sandwiches. Serve with cranberry sauce and gravy for dipping.

One 14.1-ounce package store-bought pie crust
All-purpose flour, for dusting
1/4 cup leftover mashed sweet potatoes
1/2 cup leftover stuffing
1/2 cup 1/4-inch diced leftover roasted turkey
1/4 cup leftover cranberry sauce, plus more for dipping
1 large egg
1 teaspoon whole milk
Leftover gravy, for dipping

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Roll out the pie crusts with a rolling pin on a lightly floured surface to 1/8 inch thick. Cut out rounds of dough with a 4 1/2-inch round biscuit cutter and transfer them to the prepared baking sheet. Gather and reroll the scraps if necessary; you should have a total of 12 rounds.
  • Spread 1 teaspoon sweet potato in an even layer over half of each round, leaving a 1/4-inch border around the edge. Top each with 2 teaspoons stuffing, then 2 teaspoons turkey, and finally 1 teaspoon cranberry sauce. (You may redistribute some of the filling among the rounds so all the piles are even.) Whisk together the egg and milk in a small bowl to make an egg wash. Brush the egg wash around the edges of each dough round.
  • Fold over each dough round to cover the filling, creating 12 half-moon shapes. With your fingers, press the edges together to seal, and then press with a fork to seal securely.
  • Brush the top of each hand pie with the remaining egg wash. Make 3 small slits with a small paring knife on the top of each pie to let the steam escape. Bake until the dough is cooked through and golden brown, about 30 minutes. Serve warm with extra cranberry sauce and gravy on the side for dipping.
