This recipe is adapted from Texas Home Cooking by Cheryl and Bill Jamison. Think of a dry rub as the dry form of a marinade, and the ingredients are not set in stone. Change them to suit your tastes and needs. Use on almost anything you are barbequing.

CHEESY POTATO SOUP
I found this recipe in one of my favorite cookbooks, "Texas Cookin' - Lone Star Style" and changed it up just a bit. This soup is creamy and delicious! I made it for my DH because he had some dental work done. He normally is not a big soup fan, but he loved this recipe!

Steps:
- Combine potatoes, water and bouillon granules in a soup pot.
- ~NOTE~You might need to add just a little bit more water to barely cover potatoes.
- Cook, covered, until potatoes are tender.
- Add butter, Velveeta, sour cream, onions, celery, salt and pepper; mix well.
- Heat until cheese melts, stirring frequently.
- Ladle into soup bowls.
- Sprinkle with bacon and chives on top.

ROTISSERIE LEMON-ROSEMARY CHICKEN

Steps:
- Wash chicken inside and out under cold water and pat dry.
- Remove any excess fat from the skin and put chicken in a 2-gallon zip top bag.
- Mix marinade ingredients and pour over chicken.
- Marinate in refrigerator about 8 hours.
- Remove chicken from marinade and drain.
- Load chicken onto spit rod assembly. Truss according to manufacturer's directions, or tie the legs together and tie another string around the body and wings so the wings don't flop around during cooking.
- Roast until an instant-read meat thermometer inserted into the thickest part of the thigh registers 175 degrees, about 20 minutes per pound.
- Remove chicken from spit, cover loosely with foil and let rest for about 10 minutes before carving.
ROTISSERIE HONEY-GLAZED HAM

Basting with a combination of honey and raw sugar during the last 30 minutes of cooking time will give you that delicious, crunchy glaze

Steps:
- Load the ham onto the spit rod assembly and roast until an instant-read thermometer inserted into the thickest part of the ham registers 160 degrees, about 13 minutes per pound.
- While the ham is cooking, combine the glaze ingredients in a small bowl and stir until smooth.
- About 30 minutes before the ham is done, stop the machine and brush the ham with the honey glaze.
- Then sprinkle the sugar crystals evenly over the glaze.
- Restart the machine and continue roasting.
- Remove the ham from the spit rod, being careful not to knock off any of the crust.
- Cover loosely with aluminum foil and allow it to rest for 10 minutes before carving.
JAMAICAN JERK RUB
This can be used for chicken, beef or pork, increase the heat by adding in more cayenne pepper, or add in some red pepper flakes. For best flavor, meat should be left to marinade for 24 hours in the fridge. Spice amounts may be doubled or tripled if desired.

Steps:
- Chop the onion and green pepper.
- Cook pastas together; drain well.
- Saute beef, onion, and green pepper until beef is no longer pink and vegetables are soft. Add the pepperoni and heat thoroughly. Drain excess grease.
- Add spaghetti sauce and simmer 5 minutes.
- Spray a 3-qt casserole with cooking spray. Put 1/2 of the pasta in the casserole. Spoon 1/2 of the meat sauce mixture over the pasta. Spoon the container of cottage cheese over the sauce. Sprinkle with 1/2 of the mozzarella cheese.
- Top with the remaining pasta, then sauce, then mozzarella cheese.
- Bake at 350 degrees for 30-35 minutes.
