Posted in response to a request from "The Ultimate Rotisserie Cookbook" by Diane Phillips. Every year spiral sliced ham advertisements run that make your mouth water. Including shots of a glistening ham with a crackly coating. Your rotisserie can help you to achieve the same crispy coating, and for a lot less than that ham from the store. Basting with a combination of honey and raw sugar during the last 30 minutes of cooking time will give you that delicious, crunchy glaze

Number Of Ingredients 6

5 lbs fully cooked boneless ham or 5 lbs bone in ham
1/2 cup honey
2 teaspoons fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/2 cup raw sugar

Steps:

  • Load the ham onto the spit rod assembly and roast until an instant-read thermometer inserted into the thickest part of the ham registers 160 degrees, about 13 minutes per pound.
  • While the ham is cooking, combine the glaze ingredients in a small bowl and stir until smooth.
  • About 30 minutes before the ham is done, stop the machine and brush the ham with the honey glaze.
  • Then sprinkle the sugar crystals evenly over the glaze.
  • Restart the machine and continue roasting.
  • Remove the ham from the spit rod, being careful not to knock off any of the crust.
  • Cover loosely with aluminum foil and allow it to rest for 10 minutes before carving.

I was at the local grocery store and had an idea of trying a pork shoulder on my electric Black Angus Rotisserie from 1950 that I permanently borrowed from my mom, since she was not putting it to use! I use this rotisserie all the time! From chicken, beef, pork and even fish! Have to keep a close eye on the last one!

4 -6 lbs pork shoulder
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried parsley
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 teaspoon cumin
1/2 teaspoon rosemary, ground
1/4 teaspoon thyme
1 teaspoon onion soup mix

Steps:

  • Wash the pork shoulder well and pat dry. Mix all the ingredients in a small bowl very well.After mixing all the spices very well, in a large bowl dump the spices in and add the pork.
  • Roll it around so that it is completely covered with all the spice and pat the spices into the meat with your fingers.Place in a plastic bag or small roster and let sit overnight or longer.
  • Tie it onto the Rotisserie spit on medium heat for 1 hour to a maximum time of 1 hours and 30 minutes for well done or 325°F in the oven for 1 hour for medium.

  • Two hours before cooking, remove the ham from the refrigerator. Score in a diamond pattern, 1/4″ deep at 1″ intervals, with a paring knife. Sprinkle all over with the barbecue rub, then let rest at room temperature.
  • Set your grill up for rotisserie cooking at medium low heat (300*F), and allow to preheat. For my Weber Summit, this meant turning the two outer burners (burners 1 and 6) to medium-high, and leaving the infrared burner off. Then I put my drip pan in the middle, over the unlit burners.
  • Put the spit on the grill, and start the rotisserie spinning. Cook the ham with the lid closed until it reaches 100*F (minimum) to 140*F (USDA safe) internal temperature, as measured in the thickest part of the ham. This means roughly 10 minutes per pound for the minimum temperature, or 15 minutes per pound for the USDA safe version. For my 12 lb ham, it took about 3 hours to reach 140*F.
