CREAM CHEESE & HERB STUFFED CHICKEN BREASTS



Cream Cheese & Herb Stuffed Chicken Breasts image

This is a versatile recipe using your favorite herb with cream cheese, sandwiched in a chicken breast half, then breaded and baked for 30 minutes. Presto, quick and delicious dinner! I like oregano; sage or basil are other possibilities. Try 'em all!

2 boneless skinless chicken breast halves (not the monstrous ones, the "halved" ones)
2 tablespoons softened cream cheese
3 green onions, minced
4 tablespoons fresh sage or 4 tablespoons fresh basil
salt and pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/3 cup flour
1 egg, beaten with
1 teaspoon water
1/4 cup plain dried breadcrumbs (like Progresso)
1/4 cup grated parmesan cheese
1/4 teaspoon garlic powder
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degres F.
  • Flatten open chicken breasts; spread 1 tablespoon of cream cheese on one half of each breast (resist the temptation to use more-- a little cream cheese goes a looooooong way!).
  • Evenly distribute the fresh herbs on top of that and season with salt and pepper.
  • "Fold"the chicken breasts back up and press tightly, tucking in cream cheese a bit.
  • In a shallow dish, combine the 1/2 teaspoons salt and pepper, paprika and flour.
  • In another dish, pour the beaten egg mixture.
  • In a third dish, combine bread crumbs, garlic powder and Parmesan cheese.
  • First dip chicken breasts in flour mixture, then beaten egg mixture, then bread crumb mixture.
  • Place chicken on a lightly greased baking sheet, drizzle about a tablespoon of melted butter on each breast and bake, uncovered, for 30 minutes or until cooked through and tender.

This Cream Cheese and Herb Stuffed Chicken is a fresh, flavorful, low carb dinner!

4 oz 1/3 less fat cream cheese (softened to room temperature)
1 tablespoon minced fresh parsley
1 tablespoon minced fresh dill
1 tablespoon minced fresh chives
2 garlic cloves (minced)
4 (6 oz each) boneless, skinless chicken breasts ((24 oz total))
Salt and black pepper
1 tablespoon olive oil

Steps:

  • Pre-heat the oven to 400. Line a baking sheet with parchment paper and set aside.
  • In a mixing bowl, combine the cream cheese with the parsley, dill, chives and garlic and mash together using a spatula until mixed.
  • Place the chicken breasts on a cutting board. Using a sharp knife, slice the breasts from the side (creating a top and bottom) almost all the way through. Open each breast at the slit. Divide the cream cheese mixture evenly amongst the four breasts and spread across the surface of one side (leaving the other half empty to fold over the filling). When all four breasts are topped on one side, fold the empty half over the filling to make a stuffed breast. Sprinkle each stuffed and closed breast with salt and pepper, flip them over and sprinkle the bottom side as well.
  • In a large skillet, add the oil and bring over medium-high heat. Working in batches of two at a time so as not to crowd the pan, add the stuffed chicken breasts to the pan and cook for about 1-2 minute(s) until the bottoms are seared golden. Flip the breasts and cook for another minute on the other side to do the same. Transfer the breasts to the prepared baking sheet and place in the pre-heated oven. Bake for 30 minutes until chicken is fully cooked through.

1 -4 1/2 lb chicken
1 lime (juice and zest)
8 ounces light cream cheese
4 tablespoons rosemary
2 tablespoons basil
2 tablespoons olive oil
3 garlic cloves
3 tablespoons chili flakes

Steps:

  • Preheat oven at 400°F.
  • After washing chicken, pour lemon juice and rinse.
  • Finely chop garlic, rosemary and basil.
  • mix 2 cloves of garlic, 2 tbs of basil, cream cheese, and 2 tbs of rosemary, lime zest, and 2 tbs of chili flakes.
  • Separate skin without tearing the skin with knife and fingers so that cream cheese and herb filling can be evenly spread through breasts and legs.
  • Mix olive oil, garlic clove, the rest of the rosemary and chili flakes so it can be spread on top of the skin around the whole chicken.
  • Before putting chicken in oven to roast pour the lime juice over olive oil, rosemary, and garlic mix.
  • Lower the oven to 375 and set chicken for 90 minute.

12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil
Kosher salt

Steps:

  • Preheat the oven to 375 degrees.
  • Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

2 teaspoons each of onion powder and garlic powder
1 teaspoon fresh chopped parsley
1/2 teaspoon each of dried thyme and dried rosemary*
salt and pepper (, to season)
4 cloves garlic (, minced (or 1 tablespoon minced garlic))
1 teaspoon fresh chopped parsley
1/2 teaspoon each of dried thyme and dried rosemary
1 cup milk ((or half and half)*)
Salt and freshly ground black pepper (, to taste)
1 teaspoon cornstarch mixed with 1 tablespoon water (, until smooth)

Steps:

  • Coat chicken breasts with the onion and garlic powders and herbs. Season generously with salt and pepper.
  • Heat 1 tablespoon of oil a large pan or skillet over medium-high heat and cook chicken breasts until opaque and no longer pink inside (about 5 minutes each side, depending on thickness). Transfer to a plate; set aside.
  • To the same pan or skillet, heat another 2 teaspoons of olive oil and sauté garlic, with parsley, thyme and rosemary, for about 1 minute, or until fragrant.
  • Stir in milk (or cream); season with salt and pepper, to taste.
  • Bring to a boil; add the cornstarch mixture to the centre of the pan, quickly stirring, until sauce has thickened slightly. Reduce heat and simmer gently for a further minute to allow the sauce to thicken more.
  • Return chicken to the skillet. Sprinkle with extra herbs if desired. Serve immediately.

2 whole chickens (3 1/2 to 4 pounds each), rinsed and patted dry inside and out, necks reserved (livers and giblets discarded)
Coarse salt and ground pepper
1 lemon, quartered
1 head garlic, halved horizontally, then vertically
1 bunch fresh thyme
1 bunch fresh rosemary
2 tablespoons butter, room temperature
Pan Sauce for Roast Chicken (optional)

Steps:

  • Preheat oven to 475 degrees. Season chicken cavities with salt and pepper. Dividing evenly, stuff with lemon, garlic, and sprigs of thyme and rosemary (reserve a few sprigs of each for garnish).
  • With a heavy knife, coarsely chop necks, and scatter in a large roasting pan. Place chickens, breast side up, on a rack set in pan. Using cotton kitchen twine, securely tie legs together; tuck wing tips underneath chickens.
  • Rub chickens with butter; season with salt. Roast, occasionally brushing chickens with pan juices, until an instant-read thermometer inserted in thickest part of thigh (avoiding bone) registers 165, about 1 hour. Transfer chickens to a platter; cover loosely with aluminum foil, and let rest 10 to 15 minutes before carving. If desired, prepare Pan Sauce to serve with chickens.

  • Mix the other 1/2 teaspoons of everything and salt and pepper with breadcrumbs.
  • In a separate bowl or plate beat egg and mix with teaspoons milk.
  • Lay out pounded chicken and spread each piece with 1/4 of cream cheese, 1/4 of the herb mix and 1/4 of the feta.
  • Roll up and secure with toothpicks.
  • Dip rolled chicken breasts in egg wash then in breadcrumbs, coating well.
  • Brown chicken on all sides (about 3 minute per side) and place on foil lined pan.
  • Bake in oven for 20 minute (may take a little longer depending on the thickness of your chicken, cut into it a bit to make sure it's cooked through).
