When it's apple-picking time, it's also time for all the delightful treats you can make with them, including applesauce. This is my favorite way to prepare it. It's simple to do and it makes the whole house smell like fall. -Renee Pajestka, Brunswick, Ohio

4 pounds apples (about 12 medium), peeled and cubed
1/4 cup water
2 tablespoons brown sugar
2 teaspoons ground cinnamon
2 teaspoons minced fresh gingerroot
2 teaspoons vanilla extract

Steps:

  • In a 4-qt. slow cooker, combine all ingredients. Cook, covered, on low until apples are tender, 4-5 hours. Mash if desired. Refrigerate leftovers.

Spicy Ginger Applesauce Cake With Cream Cheese Frosting image

This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. The cake is delicious on its own, but cream cheese frosting and a sprinkle of crystallized ginger push it closer to dessert. The cake can be made a day in advance, covered and refrigerated and brought to room temperature before serving. The crystallized ginger should be sprinkled on just before serving as it will weep in the fridge.

1 1/4 cups/275 grams light brown sugar
2 large eggs
2 cups/480 milliliters unsweetened applesauce
3/4 cup/180 grams neutral oil like canola or grapeseed
2 tablespoons fresh ginger, peeled and finely grated
1 tablespoon ground ginger
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
2 cups/255 grams all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/85 grams finely chopped crystallized ginger
12 ounces/350 grams cream cheese, softened
1/2 cup/115 grams unsalted butter, softened
2 1/4 cups/226 grams confectioners' sugar, sifted
1 tablespoon fresh ginger, peeled and finely grated
1 teaspoon lemon zest
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup/85 grams finely chopped crystallized ginger

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
  • Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.

CHUNKY CINNAMON-GINGER & BROWN SUGAR APPLESAUCE

If you're looking for something comforting to warm you from your lips to your toes, this applesauce will do the trick. I like to use brown sugar in my applesauce sometimes instead of white, plus I like to add ginger in addition to cinnamon to tease the taste buds with subtle spicy warmth. Serve warm and enjoy two types of heat! My family of four gives this applesauce eight thumbs up, and I hope you enjoy it too! (Note: Cooking time includes time needed to cool the applesauce to a manageable temperature.)

5 medium apples, Northern Spy (or another tart variety like Granny Smith, Macintosh, Cortland, etc.)
1/2 cup water
1 teaspoon lemon juice
2 tablespoons brown sugar (heaping tablespoons)
3/4-1 teaspoon cinnamon, ground
1/2 teaspoon ginger, ground

Steps:

  • Peel and core apples and chop into 1-inch pieces.
  • Into a medium saucepan over medium heat, place apples, water and lemon juice. Cover and simmer for 15-20 minutes, stirring occasionally.
  • Once the apples are soft, mash until reaching your preferred chunky consistency. Then stir in brown sugar, cinnamon and ginger until thoroughly incorporated.
  • Cool for 10-15 minutes or per your preference. Serve and enjoy!

3 lbs apples
1/4 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon cinnamon, ground
1 cinnamon stick

Steps:

  • Cut unpeeled but cored apples into chunks, place in large sauce pan.
  • Add 1/2 inch of water.
  • Stir in sugar, vanilla and cinnamon.
  • Heat to boiling, reduce to low and simmer, covered, until apples soften (about 30 min.) Press through a fine sieve or the fine disc of a food mill.
  • Taste and adjust seasoning.
  • Refrigerate.

4 pounds Golden Delicious apples (about 8), peeled, cored, and cut into 1-inch pieces
1 1/2 cups fresh or thawed frozen cranberries (6 ounces)
1/2 cup sugar
1 (3-inch) cinnamon stick

Steps:

  • Cook apples, cranberries, sugar, and cinnamon stick in a large heavy saucepan, covered, over medium-low heat, stirring occasionally, until fruit is very tender and broken down into a sauce, about 45 minutes. Discard cinnamon stick. (For a smoother texture, force applesauce through a medium-mesh sieve or a food mill fitted with fine disk into a bowl.) Cool to room temperature or chill before serving.

5 large Red Delicious apples, peeled and finely chopped
4 cups finely chopped fresh or thawed frozen rhubarb (about 8 stalks)

Steps:

  • In a Dutch oven, combine apples, rhubarb, strawberries, sugar and water; bring to a boil. Reduce heat; simmer, covered, 18-22 minutes or until fruit is tender, stirring occasionally., Remove from heat; stir in vanilla. If a smoother consistency is desired, cool slightly and, in batches, process in a blender. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

1 lb granny smith apple
1 lb rome apple
1 cup unsweetened apple cider or 1 cup apple juice
2 slices lemon zest (about 3 in. each)
1 tablespoon lemon juice
3 tablespoons red cinnamon candies ("red-hot")
1 1/4 teaspoons ground ginger

Steps:

  • Peel, halve and core apples; cut into 2-inch chunks.
  • Place in 5-quart pot with apple cider, lemon zest and lemon juice.
  • Bring to a boil; reduce heat to low and simmer, partially covered, 25 minutes or until apples are very tender.
  • Stir in remaining ingredients; continue to cook, stirring, until the candies dissolve, about 3 minutes.
  • Discard zest.
  • Crush with a potato masher until the applesauce is chunky or smooth according to taste.
  • Serve warm or cold.
