STICKY MISO CHICKEN WINGS
Combining miso with lime, ginger, fish sauce, and sugar creates a terrific sweet-sour glaze for crispy baked chicken wings.

Steps:
- Preheat oven to 400 degrees F. In a large bowl, toss wings with oil and season lightly with salt and pepper. Transfer to a rack set over a baking sheet. Bake for about 40 minutes, turning wings halfway through, until they are golden, crispy, and cooked through.
- Meanwhile, in a small saucepan, combine all of remaining ingredients except cilantro and lime. Add 3 tablespoons of water and cook over moderately low heat, whisking frequently, until sugar is dissolved and glaze is smooth and slightly thickened.
- Brush glaze all over wings and bake for about 10 minutes longer, until wings are golden brown and sticky. Transfer wings to a platter, garnish with cilantro and serve with lime wedges. - Heat oven to 200C/180C fan/gas 6. In a large bowl, mix the ketchup, garlic, sugar, half the sweet chilli sauce and the soy sauce with some seasoning. Tip in the wings and toss to combine so that they are all coated. Transfer to a large roasting tray or two smaller ones, in a single layer. Roast for 35-40 mins until cooked through and golden.
- Meanwhile, make the slaw. Mix the vegetables with remaining chilli sauce, salad cream or mayo and seasoning. Pile the wings onto a large platter and transfer the slaw to a serving bowl. Let everyone dig in and help themselves.

MISO CHICKEN WINGS
Steps:
- Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
- Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
- Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
- While the wings cook, combine 1/2 cup miso, 2 tablespoons honey, 1 tablespoon rice vinegar and some freshly ground black pepper in a large bowl. Whisk, adding a splash of hot water to thin it out, until smooth.
- When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill, and cook, uncovered, turning as necessary, until they're nicely browned on both sides.
